2 (8 ounce) skinless, boneless chicken breasts
salt and ground black pepper to taste
1 lemon, juiced, divided
1 small yellow onion, roughly chopped
¼ cup olive oil
2 cloves garlic, diced
1 teaspoon dried Greek oregano
1 tablespoon olive oil, or as needed
1 cup grape tomatoes, halved
½ (10 ounce) bag fresh spinach
½ cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a your desired thickness. Season with salt and pepper. Place chicken in a baking pan.
  • Combine 3/4 of the lemon juice, onion, 1/4 cup olive oil, garlic, and oregano in a bowl. Pour marinade over the chicken.
  • Heat 1 tablespoon olive oil in a saucepan over medium-high heat. Saute tomatoes for 3 minutes. Add spinach; season with salt and remaining lemon juice. Cook and stir until spinach is slightly wilted, 1 to 2 minutes. Pour over the chicken in the pan. Sprinkle feta cheese on top.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 tablespoons all-purpose flour
Pinch of cayenne
2 tablespoons California extra-virgin olive oil
3 large chicken breast cutlets, pounded or thinly sliced
Juice of half a lemon, plus four slices of lemon
2 large cloves garlic, sliced
1/3 cup sliced kalamata olives, pitted
1/3 cup green olives (we use some marinated in herbs de Provence), pitted
3 tablespoons fresh Italian parsley, chopped
1/2 teaspoon kosher salt
Fresh pepper, to taste
2 teaspoons butter

Steps:

  • Combine the flour and cayenne in a shallow bowl. Heat the olive oil in a medium skillet on medium flame until hot.
  • Dredge the chicken in the flour mixture, shaking off any excess flour. Place the chicken in the hot skillet and cook until lightly golden, about 3 minutes.
  • Turn the chicken over, add the lemon juice, lemon slices, garlic, olives, 1 1/2 tablespoons of the parsley, and the salt and pepper. Cook for 8 to 10 minutes, shaking the pan occasionally and stirring the olive mixture gently to avoid burning the garlic.
  • Add the butter to the pan, shaking to combine the sauce.
  • Place the chicken breasts on a serving plate, then pour the olive mixture over the top. Garnish with the remaining 1 1/2 tablespoons of the fresh parsley.

2 tablespoons red wine vinegar
1/2 small shallot, minced
1 teaspoon ground cumin

2 cups shredded rotisserie chicken
2 cups shredded kale
1 cup shredded romaine
1/2 cup chopped cucumber

Steps:

  • Cook the bulgur as the label directs; season with salt.
  • Whisk the olive oil, vinegar, shallot, cumin and mustard in a medium bowl, then season the dressing with salt and pepper. In a separate bowl, toss half of the dressing with the chicken. Toss the remaining dressing with the kale, romaine, cucumber, bell pepper and tomatoes.
  • Divide the bulgur among 4 bowls, then top with the kale mixture and chicken. Top with hummus and sprinkle with parsley. Serve with pita bread.

1 4½ to 5 pound chicken (organic)
1 teaspoon paprika (ground)
1/2 teaspoon turmeric (ground)
1/4 teaspoon coriander (ground)
1/4 teaspoon cumin (ground)
1/4 teaspoon cinnamon (ground)
1/4 teaspoon red pepper flakes
1½ teaspoons sea salt
1 teaspoon ginger (fresh, grated plus 3 inches unpeeled fresh ginger, halved lengthwise )
3 cloves garlic (peeled)
1 stick cinnamon
1 lemon (halved)
2 teaspoons lemon juice (freshly squeezed)
Everything Drizzle (see recipe below)
1/2 cup parsley leaves (fresh, tightly packed)
2 tablespoons mint leaves (fresh, tightly packed)
1 tablespoon lemon juice (freshly squeezed)
sea salt
1/4 teaspoon maple syrup (grade B)
1/4 cup olive oil (extra virgin)

Steps:

  • Preheat the oven to 400°F. Pat the chicken dry with paper towels. Stir the paprika, turmeric, coriander, cumin, cinnamon, and red pepper flakes together. Divide the mixture in half and stir 1 teaspoon of the salt into one half. Rub the salted spice mixture all over the outside of the chicken. Sprinkle the remaining 1/2 teaspoon of salt inside the chicken.
  • With your palm facing downward, use your first three fingers to gently lift the skin on both sides of the breast to loosen it from the meat. Rub the remaining spice mixture and the grated ginger under the skin of each side of the breast, massaging the seasonings lightly into the meat. Place the garlic cloves, cinnamon stick, and ginger pieces inside the cavity. Squeeze the lemon halves into the cavity, then insert the rinds.
  • Place the chicken on a roasting rack in a glass or ceramic baking dish breast side up. Roast until a meat thermometer reads 160°F when inserted in the thigh and the juice from the meat runs clear, about 1 hour.
  • Let the chicken rest for at least 10 minutes before carving. Just before serving, pour 2 teaspoons of lemon juice all over the chicken and serve with My Everything Drizzle.
  • Combine the parsley, mint, lemon juice, 1/8 teaspoon salt, syrup, and oil in a food processor and process until well blended. For a thinner drizzle, add a tablespoon of water and briefly process again. Taste; you may want to add a pinch of salt.

