BAKED ZITI

- Preheat the oven to 400 degrees F.
- Bring a large pot of water to a boil, salt generously and boil the pasta until al dente (tender but still slightly firm). Drain.
- Toss the cooked pasta with the quick tomato sauce, cubed mozzarella, half the Parmesan, all of the black pepper and crushed red pepper in a large bowl. Transfer the pasta to the prepared baking dish. Cover the top of the pasta with the sliced mozzarella and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.
- Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
- Remove and discard the herb sprigs. Stir in 2 teaspoons salt and season with pepper. Use now or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
- Bring a large pot of lightly salted water to a boil. Add ziti and cook at a boil until tender yet firm to the bite, 9 to 11 minutes.
- While the ziti is cooking, heat a large skillet over medium-high heat. Add ground beef and onion to the hot skillet and cook until beef is browned and crumbly, 5 to 7 minutes. Stir in Worcestershire sauce, oregano, and garlic powder; cook until fragrant, about 1 minute. Drain and discard grease. Stir in marinara sauce.
- Drain ziti and transfer to the prepared baking dish. Sprinkle 1/2 of the mozzarella cheese over top, then layer with cottage cheese, meat sauce, and remaining mozzarella. Beat milk, eggs, salt, and pepper together in a bowl, and pour over top.
- Bake in the preheated oven until set and bubbly, about 45 minutes.

- Bring a large pot of salted water to boil. Preheat oven to 375. Cook the 3 cups of mini penne pasta according to box directions. As the pasta is cooking, carefully reserve 1 ladle of water.
- While the pasta is cooking, begin making the vodka sauce. In a medium pan over medium heat melt the butter then add the grated garlic and cook 1 minute. Add the flour and whisk until combined, cook about 30 seconds. Add the tomato paste and stir to incorporate with the flour…cook another minutes. Add the half & half and gently whisk to blend the tomato paste into the cream. Then, add the vodka and basil. Bring to light boil, then reduce heat and add the Parmesan cheese, salt, pepper, and garlic powder. Simmer for 8-10 minutes. If the sauce begins to thicken too much, add the reserved pasta water a little at a time.
- Mix the pasta with the vodka sauce then pour into your baking dish, layer with the Mozzarella cheese, then tear and spread 2 Burrata balls overtop. Sprinkle with a little extra Parmesan cheese. Bake for 25 minutes, then place under the broiler for 90 seconds – 2 minutes. To serve, add a little extra Burrata on the side!
