These baked garlic herb polenta squares are such a simple and incredible side! They get crispy on the outside and are so creamy in the middle.

- Get out a medium saucepan and an 8 x 8 baking dish. Spray the baking dish with the cooking spray. Then combine the milk, chicken stock, roasted garlic and the herbs in the saucepan and bring it to a gentle boil over medium high heat. Whisk it a few times to stir it all together. Then slowly pour in the polenta while you continue to whisk. Keep whisking while the polenta cooks for about 3 minutes. Once it is cooked, remove the pot from the heat and stir in the sauce and asiago.
- Spread the mixture into a packed, even layer in the baking pan and refrigerate it uncovered for 30 minutes. This will make it firm and set for baking. When the 30 minutes is almost up, pre-heat the oven to 400 and line a baking sheet with foil. Spray the foil with more cooking spray. Take out the chilled tray of polenta and cut it into 12 squares. Remove them from the pan and transfer them to the baking sheet. Bake them for 20-25 minutes until they become slightly crisp on the outside and creamy on the inside. Serve immediately with marinara or ketchup for dipping!

- Get a medium saucepan and an 8 x 8 baking dish. Spray the baking dish with the Olive Oil Cooking Spray (as needed).
- Then combine the Milk (2 cup), Chicken Stock (2 cup), Garlic (3 clove), Dried Parsley (1/2 teaspoon), Dried Tarragon (1/2 teaspoon), Salt (1 pinch), and Dried Thyme (1/2 teaspoon) in the saucepan and bring the mixture to a gentle boil over medium high heat. Whisk it a few times to stir it all together.
- Then slowly pour in the Polenta (1 cup) while you continue to whisk. Keep whisking while the polenta cooks for about 3 minutes. Once it is cooked, remove the pot from the heat and stir in the sauce and Asiago Cheese (1/4 cup).

- Bring water and salt to boil in large saucepan. While whisking water in circular motion, pour in cornmeal in a slow steady stream, keeping the water boiling as you do so. Reduce heat to low and continue to cook, stirring constantly, until mixture is thick, from 5 to 15 minutes depending on kind of cornmeal used. Add cream, Parmesan and herbs. Pour into greased pan. Cool and refrigerate, covered. Preheat oven to 400 degrees F. Cut polenta into slices and brush with oil. Place on cookie sheet and bake for 10 to 15 minutes or until heated through.
ROASTED GARLIC POLENTA

- In a heavy bottom pot, bring 5 cups of water and sea salt to a boil. Mix together the remaining 3 1/2 cups of water and corn grits in a bowl. When the pot of water comes to a boil, add the cornmeal mixture and stir quickly and continuously until the entire mixture is well blended. Add the roasted garlic paste. Reduce the heat so that the polenta is at a low simmer, stirring frequently. Continue to do so until the polenta pulls away from the pot (about 35 minutes). Pour the polenta into a baking sheet to cool. Cut into desired shape (squares for the Napoleon) and pan fry in olive oil until golden in color.
- To build the Polenta Napoleon:
- Place a bed of smoky greens on the plate and top with a polenta square. Top the square with a ladle of rosemary-scented white beans. Top the beans with another polenta square. Decorate the plate with roasted carrot sauce.
EASY OVEN-BAKED REAL POLENTA (NOT INSTANT)

- Bring 7 cups water to a boil in a large saucepan; add 4 teaspoons salt. Whisking constantly, add cornmeal a little at a time. Reduce heat to medium-low; cook, stirring frequently with a wooden spoon, until polenta pulls away from sides of pan and is very thick, about 25 minutes.
- Heat oil in a medium skillet over medium-low heat until hot but not smoking. Add prosciutto and garlic. Cook, stirring, until prosciutto is slightly crisp, about 5 minutes; stir into polenta. Season with salt and pepper, if desired.
- Pour polenta mixture into a 9-by-13-inch baking pan; smooth with a dampened spatula. Let cool at least 1 hour.
- If not serving polenta immediately, cover with plastic wrap, and refrigerate until ready to use (or overnight).
- Trim 1/4 inch from all sides of polenta. Cut polenta into 48 squares. Preheat broiler with rack 5 inches from heat. Lightly brush a metal baking pan with oil; heat under broiler 30 seconds. In batches, broil squares in pan, 2 minutes. Place cheese on each square; season with pepper. Broil until cheese is melted, about 1 1/2 minutes. Garnish with herb sprigs.

- Heat oven to 425°F. Cut potatoes into medium-size chunks (about 8 pieces per half-potato). Place potatoes in 2-quart saucepan of salted water. Heat to boiling. Reduce heat to medium-high; simmer 10 minutes or until potatoes are fork-tender.

- Bring 4 cups of water to a boil. Whisk in the polenta. Once it begins to thicken, reduce heat to a simmer and cook for 45 minutes until creamy and thick, stirring occasionally to prevent sticking. Stir in the Parmesan and a 1/4 teaspoon of salt. Stir until melted and cheese is no longer visible. Remove from heat.
- Line an 8x11 inch baking dish with Reynolds Wrap® Aluminum Foil and carefully pour the polenta into the baking dish, using a spatula to smooth it to an even thickness, about 3/4 inch. Cover and refrigerate for at least two hours and up to two days until firm.
- While the polenta chills, make your ragu. In a large heavy skillet, heat the olive oil over medium heat until shimmering. Add the onion and garlic and saute until fragrant and translucent, about 5 minutes. Stir often to prevent browning. Add mushrooms and thyme and cook over medium-high heat until the mushrooms start to release their liquid. Add 1/2 teaspoon of salt and continue to cook another 5 minutes until they begin to soften more.
- Add flour, stirring, until it is no longer visible, about 1 minute. Add in the wine, cream and sugar, and bring the mixture to a simmer. Taste and adjust salt if desired. Simmer until thick and creamy and the mushrooms are nicely coated, about 15 minutes. Finish with a squeeze of fresh lemon juice and 1/2 cup minced parsley. Set aside and cover to keep warm.
- Slice your polenta into squares -- whatever size you desire. Wipe down your skillet, coat it with nonstick cooking spray, and heat it over medium-high. Fry the squares in the pan until golden brown and warmed through. To serve, top the squares with warm mushroom ragu.

HERB POLENTA BAKED IN PROSCIUTTO

- Cook polenta according to the directions on the packet.
- When it's almost cooked stir in the parsley, parmesan, butter and garlic.
- Pour polenta into a greased 18x28cm cake tin.
- Smooth the surface and cool for an hour until firm.
- Turn the polenta out and cut into 20 bite sized cubes.
- Wrap each cube in a slice of prosciutto.
- Thread 2 pieces onto each skewer and place them on a baking paper lined tray.
- Bake in a 190°C oven for 10-20 minutes.
- The prosciutto will become crisp and golden.
- Serve hot.
- These can be made a couple of hours ahead and refrigerated until you're ready to bake.
- Make sure you soak the sticks well to prevent burning.
- Another way to serve this is to place the wrapped cubes singly on the baking tray, bake, and stab each one with a toothpick to serve.
