SHEET PAN ROAST CHICKEN & CABBAGE

Inspired by the flavors in this baked tofu and coconut kale, this sheet pan supper comes together quickly. Staggering the entry and exit of the chicken and cabbage allows each to cook fully and brown nicely.

1 teaspoon neutral oil, for greasing
1 tablespoon sesame oil
1/4 cup melted coconut oil or olive oil
3 tablespoons soy sauce
1 tablespoon rice vinegar (or other)
1 tablespoon Sriracha, optional
8 pieces bone-in, skin-on chicken thighs or drumsticks
1 pinch kosher salt and pepper to taste
1 head cabbage, 2 to 3 lbs.

Steps:

  • Preheat the oven to 425ºF. Pour a teaspoon of neutral oil over a rimmed sheet pan. Rub to coat.
  • In a small bowl, stir together the sesame oil, coconut oil, soy sauce, rice vinegar, and sriracha, if using. Place chicken in a large bowl. Season all over with salt and pepper. Pour 1/4 cup of the prepared mixture over the chicken and let marinate while the oven preheats. (Chicken can marinate longer, too, but try, if time permits, to bring it to room temperature before cooking-the coconut oil will solidify in the fridge and look clumpy, which is fine.)
  • Cut the cabbage in half through the core. Cut again through each core and repeat this process until you are left with many wedges, no greater than 1-inch wide. Place the wedges in a large bowl, season all over with salt and pepper, and toss with the remaining dressing.
  • Place chicken on prepared sheet pan spreading it out evenly. Roast for 10 minutes. Remove pan from oven, and nestle cabbage wedges all around the pieces, tucking it under if necessary-it will feel like a lot of cabbage. Roast for 20 to 25 minutes more or until chicken is golden and cooked through. Remove pan from oven, transfer chicken to a platter to rest. Return cabbage to the oven to roast for 10 to 15 minutes more, or until juices have reduced and edges of cabbage wedges are caramelized.

3 tbsp olive oil
1 1/2 lb boneless chicken thighs, cut into small pieces
1 medium cabbage
2 medium carrots (shredded)
1 tbsp paprika
2 tbsp. tomato paste
1 cup chicken stock
salt, pepper
1 tbsp. hot sauce (optional)
chopped fresh parsley to garnish

Steps:

  • Warm up a large sauté pan over medium-high heat. Add the olive oil and chicken. Fry for 5-7 minutes or until browned.
  • Meanwhile, slice the cabbage into thin strips, just like you would for coleslaw.
  • Add the paprika and tomato paste to the chicken. Stir, and then sauté for another five minutes.
  • Add the cabbage and cook for five more minutes.
  • Add the shredded carrots, chicken stock, salt, and pepper. Stir everything together. Cook without the lid, stirring occasionally, for about 40 minutes, until there is no liquid remaining.
  • Add 1 tablespoon of hot sauce, if desired. Garnish with fresh parsley.

1 lb chicken breast (cut in cubes)
1 teaspoon paprika
1 teaspoon dried oregano

1 tbsp olive oil
1 cup red onion (chopped)

1 small cabbage or ½ cabbage large (sliced)
1 teaspoon garlic powder
1/2 tsp paprika

1/3 cup tomato sauce

Steps:

  • In a large pot or Dutch oven, add olive oil and heat over medium high heat for 1 minute. Add the chicken and sprinkle with paprika, oregano, salt and black pepper. Cook for about 5-7 minutes, or until chicken is fully cooked. Set it aside.
  • Add mushroom and cook for 3 minutes and using a wooden spoon scrape off any brown bits that may be stuck to the bottom of your skillet. Set aside.
  • In the same pot, add 1 tablespoon of olive oil, onions and bell pepper. Sauté for 3-5 minutes, or until it gets brown.
  • Add the cabbage, garlic powder, paprika, salt and black pepper and chicken broth. Mix everything together. Reduce heat to medium low and cover with a lid. Cook for about 10-15 minutes, stirring occasionally.
  • Add tomato sauce to the pan. Return chicken to the pan and mix all together to combine. Cook for 2 more minutes. Garnish with fresh chopped parsley. Serve immediately.

