Categories     appetizer

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 16

1/8 cup extra-virgin olive oil
1 small bunch fresh thyme, tied together with a string
1 yellow onion, peeled and finely diced
Kosher salt and freshly ground black pepper
2 small cloves garlic, peeled and grated on a microplane
1/2 teaspoon ground cumin
12 ounces white mushrooms, stems lightly trimmed, all washed and thinly sliced
1/4 cup dry vermouth
1 cup sour cream
1/3 cup grated Parmesan, divided
4 tablespoons unsalted butter
18 white mushrooms, about 1 1/2 pounds, stems trimmed slightly, washed
Salt and freshly ground black pepper
1/2 cup dry vermouth
2 tablespoons toasted bread crumbs
1 tablespoon balsamic vinegar, for finishing

Steps:

  • Heat a large saucepan over medium heat. Add the olive oil and carefully add the thyme bundle. Once it crackles and becomes crispy set aside on a paper towel to drain. Add the diced onion, and salt and pepper, to taste, and cook until tender, about 3 to 5 minutes. Add the grated garlic and cumin and lower the heat. Stir in the sliced mushrooms, and season with salt and pepper, to taste. Cook until the mushrooms are tender and most of the liquid has evaporated at the bottom of the pan, 8 to 10 minutes.
  • Stir the vermouth into the mushrooms and cook until the flavor of the alcohol has mellowed considerably, 5 to 8 minutes. Taste for seasoning. Add the sour cream and fried thyme back to the pan. Reduce heat and allow sour cream to melt over the mushrooms. Do not overheat the cream or it will separate. Stir in half of the grated Parmesan. Taste for seasoning.
  • Heat a medium saute pan over medium heat and add the butter and the mushroom bottoms. Season with salt and pepper, to taste, and cook over medium heat, until the water emerges from the mushrooms and evaporates. 5 to 8 minutes, Stir in the vermouth and cook 5 to 8 minutes. Taste for seasoning, then set aside to cool.
  • Preheat the oven to 350 degrees F.
  • When the mushrooms have cooled slightly fill each bottom with some of the stuffing. The stuffing should be firmly packed in the mushroom bottom well above the top. Arrange the mushrooms, in a single layer, on a baking sheet. In a small bowl, mix the bread crumbs and remaining Parmesan, then sprinkle it on top of the mushroom caps. Heat in the oven until they are hot inside and lightly browned on the top, 5 to 8 minutes. Transfer the mushrooms to a serving platter and drizzle each cap with a little balsamic vinegar. Serve immediately.

STUFFED MUSHROOMS

Stuffed Mushrooms image

Yield Makes 20 hors d'oeuvres

Number Of Ingredients 12

3 slices firm white sandwich bread
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
20 large (2 to 2 1/2 inches in diameter) white mushrooms (1 lb)
2 tablespoons unsalted butter
1 medium onion, finely chopped (1 cup)
1/4 cup finely chopped celery
2 garlic cloves, finely chopped
1/2 teaspoon dried oregano, crumbled
1 oz finely grated Parmigiano-Reggiano (1/2 cup)
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 400°F.
  • Tear bread into pieces and pulse to coarse crumbs in a food processor. Transfer to a bowl and toss with oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Spread in a shallow baking pan and bake in middle of oven until golden, 6 to 8 minutes, then transfer to a bowl.
  • Pull stems from mushroom caps (to create space for stuffing) and finely chop stems. Put mushroom caps, stemmed sides down, in a lightly oiled large shallow baking pan and bake in middle of oven until mushrooms exude liquid, about 10 minutes, then remove from oven.
  • While mushroom caps are baking, melt butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté chopped stems, stirring, until golden, about 5 minutes. Add onion, celery, garlic, oregano, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper and sauté, stirring occasionally, until onion is golden, about 5 minutes. Cool vegetables slightly, then add to bread crumbs along with cheese and parsley and toss well.
  • Turn mushroom caps over, then mound mushroom filling in mushroom caps, pressing gently (there will be some filling left over). Bake in middle of oven until mushrooms are tender and stuffing is golden brown, about 20 minutes.

