Steps:
- Preheat oven to 400 degrees.
- Cook macaroni according to package directions; drain.
- In 2-quart casserole dish, combine soup, milk, chives, mustard, and hot pepper sauce.
- Stir in macaroni and cheese. Sprinkle with bread crumbs.
- Bake 25 minutes or until hot and bubbly.

BAKED MAC & CHEESE W/ GOUDA
This is one of those family recipes that has evolved over the span of my lifetime. I first learned to cook this when I was a preteen. It continued to tweak it during my married life. I had some leftover Gouda in the fridge and decided to add it. Since then, it has become my picky kids favorite. In our house this is the main meal. Serve with a green salad, steamed broccoli and garlic toast or crusty sour dough bread. EDIT TO ADD 4/2012: if doubling this recipe, use only 5 tablespoons of flour and 6 cups of milk. If you do not, you run the risk of a not so creamy and somewhat dry end result. I have also added a bit more milk because the under cooked macaroni will absorb some of the milk. Feel free to add more American cheese. The amounts can be increased to your liking.

Steps:
- Preheat oven to 350°F.
- Bring a large pot of water to a boil. Spray a shallow 8x8 baking dish; set aside.
- Generously salt boiling water; add pasta. Cook, according to package instructions, until 2 minutes short of al dente.
- Drain pasta, rinse with cold water, drain and return to pot.
- While pasta is cooking, melt butter in a large saucepan over medium. Whisk in seasonings; then whisk in flour to form a thick paste.
- Slowly whisk in milk. Bring to a low boil; reduce heat to low, and simmer until sauce is thickened, 2 to 3 minutes. Remove from heat.
- To baking dish, layering:.
- Add 1/2 of cooked macaroni. Add 1/2 of sauce, 1/2 of each cheese. Repeat and top with cheeses.
- Can be made several hours in advance, covered and refrigerated until time to bake.
- Bake covered for 15-20 minutes.
- Uncover and bake until topping is golden and sauce is bubbling, an additional 15-20 minutes.
- *If refrigerated, additional time may be needed until it is bubbly and slightly browned.
- Cool 5 minutes before serving.
- *Notes: I use a packet of G. Washington Golden seasoning instead of salt & pepper. If you can find it, it is a great universal seasoning for sauces.

BAKED GOUDA
Received this recipe about 20 years ago. Have made it many times over the years. It's always a hit.

Steps:
- 1. Remove 4 dinner rolls and place on small cookie sheet.
- 2. With fingers smooth out perforated marks on dinner roll dough to form solid rectangle.
- 3. Remove casing from Gouda and place cheese in center of crescent roll dough.
- 4. Coat cheese with mustard and bring up all corners of dough to totally encase cheese, making sure all openings are sealed.
- 5. Brush top with beaten egg white and sprinkle with sesame seeds.
- 6. May prepare to this point and hold several hours in the refrigerator.
- 7. When ready to serve, bake in preheated 375 oven for 30 minutes or until golden.
- 8. Allow to sit a few minutes before slicing into wedges.
TWICE-BAKED GOUDA-STUFFED POTATOES
A twist on twice-baked potatoes using Gouda. Can make early in the day and refrigerate prepared potatoes until ready to bake.

- Preheat oven to 400 degrees. Scrub and dry potatoes. Rub surface with a little vegetable oil or vegetable shortening. Prick in several places with fork.
- Bake in preheated oven for approximately 1 hour or test for doneness by gently squeezing the middle of the potato, using a pot holder. If it gives in easily to your touch, it is done. Remove potatoes to a work surface.
- Reduce oven temperature to 350 degrees. Cut potatoes in half lengthwise and allow to cool long enough to handle. Scoop out flesh with a spoon, being careful to leave shells intact (about 1/4-inch thick) and place in a bowl. Add 1 cup of the cheese, plus the sour cream, heavy cream, butter, green onion, parsley, salt and pepper to the potato flesh. Mash with potato masher or beat until just smooth with an electric mixer.
- Fill potato shells with potato mixture; sprinkle with bacon and remaining cheese. Bake at 350 degrees for 20 minutes or until golden. Garnish with minced fresh parsley.

- Preheat the oven to 400 degrees F, and line one large or two small baking sheets with parchment paper.
- Cut the puff pastry sheet in half. On a clean, lightly floured surface, thin out each piece of dough with a rolling pin until both sections are large enough to fold around the cheese. Place the dough onto the prepared baking sheet.
- Place a wheel of gouda in the center of the dough. Fold the excess dough around the cheese in a circular pattern so that no cheese is visible.
