extra virgin olive oil, for drizzling
3 lemons, washed and thinly sliced
2 lbs salmon fillets
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/2 cup heavy cream
1/4 cup sour cream
3 tablespoons fresh lemon juice (from about 1-1/2 lemons)
3 tablespoons fresh dill
salt & freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 450'. Lightly grease a baking dish with olive oil.
  • Place two-thirds of the lemon slices in the greased baking dish. Place the salmon fillet on top of the bed of lemons, cover it with the remaining slices, drizzle with olive oil, and sprinkle with salt and pepper. Bake for 20-25 minutes, until the salmon is a light pink on the outside and a deeper pink inside. Remove from the oven and serve with the lemon-dill sauce.
  • To prepare the lemon-dill sauce; in a food processor or blender, beat the heavy cream and sour cream until thick. Add the lemon juice, dill, salt and pepper and blend until combined. Refrigerate until ready to serve.

Perfectly Baked Salmon with Lemon and Dill image

The trick to perfectly baked salmon is to gently bake the fish in a little liquid - such as wine, stock, or water. Then cover the dish and bake until just cooked through. You could call this oven poached salmon. It's practically no-fail. If your fish is quite thick, expect that the cooking time will be a few minutes longer than what we share below.

One 1 1/2-pound salmon fillet, or two 12-ounce fillets, preferably wild-caught
1 tablespoon olive oil
Salt and fresh ground black pepper
1 lemon, cut into slices 3 to 4 sprigs of fresh dill, plus more for serving
1/2 cup dry white wine, such as Sauvignon blanc (substitute: fish stock, chicken stock, or water)

Steps:

  • Heat oven to 325 degrees F.
  • Lightly oil and season both sides of the salmon with salt and pepper.
  • Arrange lemon slices and fresh herbs on the bottom of a baking dish large enough to fit the salmon, and then place the salmon, skin-side down, onto the bed of lemon and herbs.
  • Pour wine (or stock) into the baking dish, and then cover with aluminum foil. Bake the salmon until the fish flakes and white bubbles of protein appear on the surface, 12 to 30 minutes, depending on the thickness of the fillets. Check the salmon after 10 minutes to see its progress.
  • Checking the temperature of the salmon using an internal thermometer is the best way to prevent overcooking. You want the thickest part of the salmon to read 125 degrees F. Take the salmon out of the oven and loosely cover with foil for 5 minutes (the fish will continue to cook during this time). Serve, scattered with chopped fresh herbs on top.

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

1 pound salmon fillets
¼ cup butter, melted
5 tablespoons lemon juice
1 tablespoon dried dill weed
¼ teaspoon garlic powder
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place salmon in the baking dish. Mix the butter and lemon juice in a small bowl, and drizzle over the salmon. Season with dill, garlic powder, sea salt, and pepper.
  • Bake 25 minutes in the preheated oven, or until salmon is easily flaked with a fork.

  • Preheat oven to 400 degrees F (204 C). If cooking on a baking sheet, line with parchment paper or a silicon baking mat. If using a skillet, ensure it’s oven safe (we prefer cast iron) and lightly oil and rub to coat. (Fish can stick to stainless steel pans, so we recommend using cast iron if possible.)
  • Prepare salmon by briefly rinsing under cold water and patting dry with a paper towel (this is an optional step, but recommended).
  • Once dry, drizzle both filets with a little oil and season each with a generous pinch of sea salt and black pepper. Next sprinkle on dill and top with fresh lemon slices (this is mostly for visual effect, but it also helps keep the fish more moist and infuses lemon flavor).
  • If cooking in a skillet: Heat a large oven-safe skillet over medium heat. Once hot, add a little oil. Then add salmon filets and sear on the underside for 2-3 minutes — this speeds the baking time and also makes the skin crispier and easy to peel away. Transfer to the preheated oven and continue cooking for 8-10 minutes, or until the center is fully cooked (check by cutting into the center of one of the filets).
