Why relegate sweet potatoes to the dinner table? This multi-textured delight, which can be baked the night before, tastes just right in the morning.

4 sweet potatoes
1/2 cup old-fashioned rolled oats
1/4 cup raw almonds, chopped
2 tablespoons maple syrup
1 tablespoon extra-virgin olive oil
Pinch coarse salt

Steps:

  • Heat oven to 400 degrees. Prick potatoes all over with a fork and arrange on a baking sheet. Bake potatoes until tender, about 45 minutes, and let cool slightly.
  • Meanwhile, combine oats, almonds, syrup, oil, and salt and transfer mixture to a baking sheet, spreading out flat. Bake crumble, stirring occasionally, until golden brown, about 12 minutes.
  • Split sweet potatoes with a knife and top with crumble.

2 pounds small sweet potatoes (about 5), peeled and cut lengthwise into 1-inch wedges
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
1 tablespoon pure maple syrup
1/2 teaspoon finely grated lemon zest
Sea salt and freshly grated nutmeg, to taste, for serving

Steps:

  • Preheat the oven to 425 degrees F. Toss the sweet potatoes on a large, foil-lined rimmed baking sheet with the oil; season, to taste, with salt and pepper. Roast the potatoes for 20 minutes.
  • Remove the pan from the oven and toss the potatoes with the syrup.
  • Back in the oven, roast, tossing twice, until the potatoes are beginning to brown and are tender, about 15 minutes more. To serve, sprinkle warm potatoes with freshly grated lemon zest, sea salt, and nutmeg to taste.

1 cup cooked and mashed sweet potato
1 cup milk
2 eggs, lightly beaten
¼ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking pan.
  • Mix rolled oats, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until ingredients are evenly distributed.
  • Mix mashed sweet potatoes, milk, eggs, and vegetable oil together in a separate bowl until well blended. Pour sweet potato mixture into oats mixture and mix well. Spread mixture evenly into prepared baking dish.
  • Bake in preheated oven until oatmeal has set and the top is golden brown, about 30 minutes.

1 cup quick-oats

2 tablespoons butter, melted

Steps:

  • In a greased shallow 2-1/2-qt. baking dish, combine the apples and sweet potatoes. Combine the remaining ingredients; sprinkle over apple mixture. Cover and bake at 350° for 40 minutes. Uncover; bake 15-20 minutes longer or until apples and potatoes are tender.

I clipped this recipe out of a trial magazine I received in the mail one day. The magazine was called Cuisine At Home. I'm not a fan of sweet potato recipes that are super sweet. This is a nice mix of spicy, tangy and a little bit of sweet.

4 sweet potatoes
1 teaspoon canola oil
1/2 teaspoon kosher salt
1/2 cup sour cream or 1/2 cup plain yogurt
1 tablespoon maple syrup
2 teaspoons jalapenos, seeded and minced
1 teaspoon fresh lime juice
3 -4 drops Tabasco sauce or 3 -4 drops frank's hot sauce
1 tablespoon crumbled bacon
1 tablespoon chopped green onion

Steps:

  • Preheat oven to 450 and postiton rack in the center.
  • Scrub and dry sweet potatoes.
  • Rub potatoes with oil and salt.
  • Bake directly on rack for 40 to 45 minutes or until soft.
  • Combine Sour cream or yogurt with the maple syrup, jalapeno, lime juice and hot sauce. Chill unitl ready to serve.
  • Serve potatoes with a big dollop of the maple jalapeno sour cream mixture topped with crumbled bacon and green onions.

4 medium sweet potatoes, peeled, sliced 1 1/2-inch thick (3 lbs)
1/2 teaspoon salt
3/4 teaspoon fresh ground pepper
3 tablespoons unsalted butter, cut into 1/2-inch pieces
1/3 cup pure maple syrup
1/3 cup water

Steps:

  • Preheat oven to 400 degrees. In a large saucepan, cover the sweet potato slices with water and bring to a boil. Reduce heat to moderate and cook until just tender. About 5 minutes. Drain well.
  • Arrange potato slices in a large casserole. Season with salt and pepper and then dot with butter pieces. Drizzle potatoes with maple syrup, sprinkle with water and bake for 25 minutes or until tender and lightly browned. If necessary, you can broil the casserole for a minute or two before serving.
