BAKED MACARONI AND CHEESE

Steps:
- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

I like to create recipes, and this is one my husband really enjoys. It's an excellent dish for company, especially for families with small children. After all, what kid doesn't like macaroni and cheese?

- In a saucepan, heat milk over medium heat until bubbles form around the edge of pan. Remove from the heat; stir in the cheese and butter. Let stand for 1 minute. Stir until cheese is almost melted. Stir in bread crumbs. In a bowl, combine the macaroni, egg yolks, pimientos, parsley, onion and salt. Stir in cheese mixture; mix well. Beat egg whites until stiff peaks form; fold into macaroni mixture. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until puffed and lightly browned.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to boil over high heat. Add macaroni, and cook until al dente, about 8 to 10 minutes. Drain, and pour hot pasta into a casserole dish.
- Meanwhile, in a large bowl, stir together tomatoes, italian seasoning, oregano, basil, salt, and pepper.
- Stir into the hot pasta 1 cup of Cheddar, 1 cup of mozzarella, and 1/2 cup of Parmesan. Continue to stir until the cheeses have melted. Then stir in tomato and herb mixture. Sprinkle 1/2 cup Cheddar, 1/2 cup mozzarella, 1/4 cup Parmesan, and 1/4 cup feta over the top of the casserole.
- Bake in preheated oven for 15 to 25 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
- Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. Slowly stream half-and-half and chicken broth into the butter mixture while stirring. Bring the mixture to a boil and continue to cook while stirring continually until thickened and bubbly, 2 to 3 minutes.
- Remove saucepan from heat. Melt mild Cheddar cheese and sharp Cheddar cheese into the butter mixture one handful at a time, stirring to incorporate each addition before adding the next. Season the cheese mixture with pepper and pour over the macaroni; stir to coat pasta evenly. Transfer the mixture to the prepared baking dish and top with crushed crackers.
- Bake in preheated oven until crust is golden brown and the liquid is bubbling, 15 to 20 minutes. Cool 10 minutes before serving.

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.

This casserole is not your typical mac and cheese. It has a very "cheesy" rich flavor. It is great for family reunions and gatherings because it will serve up to 15 people and is easy to transport. - Slightly cook macaroni in boiling water and kosher salt. Allow to cool.
- Combine cottage cheese and sour cream and mix well.
- Add beaten eggs, salt and pepper and mix well.
- Fold in cheese reserving about 1/2 cup for topping.
- Add cooled macaroni.

- preheat oven to 350 & prepare pasta.
- melt 1/2 cup butter. whisk in flour & pepper for one minute.
- gradually whisk in the milk & cook over medium heat , whisking constantly for six to seven minutes.
- add mustard to mixture & remove from heat.
- chop onion & add to tomatoes in stove top pan. saute for 10 minutes.

- Preheat oven to 375.
- Put water in a large sauce pot, add salt, and bring to a rolling boil over high heat.
- Add macaroni all at once and stir with a fork.
- Return water to a boil and reduce heat to moderately low. Simmer 4 to 5 minutes or until tender. Do not overcook. Drain.
- Meanwhile, put butter in a medium-sized saucepan and heat over moderate heat.
- When butter is melted, remove from heat and stir in flour, salt, pepper, and mustard.
- When mixture is smooth, gradually add milk, stirring until no lumps of flour remain.
- Return saucepan to heat and cook over moderately high heat, stirring constantly, until milk mixture comes to a boil and thickens slightly.
- Add chopped pimiento and chopped green pepper and reduce heat to low and simmer 1 minute longer.
- Stir 1 1/2 cups of the grated cheddar cheese, the cooked and drained macaroni, and the slivered chicken into the milk mixture.
- Pour into a shallow 2 quart round or oval or round baking dish.
- Sprinkle the rest of the grated cheddar cheese over the top of the macaroni mixture.
- The casserole can be prepared to this point 1 to 2 days before you plan to bake and serve it. You can cover and store in refrigerator until ready to bake.
- Place casserole on center oven rack in oven and bake for 20 minutes (longer if casserole has been chilled), or until macaroni is hot and bubbly and the cheese is melted.
- Remove from oven and arrange tomato wedges on top of casserole and serve.
