Large sea scallops are combined with garlic, shallots, butter, and bread crumbs then baked to perfection. Being from Maine, we love our seafood, and this is one of the greats!

16 sea scallops, rinsed and drained
5 tablespoons butter, melted
5 cloves garlic, minced
2 shallots, chopped
3 pinches ground nutmeg
salt and pepper to taste
1 cup bread crumbs
4 tablespoons olive oil
¼ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.
  • In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.
  • Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

1/4 cup creme fraiche
3 tablespoons dry white wine, such as sauvignon blanc
1 teaspoon finely grated lemon zest (from 1 lemon)
Kosher salt and freshly ground pepper
1 pound bay scallops, tough muscle removed if necessary and patted dry
2/3 cup panko breadcrumbs
1/2 cup grated Parmesan
2 cloves garlic, minced (2 teaspoons)
1 tablespoon finely chopped fresh red chile, such as Fresno or red serrano
3 tablespoons chopped fresh flat-leaf parsley
Crusty bread, for serving

Steps:

  • Preheat oven to 425 degrees. Coat bottom of a 1 1/2-quart shallow baking dish with 1 tablespoon butter; set aside.
  • In a medium bowl, whisk together creme fraiche, wine, and lemon zest; season with 1/2 teaspoon salt. Add scallops, tossing to coat.
  • In a small bowl, mix together panko, Parmesan, garlic, chile, and remaining 1/4 cup butter. Add scallops to prepared dish, then pour creme fraiche mixture evenly over top. Top with panko mixture and a few grinds of pepper.
  • Bake until sizzling and golden, about 8 minutes. Switch oven to broiler setting; broil until breadcrumbs are browned, about 1 minute more. Sprinkle with parsley; serve immediately, with crusty bread.

  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
  • Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side.   • Preheat the oven to 425°.
  • Mix melted butter, salt, and pressed garlic in a small bowl and set it aside.
  • Mix Panko bread crumbs and grated Parmesan cheese in another shallow bowl and set it aside.
  • Take scallops out of the package and pat each one dry with a paper towel.

It can easily be doubled or tripled as needed. Also, it can be baked in individual dishes for ease in serving. It can be a first course or a main dish.

2 tablespoons butter
12 ounces bay scallops
1 cup fresh french breadcrumbs
1 clove minced garlic
2 tablespoons fresh parsley, chopped
1 tablespoon fresh tarragon, chopped

Steps:

  • Preheat oven to 450^F.
  • In a medium skillet, melt butter and brush some of the butter over a ten inch glass pie plate.
  • Put the scallops in the dish and sprinkle with salt and pepper.
  • Add breadcrumbs and garlic to the butter in the skillet and stir over medium heat until the crumbs are crisp, about 5 minutes.
  • Mix in parsley and tarragon.

  • Start by making a blond roux, combination of unsalted butter and flour. In a medium sauce pan, melt 1 cup unsalted butter. As it melts, the milk solids will rise to the top, a frothy white. Skim this off and then pour through a fine mesh sieve. Return the now clarified butter back to the sauce pan.
  • Whisk in flour over medium heat. Continue to whisk until the mixture is a loose paste, darkens slightly in color and starts to smell nutty. Remove before mixture turns tan or smells like popcorn (this would be a golden or dark roux). Remove from heat and set aside.
  • In a small skillet, melt salted butter, seasoned bread crumbs and season lightly with fine sea salt and freshly ground pepper. Mix until butter has been absorbed and is like wet sand. Remove and set aside.
  • Preheat oven to 350 degrees and heat a large skillet over high heat with about 1 tablespoon of unsalted butter. If this does not cover the bottom of your skillet, add a small amount more. Heat until very hot.
