GLAZED BAKED HAM
This recipe for baked ham is one of the easiest recipes for ham. It is baked low and slow in the oven with a sweet and savory glaze that gives this ham the most incredible flavor.

- Remove ham from the refrigerator for 1 hour before baking.
- Preheat oven to 325 degrees.
- In a small saucepan, whisk together the pineapple juice, apricot preserves, Dijon, horseradish, brown sugar, cloves, cinnamon, nutmeg, and allspice together. Heat over medium heat and whisk until the sugar is dissolved and the mixture is well combined.
- Place ham on heavy-duty foil. Pour glaze over ham, allowing glaze to drip down between slices, if using a sliced ham. Insert oven-safe digital thermometer if using and then wrap ham in foil.
- Place a roasting rack in a large roasting pan. pour in 1-2 cups of water--enough to cover pan. Place ham on the rack.
- Bake ham until an internal temperature of 140 degrees Fahrenheit is reached, or for 15 minutes per pound for bone-in ham and 20 minutes per pound for boneless ham.
- Remove ham from oven and let rest for at least 10 minutes. Unwrap foil and serve.

- Season the ham with dry rub. Place plastic wrap over ham and put in refrigerator. Allow the seasoning to penetrate the ham overnight to give it a fuller flavor.
- Using indirect heat, preheat your grill to 250 degrees F. with hickory chips and charcoal.
- Place ham in an aluminum roasting pan and place on grill grates. Let smoke for 3 hours, making sure the temperature remains at 250 degrees F; adding more hickory chips and charcoal, as necessary. Remove to a platter.
- For the glaze:
- Place all ingredients into a saucepan over medium heat. Allow to simmer, cooking for 10 to 15 minutes, until the glaze is syrupy.
- Pour the warm glaze over the warm ham and serve immediately.
- Mix ingredients together and store in an airtight container for up to 6 months.

- Preheat oven to 400 degrees F (200 degrees C). Place ham on a rack set in a roasting pan, and carefully pour about 1/2 inch of boiling water into the pan beneath the ham.
- Bake the ham in the preheated oven for 2 hours, or until a meat thermometer inserted into the thickest part of the meat (do not touch the bone) reads at least 140 degrees F (60 degrees C.)
- Reduce oven heat to 350 degrees F (175 degrees C.) In a bowl, mix together the brown sugar, flour, dry mustard, honey, and lemon juice as needed to make a thick, smooth paste. - Place the raw ham in a large, clean bucket. Add enough water to cover and soak overnight, or up to 24 hrs ahead, changing the water twice.
- Heat oven to 180C/160C fan/gas 4. Drain and place the ham in a large roasting tin, cover tightly with foil and bake for 3 hrs.
- Remove the ham from the oven and turn the heat up to 200C/180C fan/gas 6.Using a sharp knife, carefully slice the rind off the ham, leaving about 1-2 cm of fat; cut a diamond-shaped pattern into this. In a small bowl, mix together the sugar and mustard, then rub all over the ham. Roast for 30 mins until the ham is tender and the outside nice and sticky.

SWEET AND SOUR GLAZED HAM
Steps:
- HEAT oven to 325 degrees F. Combine jelly, mustard, lemon juice and ground cloves in medium saucepan; place over medium heat and bring to a boil, stirring occasionally. Set aside.
- SCORE fat on ham in a diamond design; stud with cloves. Place ham, fat side up, on rack in roasting pan. Insert meat thermometer, making sure it does not touch bone.
- BAKE, uncovered, until thermometer registers 140 degrees F (1 1/2 to 2 hours); baste every 15 to 20 minutes with sauce.
- HEAT remaining sauce; serve with ham.
ROAST HAM WITH SWEET MUSTARD GLAZE
Steps:
- Slice the surface of the ham about 1-inch deep on the diagonal from left to right, spacing each slice about 1 1/2inches apart. Then go back and slice diagonally from right to left spacing each slice about 1 1/2 inches apart to form a diamond pattern. Put a whole clove in the center of each diamond.
- Preheat oven to 350 degrees F.
- Put the ham in a roasting pan fitted with a rack. Add the vegetable broth to the bottom of the roasting pan. Bake in the oven for 1 1/2 hours.
- While the ham is cooking combine all the glaze ingredients in a pot, and reduce by half over medium-low heat.
- After 1 1/2 hours remove the ham from the oven and generously baste with the sweet mustard glaze. Return the ham to the oven and bake for an additional 30 minutes, basting with the remaining glaze every 10 minutes.
- After the ham has cooked for 2 hours and has become golden brown and caramelized remove it from the oven, to a cutting board, cover with foil and allow it to rest for 15 minutes before slicing and serving.

SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)
I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! - 1. In a small bowl, wisk all ingredients together.
- 2. Pat ham dry with papertowel.
- 3. Schmear all over ham.
- I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
- I made a double batch of this to use as a dipping sauce as well. Delish!

SIMPLE AND SWEET HAM GLAZE
A quick and easy glaze for your ham. I found it on cooks.com awhile back, and it is a favorite of my husband. You may not use all the glaze for a half sized ham. Servings depend on the size of your ham.

- Mix all ingredients together.
- To use the glaze, remove your ham from the oven when there's 30 minutes left. Pour off any drippings that have accumulated in your pan. Take a sharp knife and score the ham in a criss-cross pattern. If it's a spiral ham, making a set of vertical cuts should be fine. Use about a third of the glaze to coat the ham, and return to 400°F oven for 8-10 minutes.
- Repeat applications of the glaze 1-2 more times, returning the ham to cook for about 8 to 10 minutes after each application of the glaze. Be sure not to use glaze in the bottom of the pan - this will dull the sheen.

SWEET STICKY HAM GLAZE
This glaze came about when the ham my friend bought for Easter dinner didn't have the typical glaze packet included. Together we hit on this concoction that everyone at dinner thought was yummy! We wanted to make enough glaze that we could serve it at the table for individual slices - this way, the person who gets the end of the ham doesn't get all of the glaze and if you get a regular slice you only get a little on the outside. Everyone is able to have glaze with their ham.

- Set aside Pineapple Slices.
- Mix pineapple juice, brown sugar, butter, and molasses, in saucepan and heat until bubbly stirring continuously. Continue cooking for 10 minutes (the mixture will thicken only slightly). Then add the crushed cookies.
- Continue simmering and stirring while the mixture reduces by about 1/3. This will take about 15 minutes more.
- If you still desire a thicker sauce, mix cornstarch and water to make a slurry.
- Continue stirring the boiling sugar/juice mixture while adding slurry. You may not need to add all of the slurry, depending upon how thick you like the glaze.
- Cook for five minutes longer. The glaze should be quite thick and will easily coat the back of a spoon.
- 30 minutes before ham is finished cooking, use toothpicks to attach slices of pineapple all over outside of ham.
- Cook ham for an additional 30 minutes.
- Pour half of glaze over ham and pineapple slices.
- Reserve additional glaze for individual servings.

BAKED HAM WITH HONEY WALNUT GLAZE
It's the sweet and tender ham paired with the smoky, salty bacon and the toasted walnuts that makes this dish a winner. The flavors are sublime. - Preheat the oven to 350°F.
- Prepare the ham: Place the ham on a flat surface, fat side up. "Stud" the surface with the cloves, leaving space between each. Pour 1/4 cup of the honey over the exterior.
- Cook the ham: Place the ham in a roasting pan fitted with a rack. Drizzle the onions, garlic and carrots with the canola oil and scatter them on the bottom of the pan and pour wine over vegetables. Place the pan in the center of the oven and cook for 1 hour 45 minutes to 2 hours or until a thermometer inserted into the thickest part of the ham registers 155°F.
- Cook the bacon and honey: Put the bacon in a medium skillet with 1/4 cup water and cook until the water evaporates, 5-8 minutes. Pour off all but 1 tablespoon of the rendered fat and add the remaining 1/2 cup honey and 2 tablespoons of the red wine vinegar. Simmer over medium heat until the honey thickens, 5-8 minutes. The honey will be very hot. Cool. Finely chop 3/4 cup of the walnuts. Stir the walnuts and mustard into the glaze to thicken the texture. Taste for seasoning.
- Finish the dish: Pour the glaze on the exterior of the ham spreading to cover the surface of the ham. The glaze should help the nuts adhere to the ham. Transfer the ham and the cooked vegetables to a large serving platter.
- Is a bone-in ham better? I like cooking meat on the bone more for better flavor and even cooking but the most important tip of all: buy what you like and make it how you like it!
