BAKED PENNE WITH ROASTED VEGETABLES

- Preheat the oven to 450 degrees F.
- On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
- In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
- Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.
SPAGHETTI WITH ROASTED CAULIFLOWER, TOMATO SAUCE AND OLIVES
Perhaps because cauliflower is on the bland side and Mediterranean black olives have such a pronounced flavor, the two go beautifully together. In Italy, Greece and in North Africa, you find the triumvirate of cauliflower, tomatoes and olives in all sorts of dishes.

- Preheat oven to 400 degrees. Bring a large pot of generously salted water to a boil and add the cauliflower. Blanch for two minutes and transfer to a bowl of ice water. Drain and blot dry. Cover the pot; you'll use the water again for the pasta. Quarter the cauliflower florets, toss with 1 tablespoon of olive oil and salt generously. Transfer to a baking sheet, place in the oven and roast 30 minutes, stirring from time to time, until tender and lightly browned. Remove from the oven and set aside.
- Meanwhile, in a wide, nonstick frying pan or a 3-quart saucepan, heat the remaining oil over medium heat and add the garlic and red pepper flakes. Cook, stirring, until fragrant, about one minute. Add the tomatoes, sugar, thyme and salt, and bring to a simmer. Simmer over medium-low heat, stirring often, until thick, 15 to 20 minutes. Stir in the cauliflower and the olives, and simmer a few minutes more. Taste and adjust seasonings.
- Bring the water back to a rolling boil. Add the spaghetti and cook until the pasta is al dente, usually about 10 minutes. Drain and toss with the cauliflower-tomato mixture. Sprinkle the cheese over the top and serve at once.

- Preheat the oven to 400 degrees F. Heat the stock with the saffron in a small saucepan over medium heat.
- Meanwhile, bring 1 1/2 cups water to a boil in a pot and season with salt. Add the cauliflower, cover and steam until tender, about 12 minutes. Drain and break into florets.
- Heat the EVOO in a Dutch oven over medium-high heat. Add the sausage and crumble it into very small pieces with a potato masher or wooden spoon. Add the garlic and onions and cook for 5 minutes. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the bay leaf, cinnamon stick, tomatoes and saffron stock and stir to break up the tomatoes. Simmer until thickened, about 30 minutes. Discard the bay leaf and cinnamon stick and season with salt and pepper.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook to just shy of al dente, about 7 minutes. Reserve a ladle of the starchy cooking liquid and drain the pasta.
- Return the pasta to the pot. Add the heavy cream, cauliflower, sausage sauce and
- a little of the reserved cooking liquid and stir to combine. Transfer the mixture to a casserole dish and top with the cheeses and parsley. Bake until the top is browned, 35 to 40 minutes. Divide among plates.
- Cook's Note: The unbaked casserole can be covered and refrigerated for a make-ahead meal. Bake as directed before serving.
PENNE, CAULIFLOWER, BACON, & CREAMY TOMATO

- Preheat oven to 450.
- In a large, rimmed baking sheet, toss cauliflower with EVO and season with salt and pepper.
- Roast for 40 minutes, until tender and browned.
- Cool.
- In large skillet, in 2 batches, crisp bacon 4 minutes per side.
- Drain and coarsely chop.
- Butter 2 large shallow baking dishes.
- In large pot of boiling water, cook penne until al dente; drain.
- Return penne to pot.
- Stir in cauliflower, tomatoes, cream, garlic, thyme, red pepper, 2 c Fontina, and Parmesan.
- Season with S&P.
- Move to baking dishes.
- Sprinkle with remaining Fontina and 2 T Parmesan.
- Bake 15 min.

SICILIAN CAULIFLOWER AND BLACK OLIVE GRATIN
The affinity that cauliflower has with black olives is seen throughout the Mediterranean, from Tunisia to Sicily to Apulia to Greece. This simple gratin from Sicily is traditionally made with green cauliflower, but the result is equally delicious and almost as pretty with the easier-to-obtain white variety.

- Break up the cauliflower into small florets while you bring a large pot of water to a boil. Salt the water generously and drop in the cauliflower. Boil 5 minutes while you fill a bowl with ice and water. Transfer the cauliflower to the ice water, let sit for a couple of minutes, then drain and place on paper towels.
- Preheat the oven to 375 degrees. Oil a 2-quart baking dish or gratin dish. Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet and add the onion. Cook, stirring, until tender, about 3 minutes, and add a pinch of salt and the garlic. Cook, stirring, for about 30 seconds, until fragrant and translucent. Remove from the heat and stir in the olives.
- Place the cauliflower in the baking dish and add the onion and olive mixture, the remaining olive oil, the parsley and half the cheese. Season to taste with salt and pepper and stir together well. Spread out in the dish and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25 to 30 minutes, until the cheese is nicely browned. Serve hot or warm.

- Trim the cauliflower and break into florets.
- In a large bowl, toss the cauliflower with 1 tablespoons olive oil and 1/2 teaspoons salt.
- Arrange in a single layer on a baking sheet.
- Roast the cauliflower in a preheated 400 degree F oven for 25 to 30 minutes, or until cooked through and lightly browned.
- Stir occasionally.
- Meanwhile, bring a large pot of water to boil.
- Add the pasta and cook until tender but firm.
- Drain well.
- In a small bowl, whisk together the vinegar, garlic, salt and pepper.
- Whisk in the remaining 1 tablespoons olive oil.
- Toss the dressing with the cauliflower, peppers, olives, basil and pasta.
- Taste and adjust seasonings if necessary.
- Serve at room temperature.

- Preheat oven to 425 degrees and start a large pot of water for the pasta. Crush tomatoes in your hand or with a potato masher, place in a saucepan, heat to boiling. Reduce heat and simmer 20-30 minutes, stirring occasionally, until reduced to about 3/4 of its original volume.
- Toss cauliflower with olive oil, sprinkle liberally with salt and pepper, and place on a parchment-lined baking sheet. Roast in preheated oven, turning pieces once or twice, until browned and tender. Place in a large bowl and set aside. Reduce oven setting to 350 degrees.
- Meanwhile, cook the penne until it is just under al dente. Drain well, let it cool a bit, then put into the bowl with the cauliflower. Add the reduced tomatoes, chile flakes, shredded basil leaves, olives, and crumbled feta. Toss well to combine and pour into an oiled 8 X 8 inch baking dish, top with panko mixed with Parmesan, and bake until heated through and crispy on top, about 15 minutes.
