BAKED KING FISH/ COD IN TOMATO SAUCE
This is a wonderful Madhur Jaffrey recipe for fish. King Fish is my favourite fish and I get the freshest fish right at my door (at 9.00 a.m.)from my fish vendor named Jai Singh. It is almost as fresh as just out of the sea. Hmmm... one of the pluses of living near the sea. We have fish almost 4 days a week and I love variety so have a host of recipes that I have tried and used over and over again for 8 years now. This is definitely the top of the list.

Steps:
- Wash and dry the fish slices.
- Marinate the fish with the salt, turmeric and chilli powder for 1/2 an hour.
- Heat 2 tbslp oil over medium heat and when hot put in the fennel and mustard seeds As soon as the mustard seeds pop add the onions and garlic and ginger root Saute until the onions are light brown.
- Then add the 2 tsps of cumin and the green chilli.
- Stir and then add the tomatoes (and their liquid- for canned tomatoes), the rest of the cumin and the garam masala.
- Boil and then simmer covered for 15 mins on low.
- Pre heat oven to 180C Heat a little more oil in a non stick and when hot put in the fish slices and just brown all the steaks on both sides.
- Put the fish in a baking dish.
- Now just pour the sauce over and bake uncovered for 15 mins or until the fish is cooked.
BAKED MACKEREL
Mackerel is one of the easiest fish for us to catch here in Maine so I am always on the lookout for a new recipe. This is one I want to try soon. The recipe calls for 2 2-lb mackerel, but we usually catch smaller ones. I think just adjusting the baking time would allow for me to use smaller fish.

Steps:
- Preheat oven to 400 degrees.
- In a saucepan over low heat combine all ingredients except for the fish.
- Cook over low heat for about 20 minutes.
- Remove the bay leaf.
- Place fish in a baking dish and pour the sauce over the fish.
- Bake for 30-40 minutes.
SEARED KING FISH AND MUSTARD CREAM AND CAPER SAUCE
King Fish is a popular NZ game fish. Mostly cooked as steaks. I made this sauce up, as sometimes King Fish can be dry if not fresh enough. The sauce is also great with Tuna or Steak.

Steps:
- To prepare Sauce.
- Crush garlic and mix with chicken stock and lemon pepper.
- Fry onion, garlic, chicken stock and lemon pepper untill onion is clear and spices are fragrant.
- Pour in cream and simmer untill reduced and thick.
- Add capers and mustard and stir in lightly.
- To prepare King Fish Steaks.
- Crush garlic.
- Mix with lemon pepper, chicken stock and lime juice.
- Pat steaks dry with a paper towel.
- Rub garlic mixture into steaks and then sear on a hot grill or barbeque for 5 mins each side (Less if steak is less than 2cm thick).
- Lay out on a platter and pour creamy mustard sauce over the top.
- Serve hot with a side salad or vegetables.

KING FISH STEAK WITH LEMON GARLIC BUTTER RECIPE

- Prepare the fish, rinse well and drain the excess water. While draining the fish, prepare the marinade.
- In a container, mix soy sauce, lemon juice, water, garlic powder, black pepper, salt, and brown sugar. Make sure the ingredients were properly dissolved before placing the fish steak. Flip it once to evenly distribute the marinade. Cover it and refrigerate for at least 2 hours before frying. TIP: Use an airtight container in preparing the marinade so you can just add in the fish and seal it for refrigeration. It's more hygienic and less mess!
- In a non-stick grill pan, melt 2 tablespoons of butter and add 1 tablespoon olive oil. Fry for 3 to 4 minutes each side at moderate heat. After 3 to 4 minutes, spread 2 tablespoons of butter on top of the king fish then flip it to fry the other side. Remove the fish from the heat and place in a serving platter. TIP: You can use any non-stick pan for frying, but the grill marks make it look more enticing and Insta-worthy!
- In the same non-stick grill pan, melt ¼ cup unsalted butter or remaining. Once melted, put remaining olive oil and stir fry the minced garlic until fragrant. Add in the remaining marinade plus 1 tablespoon lemon juice. Simmer for at least 3 to 4 minutes.