BAKED STUFFED MUSHROOMS

Baked Stuffed Mushrooms image

These Baked Stuffed Mushrooms are a simple and delicious appetizer that won't last long once you serve them! You can be assured they will be popular. So if you're having a party, to be on the safe side, I suggest doubling or even tripling the recipe.

Provided by Alexandra

Categories     Appetiser     Nibbles     Side Dish     Small Bites

Time 50m

Number Of Ingredients 11

12 medium-sized mushrooms *
2 tsp olive oil
1 medium brown onion (finely chopped)
1/2 medium red capsicum/bell pepper * (divided)
1 shortcut bacon rasher *
1 tbsp chopped parsley
3 tbsp freshly grated Parmesan * (divided)
2 oz cream cheese (at room temperature)
sea salt * and freshly ground black pepper (to taste)
olive oil spray
a sprinkle of chopped parsley

Steps:

  • Preheat oven to 200 Degrees C (400 F).Line a baking tray with baking paper. Use a rimmed baking sheet so that any liquid released by the mushrooms will stay in the pan.
  • Clean the mushrooms using a dry paper towel. Only use a damp paper towel if they are especially dirty.
  • Carefully break the stems from the mushrooms, chop the stems finely and set aside.
  • Place the empty mushroom caps on the prepared tray.
  • Finely chop the bacon. I have used short cut bacon which is from the loin section only. It's about 6 ½"/16 ½cm in length and is very lean. Back bacon or side bacon is also fine.
  • Cut the piece of capsicum in half (each piece will be a quarter of the whole capsicum/bell pepper). Finely slice one piece to use as a garnish and set aside. Finely chop the other piece.
  • Over medium heat, add the olive oil to a medium-sized frying pan. Add the mushroom, onion, finely chopped capsicum and bacon. Stir occasionally until the moisture from the mushrooms evaporates. Then stir frequently until the ingredients are beginning to caramelise. Lower the heat if necessary.
  • Remove the cooked ingredients to a small bowl and cool for about 10 minutes.
  • Add the chopped parsley, 2 tablespoons of the grated parmesan and the cream cheese. Mix well. Ensure that all the ingredients are well blended. Season to taste.
  • Spray the empty mushroom caps with olive oil.
  • Using a teaspoon, fill the mushroom caps, pushing the filling in place with your fingertips and mounding the mixture a little. Sprinkle the mushrooms with the remaining 1 tablespoon of grated parmesan and decorate with the finely sliced capsicum/bell pepper.
  • Bake in the preheated oven about 20 minutes or until the mushroom feels cooked when tested with a skewer. Set aside for a few minutes. If your mushrooms have released a lot of moisture, sit them on some paper towel before placing on a serving platter.
  • Serve with a sprinkle of chopped parsley (optional).

Time 38m

Yield 10 servings

Number Of Ingredients 13

6 large button mushrooms or small portabello, about 1 pound/450 g
Olive oil, for drizzling
2 Tbsp butter
1 shallot, minced
1 clove garlic, minced
¼ tsp crushed pepperoncino
2 tsp chopped fresh thyme leaves
3 to 4 tablespoons fresh breadcrumbs
1 pinch Salt and pepper
4 to 6 tablespoons fresh chèvre
1 Tbsp chopped fresh parsley leaves
Broccoli or pea sprouts, for serving
Reduced balsamic vinegar, for serving

Steps:

  • Heat the oven to 375°F/190°C. Remove the stems from the mushrooms, finely chop, and set aside. Set the caps, holes downwards, on a baking sheet, rub with a little olive oil, and bake 10 minutes to shrink slightly.
  • Meanwhile, melt the butter in a sauté pan and gently fry the shallot until slightly soft, about 3 minutes. Add the chopped mushroom stems until soft, about 5 more minutes. Add the garlic, pepperoncino, and thyme one minute. Stir through all but a tablespoon of the breadcrumbs. Taste, and season the mixture. Mix the parsley and remaining breadcrumbs together in a bowl.
  • Pull the mushrooms from the oven and turn them holes upwards. Season with salt and pepper. Divide the cheese evenly among them, pile on the filling, then scatter the parsley mixture evenly over top. Drizzle with olive oil, and bake until the tops are golden and the filling very hot, about 20 minutes. Serve with watercress or sprouts on the side and a generous swirl of balsamic reduction.
