BAKED COD RECIPE WITH LEMON AND GARLIC

Baked Cod Recipe with Lemon and Garlic image

Best baked cod recipe out there! Prepared Mediterranean style with a few spices and a mixture of lemon juice, olive oil and lots of garlic. Bakes in 15 mins!

Provided by Suzy Karadsheh

Categories     Entree

Time 22m

Number Of Ingredients 12

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

BAKED COD WITH OLIVES

Baked Cod with Olives image

The olive topping on our cod was inspired by tapenade; it includes olives, anchovies, capers, olive oil, and lemon juice. Use a ceramic or glass baking dish; an aluminum dish could react with the acidic lemon juice and discolor the fish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 35m

Number Of Ingredients 10

Unsalted butter, for baking dish
1/2 cup pitted brine-cured Kalamata olives, drained and chopped

Cod fillets cook gently with a crunchy panko topping made with Ritz crackers, grated Parmesan, garlic, and fresh herbs. Ideal for Feast of the Seven Fishes.

Provided by Ari Laing

Categories     Dinner

Time 30m

Number Of Ingredients 11

4 Norwegian cod fillets (about 2 - 2 ½ lbs )
4 Tbsp extra virgin olive oil (divided)
1 ½ tsp Kosher salt
¼ tsp freshly ground black pepper
½ cup panko breadrumbs
½ cup Ritz cracker crumbs (about 12 crackers, finely ground)
3 Tbsp fresh parsley (finely chopped, plus more for serving)
2 Tbsp Parmigiano Reggiano (grated)
3 large garlic cloves (finely chopped, about 2 Tbsp)
1 tsp lemon zest (about 1 lemon (cut the lemon into wedges for serving))
2 Tbsp unsalted butter (melted)

Steps:

  • Prepare the cod fillets. Preheat oven to 350 F. Cut cod fillets into 2" pieces. Coat the bottom of a 9x13 baking dish with 2 Tbsp extra virgin olive oil. Place the cod on top (it's okay if it overlaps), then season with 1 ½ tsp Kosher salt and ¼ tsp freshly ground black pepper.
  • Make the breadcrumb topping. In a large mixing bowl, combine ½ cup panko, ½ cup Ritz cracker crumbs, 3 Tbsp chopped parsley, 2 Tbsp grated Parmesan, chopped garlic, and lemon zest. Stir with a fork to combine, then drizzle on 2 Tbsp melted butter. Mix until well incorporated.
  • Bake the cod. Sprinkle the breadcrumb mixture evenly on top of the cod pieces. Drizzle with remaining 2 Tbsp extra virgin olive oil, then bake for 12-15 minutes (if fish was in a single layer) or 15-18 minutes (if fish was overlapping a bit). Cod is fully cooked when an internal temperature of 145 F has been reached.
  • Garnish, then serve. Serve baked cod with additional parsley, if desired, and lemon wedges.

  • Heat 2 tablespoons olive oil over medium heat in an oven-proof skillet, cast iron skillet or dutch oven. Add fennel and saute 5-7 minutes, stirring, cooking until just tender. Add leeks and garlic and continue cooking, stirring until leeks are golden and tender. Add preserved lemon ( or lemon zest), fresh thyme, broth and white wine. Stir in salt and pepper, simmer on medium low heat until liquid has reduced by half, and fennel is nice and tender, about 5 minutes.
  • If fennel needs a bit longer, add another splash of broth and cover pan for a few minutes, letting it steam and get tender. Once fennel is tender, add asparagus, give a stir and cook for 2 more minutes- until asparagus turns bright green. If mixture seems dry, add another splash of broth- you want this slightly wet ( ¼- ½ inch liquid in the bottom of the pan).
