Steps:
- Preheat oven to 350 degrees.
- In a small bowl, add the dried cranberries to the milk and set aside. In a mixing bowl, beat together the butter and sugar until light and fluffy, around 2 minutes. Beat in the eggs and vanilla until fully incorporated, then add the milk and cranberries and mix thoroughly.
- Whisk the dry ingredients together in a medium bowl, then add to the wet ingredients and beat a few times until incorporated.
- Pour into three mini loaf pans sprayed with cooking spray and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
CRANBERRY OAT BREAD
This is a wonderful, moist bread, made in a bread machine. This is a one-and-a-half pound bread recipe. Instead of a cup, I throw in a whole bag of cranberries.

- Preheat oven to 350 degrees farenheit. Grease and flour two 8x4" loaf pans and set aside.
- In medium bowl, combine oats and hot water. Stir, and let stand for 5 minutes.
- In large bowl, beat butter and brown sugar until fluffy.
- Add oat mixture, sour cream, orange peel, and egg. Blend well.
- Add flour, baking powder, baking soda, salt, and 1-1/2 teaspoons cinnamon. Mix gently.
- Fold in cranberries and walnuts. Spoon batter into prepared pans and smooth to level.
- In small bowl combine 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over batter.
- Bake at 350 degrees farenheit for 55 to 65 minutes until bread is golden brown and pulls away from the sides of the pan.
- Cool 5 minutes, then carefully run a knife around the edges of the bread and remove to wire rack to cool.
- Wrap in plastic wrap to store.

- Preheat oven to 350°F.
- In large bowl, combine oats, brown sugar, cinnamon and salt. Add dried cranberries and chopped pecans.
- In small bowl, whisk together the milk, egg, vanilla and orange zest. Add the milk mixture to the oat mixture and stir until combined.
- Pour into 4-6 small souffle or brulee dishes or one larger baking dish (such as an 8x8-inch dish). (You may want to lightly spray baking dish with cooking spray.).
- Bake 20-30 minutes (small baking dishes) or 30-40 minutes (large baking dish), or until slightly firm to touch. (Baking time will vary depending on the diameter of your baking dishes.).

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Combine the flour, sugar, salt, baking powder, and baking soda. Add the cranberries and walnuts, and stir to coat with flour. Mix together the egg, oil, orange juice, and orange zest. Pour the egg mixture into the flour mixture, and stir until just blended. Spoon the batter into the prepared pan.

- Coat a 9 in square pan with nonstick spray.
- In a large saucepan, bring the milk, brown sugar, margarine, and cinnamon to a boil.
- Meanwhile, in a large mixing bowl, mix together the oats, chopped apple, cranberries, and nuts; spread evenly into the prepared pan.
- When the milk mixture begins to boil, pour out evenly over the oatmeal mixture.

- Preheat oven to 375°F and set an oven rack to the middle position. Spray a 9 x 5-inch loaf pan with non-stick cooking spray.
