- Preheat the oven to 400 degrees F (200 degrees C).
- Line a baking sheet with foil.
- Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl. Taste and adjust with more salt if desired.
- Rinse halibut fillets and pat dry with a paper towel.
- Place halibut fillets onto the prepared baking sheet.
- Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
- Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.

- Preheat the oven to 400F. In a small bowl, mix together the mayonnaise, shallot, lemon juice, parsley, one tablespoon of chives (save the remaining for garnish), mustard, salt and pepper.
- Lightly coat the inside of the baking dish with oil or butter (to prevent the halibut from sticking). Place the halibut filets in the baking dish. Then evenly spoon your mayonnaise mixture onto the top of the halibut filets.
- Bake in the oven for 15-20 minutes minutes being careful not to overcook. Just before the fish is done, turn on the top broiler of your oven for 1-2 minutes to make the top golden. The fish is done when it becomes opaque and flakes easily.
- Remove the halibut from the oven and sprinkle the remaining chives on top before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Rub the halibut fillets with 1 tablespoon of lemon juice, then season with salt and pepper. Place the fillets into the prepared baking dish, then press the cilantro leaves onto the top of the halibut. - In a small bowl, mix the olive oil and Old Bay together; brush the halibut fillets with the mixture.

- Preheat your oven to 425°, line a baking sheet with parchment paper or foil, and position your oven rack in the center of your oven. (If using parchment, cut the parchment to fit your baking sheet, with no overhang.)
- In a small ramekin, prepare the marinade/seasoning by combining the pressed garlic cloves, Dijon, lemon juice and zest, the paprika, and a couple of good pinches of salt and pepper with a fork; add in the olive oil, 1 tablespoon at a time, and blend that in until combined.
- Place the halibut fillets onto the prepared baking sheet, and brush each fillet with the seasoning mixture (or pour it directly over), and if you have a few minutes, allow it the fillets to marinate for 10 to 20 minutes.

- Preheat oven to 450 degrees F.
- In a medium gratin dish or baking dish, make a bed of herbs with the thyme, parsley and bay leaves, scatter the garlic on top. Reserve 4 parsley sprigs, for garnish. - Halibut is one of my favorite fish to cook. I love the texture and the mild flavor, and it’s an easy fish to find. Best of all, Halibut in pretty “forgiving” when it comes to cooking. Don’t get me wrong, you need to be careful not to over or under cook it, but I think you’ve got a bit more room to play with than some other fish. In this recipe video, I cook an herb crusted halibut filet, served with a shitake mushroom broth, over mashed potatoes. The crispy herb crust gives the dish a nice texture, the mushrooms an earthiness, and the creamy mashed potatoes hold everything together. Recipe Overview and Keys to Success For this herb crusted halibut recipe there are just a couple things you need to be careful of. Don’t worry though, each is shown in the video:
- Most importantly, don’t overcook the halibut. While it is a forgiving fish, you still need to be careful. Watch for the doneness clues, primarily the color around the edges – which I describe below and show in the video. The mushroom broth has very few ingredients, and is subtle. To extract the most flavor I use more mushrooms than I’ll actually want to eat, and cook them thoroughly to extract their flavor; and use a good chicken stock as it carries the broth.
