1 pound ground beef ((80% lean))
½ cup panko breadcrumbs
¼ cup whole milk
1 whole egg
¼ cup freshly grated parmesan cheese
¼ cup finely chopped yellow onion
2 garlic cloves ((finely minced))
2 tbsp finely chopped fresh parsley leaves
1 tbsp finely chopped fresh basil leaves
½ tsp kosher salt
¼ tsp ground black pepper
½ tsp fennel seeds ((grind or crush with a knife) )

Steps:

  • Preheat the oven to 450°F.
  • Place the breadcrumbs in a large bowl then pour in the milk. Stir to combine, and soak.
  • Add egg and the remaining ingredients, except beef into the mixture. Whisk to combine.
  • Add the minced beef and mix with your hands until combined. Do not overmix.
  • Use a cookie scoop to grab some raw meat then gently roll between your hands to make perfectly-sized uniform meatballs (about 24 balls).
  • Arrange the meatballs on the prepared baking sheets. Do not overcrowd.
  • Bake the meatballs for about 10 minutes or until browned and cooked through. Let the meatballs rest for 5 minutes before serving.

1/2 cup plain breadcrumbs
1/2 cup milk (preferably whole)
2 eggs
1 yellow onion (grated, plus any juices)
1 clove garlic (grated on a microplane zester)
2 teaspoons dried oregano (or Italian seasoning)
1 teaspoons kosher salt
1/2 teaspoon black pepper
2 lbs. ground beef (preferably 80/20)

Steps:

  • Preheat your oven to 375 degrees F.
  • In a large bowl, mix together the breadcrumbs (1/2 cup), milk (1/2 cup), eggs (2), grated onion plus the juices, minced garlic (1 clove), dried oregano (2 teaspoons), kosher salt (1 teaspoon), and black pepper (1/2 teaspoon) until everything is uniformly wet.
  • Add the ground beef (2 lbs) and mix until everything is just combined. Try not to overwork it. Mixing with your hands is best, but you can use a spoon if you don't like handling raw meat.
  • Using a large cookie/ice cream scoop, scoop the meatball mixture onto a rimmed baking sheet (alternatively, you can form the meatballs with your hands).
  • Bake the meatballs in the center of the oven at 375 degrees F for 30 minutes, or until internal temperature is at least 160 degrees.
  • Serve the meatballs with sauce and grated parmesan cheese on top of pasta, in subs, in a salad, or however you like!

1/4 cup seasoned dry bread crumbs
1 egg
2 tablespoons water
1 teaspoon minced garlic
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oven to 400°F. Combine Ground Beef, bread crumbs, egg, water, garlic, salt and pepper in large bowl, mixing lightly but thoroughly. Shape into twelve 2-inch meatballs. Place on rack in broiler pan that has been sprayed with cooking spray. Bake in 400°F oven 24 to 27 minutes.
  • Serve with pasta sauce over hot cooked pasta or as sandwiches in crusty Italian rolls, if desired.

  • Combine the beef, breadcrumbs, milk, eggs, onion, garlic, parsley, 2 teaspoons salt and 1/2 teaspoon pepper in a large bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 30). Arrange the meatballs on the prepared baking sheets.

1/4 cup parmesan cheese, shredded
1/2 cup Italian seasoned breadcrumbs
1/3 cup fresh parsley, chopped (a must - dried will not do in this)
1/4 cup unseasoned tomato sauce
1 teaspoon mustard powder
3/4 teaspoon dried Italian seasoning
1/4 teaspoon low sodium salt, to taste
1/4 teaspoon crushed red pepper flakes, to taste
2 cloves garlic, minced,more to taste

Steps:

  • Preheat oven to 400 F.
  • Spray a broiler pan with broiling rack well with nonstick spray (I line the bottom part with foil and then spray).
  • Combine all ingredients well.
  • Form into 30 meatballs using a 1 1/2" diameter scoop (or use your hands).
  • Set on sprayed broiler rack in prepared pan and bake for 15-20 minutes, or until meatballs are cooked through.
  • Add these meatballs to your favorite sauce and serve over pasta or in a hoagie roll with sauce& cheese to make a great sandwich.

1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
3/4 cup milk
1/4 cup sour cream (only add if sauce is too runny)
3/4 lb italian meatballs (quartered or you can leave whole)
16 ounces wide egg noodles (dried)
3 green onion tops (chopped)
6 ounces sliced mushrooms (optional)

Steps:

  • Start sauce base by combining soups and milk. Add sour cream if it gets too runny, or more milk if it gets too thick for your tastes.
  • In a separate skillet, cook meatballs until heated through. Add sauce to meatballs and stir in onions. Reduce heat to low.
  • Meanwhile cook egg noodles in boiling, salted water until al dentè. Drain noodles and put back in pot. Add meatballs & sauce & mix thoroughly.
  • Serve with salad & bread. Enjoy!
