Grits are a Southern staple. Serve this easy recipe with breakfast, as a meal or a side dish. The quick cooking grits, milk, salt, water and butter is ready to serve in just minutes.

Steps:
- In a small pot, bring water, milk and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.
- Grits are done when they have the consistency of smooth cream of wheat.
- Serve with butter, fruit or savory with a meal.
BAKED CHEESE GRITS RECIPE
In this addictive Cheese Grits Casserole, creamy rich Southern Grits are cooked with garlicky butter and cheddar and parmesan cheeses then baked to perfection. Each flavorful bite oozes melts on the tongue.

Steps:
- Add salt to water and bring to a boil.
- Add grits to boiling salted water, whisking into the water then lower heat to the lowest setting and cook covered until grits are tender but still pourable, about 12-18 minutes.
- Remove from heat and whisk in cheddar cheese, parmesan cheese, minced garlic and butter. Continue whisking until both the cheeses and butter are melted and well combined.
- Next, while vigorously whisking, add milk and eggs and continue to whisk quickly so the eggs won't scramble.
- Pour grits into a large greased 4 quart casserole dish then sprinkle parmesan cheese on top and bake at 325 for 60-70 minutes or until grits just shake slightly. You can also broil for a couple of seconds to make a gorgeous brown color on top.
- Sprinkle with chopped parsley and serve.

SOUTHERN BAKED CHEESE GRITS
Steps:
- Cook quick grits according to package instructions
- Preheat oven to 350 F
- Spray a 2-quart sized baking dish with non-stick cooking spray
- Beat eggs in a bowl and temper them by adding in a spoonful or two of hot grits and stirring, then pour into remaining grits
- Combine all remaining ingredients (except bacon and onion) with the grits and pour into baking dish
- Top with a handful of additional cheese and bake for 45 minutes
- Remove from oven and top with bacon bits and green onion and serve!
GRITS RECIPE
Steps:
- Start by adding water, milk, bay leaf and salt to a heavy sauce- pan. Bring to a boil.
- Gradually whisk in the grits, until you have added the whole thing in the pot, a little at a time. Keep stirring with a whisk to prevent any lumps.
- You may have to remove sauce- pan from heat while trying to get rid of lumps - if needed.
- Reduce heat and cook grits at a bare simmer, covered, stirring frequently, until water is fully absorbed and grits thickened. This will take you about 15 minutes.
- Remove grits from heat; add butter and cheese, stirring with a whisk until cheese melts.
- Assemble the dish by placing the grits at the bottom of a shallow bowl, Cajun shrimp and it's sauce. Enjoy piping hot!

- Preheat the oven to 350. Spray a 1-1/2 quart baking dish with nonstick cooking spray.
- Boil the grits in 3 cups of salted water on medium-high heat until thickened.
- Turn the heat down to medium-low. Add the butter and 3/4 cup of the cheese. Stir frequently until the cheese and butter melt.
- Remove the mixture from the heat and cool until it is lukewarm.
- In a medium bowl, beat the eggs. Stir the eggs into the grits and cheese. Mix well.
- Pour the grits, cheese, and egg mixture into the baking dish.
- Sprinkle the remaining cheese over the top of the mixture.
- Put the casserole in the oven.
- Bake for 40 minutes.
- If you want to garnish with crumbled bacon or bacon bits, sprinkle them on top the last 5 minutes of baking.Serve hot.

- In a large saucepan, bring water to a boil. Add grits; cook and stir over medium heat for 5 minutes or until thickened. Remove from the heat., In a small bowl, whisk egg whites and eggs. Stir a small amount of hot grits into eggs; return all to the pan, stirring constantly. Stir in the cheese, milk, jalapenos, garlic salt, pepper and half of the onions., Transfer to a 2-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until golden brown. Sprinkle with remaining onions.

- Add water, heavy cream, butter, grits, and seasonings to a medium sauce pan and bring to a boil over medium high heat.
- Cover the pot with a lid and reduce the heat to medium low, simmer for 20 minutes (for thinner grits) or 30 to 40 minutes (for thicker creamier) or until thickened as desired. Stir the grits every 5 minutes during cooking to avoid sticking to the pot and to prevent lumps.

SOUTHERN EGGS BENEDICT
This is a southern take on the classic poached egg breakfast. The biggest change is going from a Hollandaise to a Remoulade which wakes the dish up and adds the surprise of shrimp. This dish requires some prep work the night before to make the grits crispy.

- The day before, cook the grits according to package directions (usually 4 cups of water to 1 cup of grits) to taste. Allow to cool and then spread onto cookie sheet or something similar and spread out grits so they are about 1" thick. Refrigerate overnight. The idea is to make them stiff and dry them out.
- The Morning of, create the Remoulade by combining all ingredients (except grits, ham, eggs) in a bowl. Rinse and thaw shrimp before adding to Remoulade.
- Cut grits into 4 sections the size of a piece bread or an English Muffin (a large cookie cutter works perfect). Lightly flour the grits so they will brown and hold together.
- Pan fry the grit cakes in butter and oil until slightly brown.
- Cut the country ham in a similar fashion to the grits so when you put the ham on the grit "cake" it will have similar proportions.
- Poach each egg and plate with grit section on bottom followed by country ham then poached egg.
- Pour Remoulade over stack and sprinkle with paprika.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
- Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
- In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
- Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.

EASY FRIED GRITS CAKES
Steps:
- Gather the ingredients.
- Bring the water and salt to a boil in a large, heavy saucepan. Add the grits and continue to simmer, stirring constantly, over medium heat until the grits are cooked and thick, or about 15 to 20 minutes. If too thick, add a little more boiling water, 1 spoonful at a time.
- Pour the hot grits onto a large plate or medium baking sheet to make a layer about 3/4 inch deep. Cover and let stand to cool, then refrigerate for 30 minutes to 1 hour to chill thoroughly.
- When the grits are cold and firm, use biscuit cutters the size of your choice to cut rounds. Or cut them into rectangular pieces with a sharp knife. The rectangles ensure the total usage of the mixture.
- Dredge the grits pieces with flour, shaking off any excess flour. Reserve.
- Heat about 1/2 inch of vegetable oil in a large, heavy skillet over medium-high heat. Fry the grits cakes until golden brown on both sides, about 2 1/2 minutes per side.
- Drain on paper towels and sprinkle with salt to taste.
- Garnish with the chives, if using, and serve hot.

- Butter or oil spray a 1-1/4 quart baking dish.
- Prepare quick or instant grits to yield 4 cups cooked grits.

- Add garlic, onion, hot sauce and optional green chilies and stir until mixed.
- Fold in beaten eggs.