4 skinless chicken breasts (organic or free range)
2 tablespoons olive oil
1 large red onion, finely sliced
1 red pepper, thinkly sliced
3 cloves garlic, chopped
325 g long grain rice
400 ml dry white wine
1 (1 liter) carton pureed tomatoes (passata)
1 cup pitted black olives, roughly chopped
8 sun-dried tomatoes
1 bunch basil leaves, torn into pieces,save a few leaves to serve.

Steps:

  • Heat oven to 180*C.
  • Season the chicken with salt and freshly ground pepper.
  • Heat the olive oil in a flameproof casserole (You'll need one with a lid) and brown the chicken all over.
  • Transfer to a plate.
  • Fry the onion and red pepper in the casserole for a couple of minutes, then stir in the garlic and rice.
  • Pour in the wine and passata and add the olives, sun dried tomatoes and basil.
  • Season, stir well and bring to a simmer.
  • REturn the chicken to the pan, push it into the liquid.
  • Cover and bake for 45 minutes.
  • Scatter with basil leaves, Parmesan and a grinding of pepper to serve.

3 tablespoons olive oil
Two (3 1/2-to 4-pound) chickens, each cut into 10 pieces
1/3 cup dry white wine
1/2 cup red-wine vinegar
1 tablespoon Dijon mustard
1 tablespoon light-brown sugar
1 cup pitted dates, halved
6 sprigs fresh thyme
1/2 cup pitted green olives
2 tablespoons capers, drained
1 pint cherry tomatoes
Coarse salt and freshly ground pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Season chicken with salt and pepper; working in batches, add chicken to skillet, skin-side down, and cook until golden brown, 5 to 7 minutes. Turn chicken and cook 3 minutes more. Transfer to a large baking dish.
  • Drain oil from pan and return to medium heat. Add white wine to deglaze and use a wooden spoon to scrape up browned bits from bottom of pan. Whisk in red-wine vinegar, mustard, light-brown sugar, and dates; simmer until reduced by half, 3 to 4 minutes.
  • In a medium bowl, mix together remaining tablespoon olive oil, thyme, olives, capers, and cherry tomatoes; season with salt and pepper and toss to combine. Evenly distribute olive mixture over chicken and top with pan sauce. Transfer to oven and bake until chicken is cooked through, 55 to 65 minutes. Sprinkle with parsley and serve.

250g baby new potatoes, thinly sliced
1 large courgette, diagonally sliced
1 red onion, cut into wedges
1 yellow pepper, seeded and cut into chunks
6 firm plum tomatoes, halved
12 black olives, pitted
2 skinless boneless chicken breast fillets, about 150g/5oz each
3 tbsp olive oil
1 rounded tbsp green pesto

Steps:

  • Preheat the oven to 200C/ Gas 6/fan oven 180C. Spread the potatoes, courgette, onion, pepper and tomatoes in a shallow roasting tin and scatter over the olives. Season with salt and coarsely ground black pepper.
  • Slash the flesh of each chicken breast 3-4 times using a sharp knife, then lay the chicken on top of the vegetables.
  • Mix the olive oil and pesto together until well blended and spoon evenly over the chicken. Cover the tin with foil and cook for 30 minutes.
  • Remove the foil from the tin. Return to the oven and cook for a further 10 minutes until the vegetables are juicy and look tempting to eat and the chicken is cooked through (the juices should run clear when pierced with a skewer).

2 red peppers , deseeded and cut into chunks
1 red onion , cut into wedges
2 tsp olive oil
4 skin-on chicken breasts
½ x 150g pack full-fat garlic & herb soft cheese
200g pack cherry tomatoes
handful black olives

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the peppers and onion on a big baking tray with half the oil. Transfer to the oven and cook on the top shelf for 10 mins.
  • Meanwhile, carefully make a pocket between the skin and the flesh of each chicken breast, but don't pull off the skin completely. Push equal amounts of cheese under the skin, smooth the skin back down, brush it with the rest of the oil, season, then add to the tray along with the tomatoes and olives. Return to the oven and cook for 25-30 mins more until the chicken is golden and cooked. Serve with baked potatoes, if you like.
