1/4 cup vegetable oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1 teaspoon finely chopped onion
1 teaspoon finely chopped green pepper
1 teaspoon minced fresh parsley
1 teaspoon ketchup
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
2 cups torn fresh spinach
1 hard-boiled large egg, sliced
3 bacon strips, cooked and crumbled

Steps:

  • In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide spinach between two serving bowls or plates; top with egg and bacon. Drizzle with dressing. Serve immediately.

This spinach casserole is a very good dinner party recipe, and also makes a good family meal.

1 ¼ pounds spinach
¼ cup all-purpose flour
3 eggs, beaten
¾ cup shredded Cheddar cheese
½ cup dried bread crumbs
2 tablespoons chopped fresh parsley
¼ cup butter, melted
1 cup milk
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Clean spinach thoroughly. Remove all excess water. Chop spinach. Arrange spinach and flour in layers, nestle beaten eggs about midway between the layers.
  • Combine cheese and bread crumbs. Mix in optional parsley, if desired. Sprinkle over top of spinach. Mix butter or margarine, milk, salt and pepper. Pour over all ingredients. Bake at 350 degrees F (175 degrees C) oven for 50 minutes to one hour.

4 large eggs, beaten lightly
1/4 cup seasoned bread crumbs
3 tablespoons cream cheese, softened
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 (1/2 lb) package frozen spinach, thawed and squeezed dry
3/4 cup half-and-half
3/4 cup grated cheddar cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Butter a 9 inch glass pie plate.
  • Combine the eggs, bread crumbs, cream cheese, salt and nutmeg and stir in spinach, half and half and Cheddar.
  • Transfer spinach mixture to pie plate and bake for 20-25 minutes, or until set and puffed slightly.
  • Note: I sometimes fry up a few rashers of bacon until crisp, drain and crumble them into the spinach mixture.

I don't know if they make the book anymore, but I keep losing this recipe (lost my book years ago) so I am posting it here for safe keeping. Luckily, my mom still has her copy of the recipe. My kids LOVE it when I make it creamier, add artichokes, and serve it with tortilla chips. Makes a great spinach-artichoke dip.

2 tablespoons butter or 2 tablespoons margarine
1/2 cup breadcrumbs or 1/2 cup cracker crumb
20 ounces frozen chopped spinach, thawed and drained
6 ounces shredded cheddar cheese, divided
1 cup sour cream
1 tablespoon dry onion soup mix

Steps:

  • Preheat oven to 300.
  • In Small skillet melt butter over medium heat.
  • Add crumbs.
  • Cook and Stir until light and browned.
  • Set aside.
  • In medium bowl, combine spinach, 1 Celsius cheese, sour cream, and soup mix.
  • Pour into greased 11x7 baking dish.
  • Sprinkle with ½ Celsius cheese and top with browned crumbs.
  • Bake 45 minutes or until cheese is lightly browned and bubbly.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups fat-free cottage cheese
3/4 cup shredded Monterey Jack cheese
1/2 cup grated Parmesan cheese
2 large egg whites
1 large egg
1 teaspoon dried minced onion

Steps:

  • In a small bowl, combine the biscuit mix, egg whites, egg, milk and onion. Spread into a greased 11x7-in. baking dish., In another bowl, combine the filling ingredients. Gently spoon over biscuit mixture. , Bake, uncovered, at 350° for 28-32 minutes or until golden brown and a knife inserted in the center comes out clean.

I compare it to the Zucchini Appetizer that is so popular; they are both good. I'm guessing on the time to make it and bake it.

1 cup Bisquick baking mix
1/4 cup milk
2 eggs, slightly beaten
1/4 cup onion, finely chopped
10 ounces spinach (frozen, chopped, thawed and drained)
1/2 cup parmesan cheese, grated
4 ounces monterey jack cheese, cut into 1/2 inch cubes (I shred instead)
12 ounces cottage cheese
1/2 teaspoon salt
2 garlic cloves, minced
2 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Spray a rectangular baking dish 12 x 7 1/2 x 2 inches with cooking spray. Mix Bisquick, milk, 2 eggs and the onion and beat vigorously for 20 strokes. Spread in the dish. Mix remaining ingredients and spoon evenly over batter in dish. Bake until set, about 30 minutes. Let stand 5 minutes before cutting.

I made this Spinach Dip Supreme several times over the Holiday season and it was a big hit every time, so I thought I would share the recipe. This spinach dip is best if you make it the night before and let it chill in the fridge until you are ready to serve it. Enjoy!

1 1/2 cups sour cream
1 cup mayonnaise
1 package Knorr vegetable soup mix
1 (10 ounce) package frozen spinach, thawed and drained
1 can water chestnut, drained and diced
1 loaf sourdough bread rounds
green onion, sliced thin for garnish

Steps:

  • Combine all ingredients together in a large bowl and mix well.
  • Cover and chill for at least 2 hours or overnight if you can.
  • Hollow out the bread and scoop the spinach dip inside.
  • Sprinkle the green onion slices evenly over the top.
  • Slice up the bread that you removed into bite-size pieces.
  • Serve with the bite-size bread pieces, breadsticks, veggies, or your favorite dippers.

1 large onion, chopped
1 tablespoon butter
1 package (8 ounces) cream cheese, cubed
1/4 cup 2% milk
1-1/2 cups shredded Parmesan cheese, divided
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon pepper
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat oven to 425°. In a large saucepan, saute onion in butter until tender. Add cream cheese and milk; stir until melted. Stir in 1 cup Parmesan cheese, cayenne, salt and pepper. Stir in spinach. , Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with remaining Parmesan cheese. Bake, uncovered, 30-35 minutes or until hot and bubbly.

1 lb fresh spinach
1/4 lb butter
1 large onion, diced
3 cloves garlic, minced
salt and pepper
2 cups mozzarella cheese, grated (or your choice)
1/8 teaspoon nutmeg

Steps:

  • Coarsely chop the spinach.
  • Melt the butter over medium heat & when bubbly add onion& garlic.
  • Saute for 2 minutes.
  • Add spinach, salt & pepper.
  • Cover & reduce heat to low steam for 3-4 minutes.
  • Put half of the cheese into an 8" greased casserole dish.
  • Add spinach, & nutmeg.
  • Cover with remaining cheese.
  • Bake in 350F for apprx 20 minutes or until cheese is browned.

32 ounces frozen chopped spinach, defrosted and squeezed dry (wrap in clean kitchen towel and twist until dry)
16 ounces artichoke hearts, drained, squeezed dry and chopped (optional)
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1 dash nutmeg
salt
pepper
breadcrumbs (Italian is good)

Steps:

  • Line bottom of small casserole dish with chopped artichoke hearts.
  • In medium bowl mix together butter and cream cheese.
  • Stir prepared spinach into butter/cream cheese mixture.
  • Add nutmeg, salt and pepper; blend well.
  • Spread spinach mixture over artichoke hearts.
  • Top with breadcrumbs.
  • At this point, you can cover tightly and freeze for future use. Defrost before baking.
  • Bake 350 degrees 20 - 25 minutes or until hot.
