If you're looking for a main course for Christmas, this is it! Beautifully roasted Squash with a gorgeous mushroom filling, topped with toasted pine nuts.

4 butternut squashes (cut in half)
sea salt
black pepper
1 onion (roughly chopped)
2 tbsp olive oil
4 cloves garlic (minced)
2 red peppers (diced)
250 g mushrooms (finely chopped)
2 handfuls kale
6 sundried tomatoes (chopped finely)
4 tbsp pine nuts (toasted)
4 tbsp sunflower seeds (toasted)
1 tbsp tamari
2 tbsp nutritional yeast
1 tbsp Worcester sauce ((vegan))
1 tsp sea salt
black pepper
1 tbsp maple syrup
2 tbsp thyme (fresh)

Steps:

  • Pre heat your oven to 180c
  • Remove the seeds of the squashes and score the flesh diagonally.
  • Place the butternut squash on baking trays and rub with the olive oil and sprinkle with salt and pepper. Place in the oven and bake for 45-60 minutes, until tender inside and caramelised on the outside.
  • Add the onion and oil to a medium pan and fry gently on a low heat for around 10 minutes until soft and browning.
  • Add the garlic and fry for a further minute. Next add the peppers and mushrooms and cook off 5-6 minutes until soft. Stir in the kale and sundried tomatoes. Turn off the heat when wilted.
  • Toast the sunflower seeds and pine nuts in a dry pan until slightly golden.
  • Add the sunflower seeds & pine nuts to a mini chopper. Pulse a few times.
  • Add the seeds to the pan along with the remaining ingredients. Stir to combine. Set aside.
  • When the squash is cooked load the filling into the cavities, top with fresh thyme and more toasted pine nuts. Drizzle with extra virgin olive oil.

2 acorn squash (1 pound each), halved crosswise, seeded, and bottoms trimmed to lie flat, if necessary
Salt and pepper
3 tablespoons olive oil, divided
1/2 pound cremini or button mushrooms, trimmed and diced small
1 medium yellow onion, diced small
3/4 teaspoon dried thyme
1 cup long-grain white rice
2 cups vegetable or chicken broth
1/2 cup grated Parmesan (2 ounces)

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, season cut sides of squash with salt and pepper, drizzle with 1 tablespoon oil, and turn cut sides down. Cover sheet tightly with foil and roast until tender, about 35 minutes.
  • Meanwhile, in a medium straight-sided skillet, heat remaining 2 tablespoons oil over medium-high. Add mushrooms, onion, and thyme; season with salt and pepper. Saute until mushrooms are golden, 8 minutes. Add rice and broth and bring to a boil; cover and reduce heat to low. Cook until liquid is absorbed, 20 minutes.
  • Remove squash from oven and heat broiler. Carefully scoop out 2 to 3 tablespoons flesh from each squash half and stir into rice; season with salt and pepper. Divide rice mixture among squash halves, sprinkle with Parmesan, and broil until melted, 2 minutes.

Diana Kennedy, the British-born expert on the regional cuisines of Mexico, gave The Times this recipe, which combines squash with mushrooms and a poblano chile (feel free to substitute a sweet green one), then coats it with cheese and sour cream for a tortilla filling that makes for a fine centerpiece to a vegetarian feast.

2 medium zucchini, about 1 pound
3 1/2 tablespoons vegetable oil
2 1/2 tablespoons finely chopped white onion
1 poblano chili, or 1/2 green bell pepper, charred, peeled, cleaned and cut into narrow strips
Sea salt to taste
1/2 pound shiitake mushrooms, rinsed and shaken dry
1/2 cup cilantro, roughly chopped
4 ounces queso fresco or domestic muenster cheese, cut into thin slices
1/2 cup creme fraiche or sour cream
6 corn tortillas

Steps:

  • Rinse, trim and cut the zucchini into 1/4-inch cubes.
  • In a small saute pan, heat 2 tablespoons of the oil. Add the onion and chili or pepper strips with a sprinkle of salt, and cook, uncovered, without browning, for 1 minute.
  • Add the squash cubes, cover the pan and cook over medium heat, shaking the pan from time to time to prevent sticking. Cook for 10 minutes or until the squash is tender.
  • Meanwhile, in a separate skillet, toss the mushrooms in the remaining oil, sprinkle with salt and stir-fry for 5 minutes, or until the juice that exudes becomes almost gelatinous.
  • Remove the cooked mushrooms from the heat and add to the squash mixture.
  • Sprinkle the top of the vegetables with the cilantro; then, dot with the cheese and creme fraiche or sour cream. Cover the pan, and cook over a gentle heat for 5 minutes or until the cheese has melted.
  • Serve wrapped in warm corn tortillas.

