Salmon recipes can be cooked many ways, but in my book, there's nothing as easy as oven baked salmon in white wine and lemon for a healthy dinner, or to make and use for meal prep all week long.

6 6-ounce salmon filets
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 lemon (, sliced)
1/2 cup white wine
8 ounces creme fraiche ((or mix 3 parts sour cream and 1 part plain yogurt))
2 tablespoons minced shallot
2 tablespoons fresh dill

Steps:

  • Preheat the oven to 425°F.
  • Season the salmon with the salt and pepper. Place the salmon, skin side down, in a baking dish or on a high-rimmed baking sheet. Top the salmon with the lemon slices and add the wine to the dish or baking sheet.
  • Bake until the salmon is cooked through, about 12 to 15 minutes.
  • In a medium bowl, mix the creme fraiche, minced shallot, and dill. Spoon over each of the salmon filets and serve.

I had a craving for fresh fish and dill, so I played around and came up with this. Its been rated one of my greatest hits! Great with rice or potatoes and steamed green beans.

¼ cup butter, melted
¼ cup white wine
1 lemon, juiced
5 cloves garlic, chopped
1 bunch fresh dill, stems trimmed
1 (1 pound) salmon fillet
½ cup toasted almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.
  • Pour a small amount of the butter mixture into an 8x8-inch baking pan until bottom is evenly coated; cover with a thin layer of dill. Place salmon, skin side down, into the baking pan. Sprinkle with remaining dill; pour remaining butter mixture over salmon. Cover tightly with aluminum foil.
  • Bake in preheated oven until fish flakes easily with a fork, 25 to 35 minutes. Sprinkle generously with almonds before serving.

The trick to perfectly baked salmon is to gently bake the fish in a little liquid - such as wine, stock, or water. Then cover the dish and bake until just cooked through. You could call this oven poached salmon. It's practically no-fail. If your fish is quite thick, expect that the cooking time will be a few minutes longer than what we share below.

One 1 1/2-pound salmon fillet, or two 12-ounce fillets, preferably wild-caught
1 tablespoon olive oil
Salt and fresh ground black pepper
1 lemon, cut into slices 3 to 4 sprigs of fresh dill, plus more for serving
1/2 cup dry white wine, such as Sauvignon blanc (substitute: fish stock, chicken stock, or water)

Steps:

  • Heat oven to 325 degrees F.
  • Lightly oil and season both sides of the salmon with salt and pepper.
  • Arrange lemon slices and fresh herbs on the bottom of a baking dish large enough to fit the salmon, and then place the salmon, skin-side down, onto the bed of lemon and herbs.
  • Pour wine (or stock) into the baking dish, and then cover with aluminum foil. Bake the salmon until the fish flakes and white bubbles of protein appear on the surface, 12 to 30 minutes, depending on the thickness of the fillets. Check the salmon after 10 minutes to see its progress.
  • Checking the temperature of the salmon using an internal thermometer is the best way to prevent overcooking. You want the thickest part of the salmon to read 125 degrees F. Take the salmon out of the oven and loosely cover with foil for 5 minutes (the fish will continue to cook during this time). Serve, scattered with chopped fresh herbs on top.

2 (5 ounce) salmon fillets, bones removed
fresh cracked pepper and kosher salt
1 lemon, sliced
2 tablespoons butter
2 cloves garlic, minced
1/4 cup white wine
1 tablespoon chopped fresh dill

Steps:

  • 1. Preheat your oven to 450. 2. Line a baking sheet with aluminum foil and spray with non-stick spray. 3. Place salmon fillets on the prepared baking sheet. Sprinkle fillets with kosher salt and fresh cracked pepper. Place 2 lemon slices on top of each fillet. Bake for 10 minutes. Remove and tent with aluminum foil for 10 more minutes. Fish will continue to cook during this time. It will flake easily when done. 4. While salmon is baking, melt butter in a skillet over medium heat. Once melted, add minced garlic and cook just until fragrant, about 30 seconds. Pour in wine. Cook for 5 minutes or until sauce reduces by 1/3. Stir in fresh dill and remove from heat. 5. Remove lemon slices from the top of the salmon and discard. Gently slide a turner or serving spatula between the skin and the flesh of the fillet to remove the skin, it should separate very easily. Transfer to a serving platter and spoon white wine dill sauce over the top. 6. Serve.
