0.5 cup milk, preferably whole
0.25 teaspoon kosher salt
0.5 teaspoon vanilla extract
2 tablespoons unsalted butter
2 tablespoons fresh lemon juice (optional)
0.5 cup fruit jam (optional)
2 tablespoons confectioners' sugar

Steps:

  • Heat oven to 400° F. In a large bowl, whisk the eggs to combine. Add the flour and whisk until smooth. Add the milk, salt, and vanilla and mix until incorporated; set aside.
  • Add the butter to a large cast-iron skillet and transfer to oven until the butter melts. Remove from oven and quickly pour the batter into the hot skillet. Return to oven and bake until the pancake is puffed and golden, about 15 minutes.
  • Drizzle the lemon juice (if using) over the pancake. Spread the jam (if using) evenly over the top. Sprinkle with the confectioners' sugar.

This simple, but delicious pancake is my version of one they make at Elmers Restaurant chain. They serve it with powdered sugar and lemon wedges. I like a little pure maple syrup on mine or possibly some sauted apples.

1/2 cup cold milk
1/2 cup flour
2 beaten eggs
1/8 cup melted butter
1/2 teaspoon vanilla
1 pinch salt
Pam cooking spray
sprinkling nutmeg

Steps:

  • Mix milk and flour; add beaten eggs, a pinch of salt, and vanilla.
  • Pour batter into sprayed or well buttered 9"x13" pyrex dish (or something comparable).
  • Sprinkle with nutmeg.
  • Bake in preheated 425 degree F oven for 15-20 minutes depending on altitude. (I have to bake mine for 20 minutes at 3500 ft.).
  • Serve with powdered sugar, lemon wedges, sauted apples, or of course, good ole pure maple syrup. Yum, yum and not too unhealthy.

1 cup 2% milk
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons butter, melted
BUTTERMILK SYRUP:
1/2 cup butter, cubed
1-1/2 cups sugar
3/4 cup buttermilk
2 tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract
Confectioners' sugar
Fresh blueberries, optional

Steps:

  • Preheat oven to 400°. Place first 4 ingredients in a blender; process just until smooth., Pour melted butter into a 13x9-in. baking dish; tilt dish to coat. Add batter; bake, uncovered, until puffed and golden brown, about 20 minutes., Meanwhile, place butter, sugar, buttermilk, corn syrup and baking soda in a small saucepan; bring to a boil. Cook, uncovered, 7 minutes. Remove from heat; stir in vanilla., Remove pancake from oven. Dust with confectioners' sugar; serve immediately with syrup and, if desired, fresh blueberries.

2 whole eggs
3 egg whites (or can use 6 Tbsp of liquid egg whites)
1 cup milk
1 cup flour
1 tsp vanilla extract
1/4 tsp salt (rounded)
1 Tbsp brown sugar (packed)
3 Tbsp butter (salted and cubed)

Steps:

  • Preheat oven to 425°
  • Add the whole eggs, egg whites, milk, flour, vanilla, salt and brown sugar to a blender. Blend the batter on low for 1 minute and then scrape down the sides in case any flour is sticking to the sides. Continue to blend on low for another 2 minutes.
  • Put the butter into a 9x13 baking dish (I used glass) and place into the preheated oven while the batter rests for 5 minutes. The butter should start to boil but watch that it doesn't burn.
  • When the rest time is done, take the dish out of the oven and swirl the butter to make sure it spreads all over.
  • Give the batter a quick stir or pulse then carefully pour the batter into the dish and bake for 20 minutes. Turn the oven down to 300° and cook for an additional 5 minutes. While cooking, the pancake edges will puff up about 2 inches above the rim and then deflate when it is taken out of the oven.
  • As soon as it comes out of the oven, swirl the dish once more to distribute any melted butter left on top evenly over the pancake.
  • Serve with strawberries and powdered sugar or syrup.

Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

½ cup unbleached all-purpose flour
½ teaspoon baking powder
1 tablespoon sugar
1 pinch salt
1 cup milk
1 teaspoon vanilla extract

¼ cup unsalted butter
½ cup white sugar, divided
½ teaspoon ground cinnamon

Steps:

  • In a large bowl, blend eggs, flour, baking powder, sugar and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in a 10 inch oven proof skillet, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, cinnamon and 1/2 teaspoon nutmeg. Sprinkle mixture over the butter. Line the pan with apple slices. Sprinkle remaining sugar over apples. Place pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples.
  • Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes. Slide pancake onto serving platter and cut into wedges.

1/4 teaspoon salt
1/2 cup whole milk
1/4 cup heavy cream
1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon
4 granny smith apples or 4 braeburn apples, peeled, cored and quartered
1 cup granulated sugar

1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 450 degrees F.
  • Whisk together the eggs, sugar and salt until smooth.
  • Whisk in the milk, heavy cream and vanilla extract.
  • Add the flour and whisk until smooth.
  • Heat butter in a 9-inch nonstick pan or a cast iron pan, until melted.
  • Stir in the brown sugar and cinnamon and cook until the sugar has completely melted.
  • Add the apples and cook until slightly soft, about 8 minutes.
  • Remove from the heat and stir in the lemon zest.
  • Pour the batter over the apples and place the pan in the oven.
  • Bake until the edges are brown and puffy, about 16-18 minutes.
  • Carefully invert the pancake onto a serving platter.
  • Dust with confectioners' sugar and drizzle with some of the caramel sauce.
  • Caramel Sauce:.
  • Place sugar and water in a medium saucepan and bring to a boil over high heat (do not stir), swirling the pot occasionally to even out the color, until amber in color, 10 to 12 minutes.
  • While the caramel is cooking, place the heavy cream and cinnamon stick in a small pan and bring to a simmer over medium heat.
  • Remove from heat and keep warm.
  • When the caramel has reached the desired color, remove the cinnamon stick from the heavy cream and slowly begin adding the warm cream to the caramel and whisk until smooth.
  • Remove from the heat and stir in the brandy.

3/4 cup light molasses or 3/4 cup corn syrup
1/2 cup butter
2 eggs, beaten
4 1/2 cups flour, sifted
1/2 cup granulated sugar
1 1/4 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1 dash black pepper

Steps:

  • In saucepan, combine molasses and butter. Cook until butter melts. Cool (very important; eggs will cook if not cool to the touch). Stir in eggs. Sift flour, sugar, soda and spices. Add dash of Anise oil if desired. Add to molasses mixture. Mix well. Chill for several hours or overnight.
  • Shape chilled dough into 1" round balls. If you have a cookie scoop the balls will be more uniform. Bake on greased cookie sheet. Bake 12 to 15 minutes at 375 degrees. When done, while still warm, but not hot, place in a paper bag filled with powdered sugar and shake until cookie is coated.
  • If stored properly the cookies are good for a couple of weeks.

3/4 cup milk
3/4 cup white flour
1/2 teaspoon salt
1 1/2 tablespoons butter (unsalted preferred)
1/2 cup thin sliced apple (optional)
1 lb tart fresh apple (Pippin are great)
1/4 cup melted butter
1/4 cup sugar
ground cinnamon, and
nutmeg
2 tablespoons melted butter (optional)
powdered sugar

Steps:

  • Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
  • During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
  • While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
  • When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.
