I jazz up these baked french fries with paprika and garlic powder. Something about the combination of spices packs a punch. The leftovers are even good cold! -Heather Byers, Pittsburgh, Pennsylvania

Number Of Ingredients 5

4 medium potatoes
1 tablespoon olive oil
2-1/2 teaspoons paprika
3/4 teaspoon salt
3/4 teaspoon garlic powder

Steps:

  • Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

A little better for your than their fried counterparts. This recipe includes suggestions for dippers and toppers from different countries.

2 lbs russet potatoes, scrubbed
2 tablespoons vegetable oil
1/2 teaspoon sea salt
1/4 teaspoon coarse grind pepper
1 dash with malt vinegar
dip in mayonnaise
ketchup, of course
dip in peanut satay sauce or tartar sauce
1 dash with knorr chicken bouillon granule
serve with country gravy

Steps:

  • Preheat oven to 400°F Cut potatoes into long thin strips and place on a large baking sheet. Drizzle with oil, then sprinkle with seasonings; toss well to coat.
  • Bake for 45 minutes, stirring 3 or 4 times during cooking, until potatoes are golden brown and crisp.
  • Serve with a few of the sauces or pick a favorite!
  • Makes 4 servings.

1 1/4 cups kosher salt
6 medium russet potatoes, washed
2 tablespoons garlic salt
2 tablespoons seasoned salt
1 teaspoon freshly ground black pepper
Horseradish Sour Cream, recipe follows
2 cups sour cream
4 tablespoons prepared horseradish
Salt and freshly ground black pepper

Steps:

  • In large mixing bowl dissolve 1 cup kosher salt in 8 cups of water. Add potatoes. Insure that all potatoes are submerged, and brine for 2 to 8 hours.
  • Preheat the oven to 400 degrees F.
  • Remove the potatoes from brine and liberally coat with the remaining kosher salt, garlic salt, seasoned salt, and pepper.
  • Place the potatoes on a wire rack in the center of the oven and bake for 45 minutes. Do not puncture skin with tongs, fork, or tooth picks. Potatoes will be soft to the touch when done.
  • Let potatoes rest 5 minutes before cutting.
  • Combine all ingredients. Serve with potatoes.

  • Adjust an oven rack to the lowest position and preheat the oven to 475 degrees Fahrenheit. Scrub the potatoes and cut them, lengthwise, into 10 to 12 even wedges. The trick is to first quarter the potatoes lengthwise, and then cut each quarter lengthwise into 2 to 3 wedges (I sliced mine a little too thin).
  • Place the sliced potatoes into a large bowl and cover them with hot water (I used hot water from the tap, but others have suggested that pipes can leach impurities into hot water, so it may be best to use cool tap water that has been heated on the stove). Let them soak for 10 minutes. This step releases some of the starch in the potatoes and lets them absorb moisture, which leads to crisp outsides and moist interiors.
  • Cover a large, rimmed baking sheet with parchment paper. Drizzle 1/4 cup oil onto the paper, then sprinkle it evenly with about 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Drain the potatoes and pat them dry thoroughly with a tea towel or paper towels. Toss the potatoes with the remaining 1 teaspoon oil and mix evenly.
