4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

3 medium russet potatoes, or more to taste, sliced into even strips
1 cup grated Parmesan cheese
2 tablespoons garlic powder
1 tablespoon onion powder
½ tablespoon paprika
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
  • Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
  • Spread potatoes on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

Warning...These are highly addictive!!! You'll probably end up making them all the time. I know I do! Such a fantastic way to jazz up fries. They're baked in the oven with garlic, a little olive oil and once baked, sprinkled with Parmesan cheese and a little garlic powder. Each serving has 172 calories and 6 grams of fat. You could easily cut this recipe in half if you don't need 5 servings.

1 tablespoon garlic, minced very fine
2 tablespoons olive oil
2 large (russet) baking potatoes ((12 ounces each or 1½ pounds total))
Salt and pepper, to taste
2 tablespoons parmesan cheese
½ teaspoon garlic powder, or to taste

Steps:

  • Preheat oven to 450 degrees. Line 1 baking sheet with foil and coat baking sheet with cooking spray.
  • Cut the potatoes lengthwise in half and in half again. Cut each piece into ¼-½ inch thick strips. Place on the baking sheet and toss with the olive oil and garlic. Use your hands to evenly coat. Spread the potatoes evenly over the entire pan. Season with a little salt and black pepper. Bake uncovered in the center of the oven until tender crisp and golden brown, about 20-25 minutes on each side. Baking time will vary depending on how thick your pieces are and your oven. Set your timer for 20 minutes and check.
  • Remove from oven and sprinkle all over with Parmesan cheese and a little garlic powder. Add a little more salt and pepper, if desired.

5 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
  • Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
  • When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

Steps:

  • Preheat oven to 400°F (200˚C).

2 -4 sweet potatoes or 2 -4 yams
1 -2 tablespoon olive oil
1 -2 tablespoon garlic granules (to taste)
1/4 cup parmesan cheese (to taste)
2 pinches sea salt (to taste)

Steps:

  • Preheat oven to 450
  • Cut up sweet potatoes into wedges,rounds or thin strips.
  • In a large bowl add the fries. Coat them with oil. You may substitute just water if desired. Then add the garlic granules,parmesan and sea salt.
  • Spay a cookie sheet with pam or oil and lay fries out on top.
  • Bake for 10 mins then turn them over. Put back in the oven for 10 more minutes. If you have thicker fries you may need an additional 5-10 minutes baking time.
