PEACHY BAKED PANCAKE
A great alternative to the everyday pancake. This recipe calls for sliced peaches, but any fruit can be substituted. Try bananas and chocolate chips for a special treat.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Put margarine in a pie dish and melt in the preheating oven.
- Mix eggs, flour, and milk in a bowl; pour over melted butter. Arrange peach slices atop the egg mixture. Sprinkle sugar over the peach slices.
- Bake in preheated oven until the pancake is firm in the center, about 30 minutes.

Steps:
- Preheat oven to 425 degrees F.
- Mix Bisquick, milk, egg and oil. Batter will be lumpy. Stir in chips.
- Pour into 15 1/2 x 10 1/2 x 1" pan. Bake for approximately 10 minutes.
- Cut into squares and serve with butter and syrup.

The 4th ingredient is upto to you from blueberries to raisins or even choc chips but remember to dust your 4th ingredient in a little flour to stop them sinking and allow them to clingto the mixture.

- Mix first three ingredients until a smooth batter is formed.
- Add 4th Ingredient, remember you choose.
- In a Non stick Pan at a medium heat, pour 4 pancake lots of mixture into pan (so you have four separate pancake cooking). When the surface begins to bubble turn pancake over.
- Once golden underneath serve!

Steps:
- Preheat the oven to 350 degrees.
- Wash and gently scrub the potatoes but don't dry.
- Poke each potatoes several with a fork.
- Place at least 4inches apart on the oven rack and bake for 1 hour, or until tender.
- Remove from the oven.
- Cut each potato in half lengthwise.
- Set aside for 10 minutes, or until cool enough to handle.
- With a large spoon, scoop out the potato flesh, leaving a sturdy shell; reserve the flesh for another use.
- Using kitchen scissors, cut each skin in half lengthwise. Place the potato skins on a baking sheet.
- Coat both sides of each skin with nonstick spray.
- Top each with a half slice of cheese. Broil 4 inches from heat for 4 minutes, or until the cheese partially melts.
- Remove from the oven.
- Transfer the skins to a platter.
- Top with the sour cream and sprinkle with the ham, green peppers, red peppers, tomatoes, and scallions.
- Season to taste with the black pepper.
- 4 Points per serving (4 skins).

Steps:
- Make Apple Filling: melt butter in a large skillet over med-high heat; add in apples; cook, stirring constantly, 12 minutes, until tender.
- Gently stir in honey; cook just until thoroughly heated; keep warm.
- Make pancake: heat a 12-inch cast-iron skillet in a 450° oven for 5 minutes.
- Combine the eggs, milk, and vanilla in a bowl; beat at medium speed using an electric mixer, until smooth.
- Add in flour and salt; beat 5 minutes.
- Melt butter in skillet; pour batter into hot skillet.
- Bake at 450° for 15 minutes; decrease temperature to 350°; bake 8 minutes or until puffed and browned.
- Remove from oven; spoon Apple Filling over pancake (pancake will deflate).
- Sprinkle with powdered sugar and dollop with whipped cream; cut into wedges and serve.
