Steps:

  • Heat oven to 350°F and position racks in top and bottom thirds.
  • Wash potato (or potatoes) thoroughly with a stiff brush and cold running water.
  • Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking.
  • Place in a bowl and coat lightly with oil.
  • Sprinkle with kosher salt and place potato directly on rack in middle of oven.
  • Place a baking sheet (I put a piece of aluminum foil) on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft.
  • Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another.
  • It will pop right open.
  • But watch out, there will be some steam.
  • NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

4 medium Yukon gold potatoes
1 teaspoon olive oil
2 cloves garlic, minced
1/2 small onion, cut into 1/4-inch dice
1/2 red bell pepper, cut into 1/4-inch dice
1 celery stalk, peeled to remove strings, cut into 1/4-inch dice
2 tablespoons homemade or low-sodium canned chicken stock, skimmed of fat
1/4 cup skim milk
2 tablespoons roughly chopped fresh thyme, plus sprigs for garnish
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 large egg whites
3/4 cup plain bread crumbs, toasted
2 tablespoons vegetable oil
Sweet Red-Pepper Sauce

Steps:

  • Place potatoes in small stockpot, cover with water, and bring to a boil. Reduce heat to medium high; gently boil until tender, 40 to 45 minutes. Drain in a colander. Using a towel to hold potatoes, peel while still hot. Pass potatoes through a potato ricer or a food mill into a large bowl.
  • Heat oven to 450 degrees. Meanwhile, heat olive oil in skillet over medium-low heat. Add garlic, onions, red peppers, and celery; saute until vegetables are translucent, about 5 minutes. Add stock; saute 1 minute more. Add vegetable mixture to potatoes along with milk, thyme, salt, and black and cayenne peppers. Form 1/3 cup mixture into 3-inch round cake; transfer to platter. Repeat, making cakes with remaining mixture.
  • In a shallow dish, whisk egg whites until foamy. Place bread crumbs in a shallow dish. Coat cakes in egg whites, then in bread crumbs; transfer to a baking sheet.
  • Pour 1 tablespoon canola oil in a medium nonstick skillet; place over medium-high heat. Add half the cakes; cook until golden brown, 2 to 3 minutes on each side. Return to baking sheet; set aside. Repeat process with remaining tablespoon canola oil and cakes, wiping skillet with paper towel between batches.
  • Place cakes in oven; cook until deeply golden, about 20 minutes. Serve with Sweet Red-Pepper Sauce.

Steps:

  • First, preheat the grill or oven to 450ºF.
  • Run potatoes under warm water and use a scrubby to remove any dirt or residue and then and pat dry with a towel to dry.
  • Drizzle potatoes with olive oil and use your hands to massage the oil into the skin. Then, generously season the entire potato with salt and pepper.

This recipe uses the steam function, along with the probe, to quickly cook multiple potatoes to their optimal texture. After the potatoes are tender, the oven switches to dry heat to crisp the skin.Note: The initial baking time depends on the size of your potatoes. You can expect a medium, 8-ounce potato to take about 45 minutes to cook. A smaller, 5-ounce potato will take around 30 minutes; a larger, 12-ounce potato will take about 1 hour. This recipe uses a perforated pan, which is now available to order through Anova. If you don't have one, placing a wire rack over a sheet pan works as a substitute.

4 (8-ounce) of russet potatoes
1.5 Tbsp of melted duck fat or olive oil

Steps:

  • In a medium bowl, whisk together the water and salt until the salt is dissolved.
  • Wash the potatoes and trim away any eyes. Use a fork to carefully poke the potatoes on all sides to allow steam to escape.
  • Add each potato, one at a time, to the brine, and roll to coat it in the water. Transfer to a perforated pan (see note).
  • Carefully insert the probe into the center of the largest potato.
  • Transfer to the oven, attach the probe, and cook until the probe reaches its target temperature, 30 minutes to 1 hour, depending on the size of the potatoes.
  • Remove the potatoes from the oven and brush on all sides with the melted duck fat.

1 bunch chives (about 1-ounce)
1/2 cup sour cream
4 tablespoons unsalted butter
2 slices bacon, cooked crispy, and crumbled, optional garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potatoes in a bowl with the oil, salt, and pepper until completely coated. Place on a baking sheet and bake until fork tender, about 45 minutes.
  • Meanwhile, bring a small pot of water to a boil and salt it generously. Fill a medium bowl with ice water. Put the chives in the boiling water and cook until bright green, about 30 seconds. Immediately, plunge into the ice water to set the color. Squeeze all the water out of the chives and give them a rough chop. Put into a blender with the sour cream. Pulse until you have a smooth green sauce and season with salt and pepper, to taste. Chill until ready to serve. (Or, thinly slice the chives and stir into the sour cream, season with salt and pepper, to taste.)

1 cup milk (lukewarm)
2 eggs (set aside 1 yolk for egg wash with 1 teaspoon whipping cream)
3 tablespoons oil - using 15ml measure - melted butter is better
3 1/3 cups of flour
1 tablespoon sugar
1 1/2 teaspoons salt
2 teaspoons yeast - slightly less than a packet
1 lb /500g lean ground beef
1/2 lb /250g potatoes (boiled, peeled and mashed)
1 large onion chopped finely
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper

Steps:

  • Place bread maker dough ingredients, in the order listed, into your bread machine and select the dough program. Milk, eggs, oil, flour, sugar, salt and yeast. Takes about 90 minutes for the dough cycle to complete.
  • In a frying pan, over medium high heat, the ground beef until cooked and evenly browned. Add onions and continue to fry until translucent. Boil the peeled potatoes until soft, and make into mashed potato. Add salt and pepper to the meat and potato mixture, mix together and set aside to cool before adding to the dough.
  • Preheat oven to 180°C/350°F
  • When the dough is ready, carefully place onto a lightly floured surface. Roll out the dough into a long sausage shape. You want to cut into pieces that are approx. the size of a golf ball. Or you can pinch off golf ball pieces from the dough. You should get about 24 pieces from this recipe. Cover pieces you aren't working on with cling wrap so they don't dry out. I worked on 4 piroshki at a time before rolling out more, allowing 12 per baking sheet.
  • Roll out the dough balls thinly into the shape of an oval. Place about 1-2 tablespoons of the filling in the centre. Pinch both sides of the edges of the dough together, creating a seal all around. Don't allow the filling to touch the edges or the seal will come apart.
  • Place the piroshki on parchment paper, or a lightly greased baking tray, upside down, so you cannot see the pinched seal, and flatten them a bit. Don't allow them to touch each other, as they will stick together.
  • Make the egg wash by beating the egg yolk with 1 teaspoon of whipping cream and brush the piroshki with the egg wash before putting into the oven.
  • Place into the oven and bake until golden brown, about 15 minutes.
