This is a great recipe for a night when you're feeling lazy - only a few ingredients, nothing to chop, easy cleanup, and very yummy! My husband announced the fish was 'excellent,' and he's not usually one to rave about food.

4 flounder fillets
salt and ground black pepper to taste
¼ cup butter, melted
3 tablespoons white wine
3 tablespoons seasoned bread crumbs
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
  • Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.
  • Bake in the preheated oven until flounder flakes easily with a fork, 25 to 30 minutes.

6 plum tomatoes, halved lengthwise
2 tablespoons olive oil, plus more for one of the baking sheets
3/4 teaspoon dried tarragon
1 pinch sugar
Coarse salt and ground pepper
1/3 cup mayonnaise
1 tablespoon fresh lemon juice
3 slices white sandwich bread (about 1 ounce each), torn into large pieces
4 flounder fillets (1 1/2 pounds total)
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 450, with racks in upper and lower thirds. Place tomatoes on a rimmed baking sheet. Sprinkle with 1 tablespoon oil, 1/4 teaspoon tarragon, sugar, salt, and pepper; toss to coat. Arrange tomatoes cut side up. Roast on lower rack until tender, 20 to 25 minutes. (Keep oven on for fish.)
  • Meanwhile, make sauce: In a small bowl, whisk together mayonnaise, remaining 1/2 teaspoon tarragon, and lemon juice; season with salt and pepper. Set aside.
  • Line a rimmed baking sheet with aluminum foil and brush with oil. In a food processor, place bread, a pinch each salt and pepper, and remaining tablespoon oil; pulse until fine crumbs form.
  • Lay fillets flat on prepared baking sheet; season with salt and pepper. Spread top sides with mustard; sprinkle with bread crumbs, pressing to adhere. Bake on upper rack until fish is cooked through and crumbs are browned, 6 to 8 minutes. Serve with tomatoes and sauce.

1/2 teaspoon kosher salt, plus extra for the sweat and for seasoning fillets
1 clove garlic, minced
1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.
  • Place the heavy cream and wine into a saucepan over medium heat. Once the mixture begins to simmer, gradually add the cheese and stir until melted. Set aside and keep warm.
  • If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place the rice into a 2 1/2-quart casserole dish and spread evenly. Place each roll on top of the rice, seam side down. Pour over the cheese sauce and place in the oven for 25 minutes. Allow to cool for 5 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F. Place the flounder fillets on a sheet of aluminum foil. Top the fillets with the sliced onion and minced garlic. Combine the lemon juice, melted butter, Worcestershire sauce, salt, and pepper until smooth. Evenly drizzle the sauce over the fish. Dot the fish with small bits of butter and sprinkle with the fresh parsley. Pull up the sides of the aluminum foil and wrap over the fish and seal the edges. Place the foil packet on a baking sheet with rimmed sides and place in the oven. Bake at 350 degrees F for 15-20 minutes or until the fish flakes easily (open one corner of the packet to test). Remove the fish from the oven and serve hot.

In a bowl 1/4 cup olive oil or melt 1/2 stick of butter and add 1 tablespoon garlic powder or chopped garlic, salt, pepper, juice from 1/2 of a lemon and dried parsley flakes. Here's where you get to do it your own way. With the basic oil or butter then you can add lots of different things to your liking. Paprika, Parmesan cheese, honey, red pepper flakes, balsamic vinegar and on and on. Brush the mixture over the flounder saving some for the veggies.
  • Line a small baking pan with foil and put in some potatoes cut into about 3/4 inch cubes and some frozen broccoli florets or carrots. Brush them with the rest of the butter (or oil) mixture and put everything in the oven at the same time.
  • Seven minutes on bake then three minutes on broil, but, all ovens are different so watch them. When the flounder starts to sizzle around the edges switch from bake to broil and then as soon as they start to get the slightest brown on top take them out. The veggies will keep up with the fish so it all should be ready to go.
  • You are the chef! A nice dry white wine would go along good with your Oven Baked Flounder. Gammy likes Pinot Grigio so thats what we have (surprised?) And since the oven is on, some of poppop's easy homemade bread wouldn't slow things down.