400 g squash
50 g brown button mushrooms, sliced
2 garlic cloves
1 teaspoon cumin seed, crushed
1 small onion, chopped
1 tablespoon olive oil
1 lemon, juice of
1/4 cup mixed fresh herbs, of your choice
50 g crumbled feta

Steps:

  • Heat oven to 200C/400°F.
  • Peel and cut the squash into 5cm cubes. cut the tips of the cloves but leave the skin on.
  • Place the squash, mushrooms, garlic onion, cumin and olive oil in a bowl and toss well.
  • Spread the ingredients into a baking tray and cover with foil.
  • Bake for 30 mins until squash is soft.
  • Remove garlic and squeeze out the insides. Drizzle with the lemon juice, stir in the herbs and serve topped with the feta.

Delight dinner guests with these stuffed baby squash, made with mixed grains, mushrooms and tarragon. It makes an ideal veggie centrepiece at Christmas

4 onion or acorn squash
4 tbsp olive oil
50g dried wild mushrooms
2 banana shallots, peeled and sliced
200g chestnut mushrooms, finely chopped
2 garlic cloves, crushed
100ml vegetable stock
250g cooked mixed grains
4 tbsp crème fraîche
½ small bunch of tarragon, finely chopped
80g mature cheddar, finely grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Using a serrated knife, cut a small disc off the bottom of each squash so they stand upright on a baking tray. Slice off the tops (these will be used as lids), and scoop out and discard the seeded centre. Rub 2 tbsp oil on the inside and outside of the squashes, then season.
  • Tip the dried mushrooms into a heatproof bowl and cover with 100ml boiling water. Cover and leave to soak for 15 mins. Meanwhile, heat the remaining oil in a non-stick frying pan, and cook the shallots for 10 mins until softened and translucent. Drain the rehydrated mushrooms (reserving the soaking liquid) and roughly chop, then add to the pan along with the chestnut mushrooms. Fry for 10 mins more. Stir in the garlic and cook for another minute. Add the stock, most of the reserved soaking liquid (leave the last few drops in the bottom of the bowl, as this may contain grit) and the grains, and bring to the boil. Remove from the heat and stir in the crème fraîche, tarragon and cheese. Season.
  • Divide the filling between the hollowed-out squashes. Put the 'lids' on top and bake for 1 hr-1 hr 10 mins, depending on the size of the squash. When ready, the squash skins should be blistered and the flesh soft and cooked through. Leave to rest for 10 mins before serving.

It's a great fall vegetarian meal, as it's very filling, and the rice would be great as a side dish, on it's own! **NOTE: The quantity of the filling I have listed is for 4 squash halves in the original recipe, but I use the extra filling as a side dish for a dinner the next night.

A hearty dish that comes from Fiction vegetarian restaurant in London. Its ideal served as a vegetarian main with my Chestnut and bay leaf gravy.

2 (700 g) butternut squash
2 tablespoons olive oil
50 g butter
300 g baby button mushrooms
2 garlic cloves, crushed
1/2 lemon, juice of
2 tablespoons olive oil

Steps:

  • Heat oven to 220C/425°F.
  • Cut each squash in half and scoop out the seeds and membranes. Score a criss cross pattern in each squash and place on a baking tray cut side up. Drizzle with the olive oil, dot with the butter and season if desired. Cook for 40 mins on top shelf.
  • Place the mushrooms in an ovenproof dish with all the other ingredients and place of the shelf below the squash for its last 15 mins of cooking.
  • Serve with Broccoli and roast new potatoes.
