Nonstick cooking spray, for the muffin tin
1 pound fresh pluots, pitted and diced
2 tablespoons unsalted butter, melted
3 large eggs
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 cup half-and-half
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
Confectioners' sugar, for dusting
Finely grated lime zest, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray down a 24-cup mini muffin tin with cooking spray.
  • Add a single piece of pluot to each of the 24 cups in the tin. Combine the melted butter, eggs, granulated sugar, vanilla, half-and-half, flour and salt in a bowl and whisk until smooth. Transfer the batter to a spouted measuring cup and, working from the center of the tin outward, fill the cups to just below the brim. Bake until the clafoutis are beginning to brown, 25 to 30 minutes. They will puff above the cups but deflate once cooled.
  • Allow to cool, then pop them out, dust with confectioners' sugar and sprinkle with lime zest.

4 pluots or plums, ripe, washed, quartered, the pit removed
Raw sugar

Steps:

  • Preheat the oven to 350 degrees. Place the pluot quarters on a Silpat sheet, parchment paper, or aluminum foil on a baking sheet. Sprinkle raw sugar on top. Bake for 30 to 40 minutes, until the pluots soften.
  • Serve with ice cream, yogurt or another fruit like mango or cantaloupe.

With no peeling to be done, plum pie is one of the easiest and fastest pies to make, and sooooo good especially with whipped cream or ice cream on top. Prep time doesn't include making the crust. Use your favorite homemade double crust pie shell, or the dreaded store bought - either way it's as easy as Pie!

2 unbaked pie crusts
2 lbs plums
1/2 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees.
  • Place one pie crust into a 9"pie dish.
  • Wash plums, do not peel.
  • Cut plums in half remove pit, then into quarters.
  • Arrange plums in the pie crust.
  • Mix together the dry ingredients, then sprinkle over the plums.
  • Dot with the butter.
  • Place top crust over plums, trim crust edges with enough to turn under, then crimp crust edge.
  • Cut about 6 1" slits into the top of the pie.
  • Bake at 450 degrees for 12 minutes, reduce heat to 325 degrees, bake 25 minutes longer or until plums are tender.
  • Cool, serve warm or cold.

This is a tasty recipe for these tart stone fruits. When they are in season, I always make it. It is great with other stone fruit as well!

5 thin boneless pork chops
salt and ground black pepper to taste
1 cup white wine
1 tablespoon light brown sugar, or to taste
4 pluots, stones removed and cut into 12 wedges

Steps:

  • Heat a skillet over medium-high heat. Season pork chops on both sides with salt and pepper; cook in skillet until browned, about 3 minutes per side. Remove chops from pan to a plate.
  • Pour white wine into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir brown sugar in to the wine mixture. Add the pluots, place a cover on the skillet, reduce heat to medium, and cook until the pluots break down into a thick sauce, about 10 minutes.
  • Return pork chops to the skillet and continue to cook until pork chops warm and are slightly pink in the center, 3 to 5 minutes more. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
