BAKED SALSA CHICKEN BREAST

Steps:

• Place chicken breast in a 2 quart baking dish that has been sprayed with cooking spray.
• Combine the salsa, brown sugar, vinegar and mustard in a bowl; pour over chicken Bake at 400 for 30 minutes.
• Serve with rice or buttered noodles.

SALSA CHICKEN BAKE

Steps:

• Cover bottom of an 8 inch square baking dish or casserole with 1/2 cup salsa.
• Place chicken, bone side up, on top of salsa.
• Pour remaining 1/2 cup salsa over chicken.
• Bake, uncovered, at 375F for 30 minutes.
• Turn chicken over and bake another 25 to 30 minutes, basting occasionally.

CRISPY BAKED CHICKEN WITH TROPICAL SALSA

Steps:

• Mix first 8 ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors. This is your Tropical Fruit Salsa.
• Heat oven to 425 degrees. Melt butter in a rectangular baking pan, 13 x 9 x 2 inches, in oven.
• Mix Bisquick, cornmeal, chili powder and salt. Dip chicken breasts into egg, then coat with Bisquick mixture. Place in pan.
• Bake uncovered 10 minutes; turn chicken breasts. Bake about 15 minutes longer or until done. Serve with salsa.

BAKED SALSA CHICKEN

Steps:

• Preheat oven to 400°F.
• Chop tomatoes, onion, garlic, avocado, cilantro and chives.
• In a prep bowl mix chopped veggies with lime juice. Salt and pepper to taste; set aside.
• Grease 13x9-inch glass baking dish with olive oil or butter.
• Evenly lay uncooked rice in bottom of baking dish.
• Place chicken breast on top of rice.
• Pour chicken stock over chicken and rice.
• Spoon salsa mixture on top of chicken.
• Cover with aluminum foil.
• Place in oven and bake for 1 hour.