4 slices bacon
1 tablespoon bacon drippings
¼ cup all-purpose flour
½ teaspoon kosher salt

½ cup red wine vinegar
¼ cup dry red wine

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large oven-safe or cast-iron skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble bacon; leave bacon drippings in the skillet.
  • Whisk flour, kosher salt, and smoked paprika together in a bowl. Coat chicken thighs in the seasoned flour and brown on both sides in the hot bacon fat over medium heat, about 5 minutes per side; transfer chicken to a plate. Drain bacon grease except for 1 tablespoon; cook and stir onion and apple until onion is translucent and apple is softened, about 5 minutes. 1/4 cup canola oil
1/2 cup all-purpose flour
1 tablespoon seasoning salt (I use McCormick with garlic)
8 skinless chicken drumsticks (or use 4 drumsticks and 4 thighs)
1 medium onion, chopped
4 tablespoons green bell peppers, chopped
4 tablespoons carrots, chopped
1/4 cup ketchup
1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 teaspoon dried oregano, crushed
1/2 teaspoon salt
4 cups cabbage, shredded
1/2 cup mozzarella cheese, shredded

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Mix flour and seasoned salt in a zip lock plastic bag.
  • Add chicken drumsticks, two at a time into the bag. Lock and shake bag to coat chicken well.
  • Add coated chicken to skillet. Cook, turning occasionally until browned.
  • Place chicken in a medium baking dish prepared with oil spray and heat oven to 350ºF.
  • Add chopped onion, green bell pepper and carrot to skillet. Cook until cripsy tender for about 5 minutes.
  • Mix ketchup with undrained tomatoes, oregano, and salt. Bring to a boil.
  • Add cabbage with vegetables and tomato sauce and mix well. Spoon over chicken.

  • NOTE: I made this recipe again, adding 4 tablespoons of chopped green peppers and carrots (instead of 2 tablespoons). Reduced the salt to 1/2 teaspoon and Mozzarella cheese to 1/2 cup. Thanks to the reviewers for their good suggestions.

Chicken roasted on a sheet pan develops gloriously crispy skin thanks to the increased hot airflow from the oven that passes over it. The extra space on the pan holds cabbage and onions, which roast around the chicken and soak up its juices while caramelizing. Fennel seeds, which are often found in sausage, lend their wonderful anise flavor to the dry brine on the bird and to the schmaltzy vegetables. If you can, dry-brine the chicken overnight for the most flavor and juiciness. Be sure to save the carcass to turn into stock later.

2 teaspoons fennel seeds
1 tablespoon packed dark brown sugar
1 whole (3- to 4-pound) chicken
2 1/2 pounds green cabbage (about 1 large head), cored and cut into 1-inch pieces
1 large yellow onion, halved and thinly sliced
5 tablespoons olive oil
1 tablespoon sherry vinegar

Steps:

  • In a small dish, stir together 1 1/2 tablespoons Diamond Crystal kosher salt or 1 tablespoon Morton's coarse kosher salt, 1 teaspoon black pepper, 1 teaspoon fennel seeds and the brown sugar.
  • Place the chicken on a large plate or sheet pan and, with a paper towel, pat the surface of the chicken as dry as you can. Remove any giblets from the cavity and reserve for another time. Sprinkle a third of the spice mixture into the cavity of the chicken, focusing especially on the underside of the breasts. Use your hands to really rub the spices into the cavity. Now, sprinkle the rest of the spice mixture all over the surface of the chicken, including the bottom but especially the top, where the breasts are, and again, really rub it into the skin. If roasting right away, let the chicken sit at room temperature for at least 1 hour. Alternatively, you can place the chicken, uncovered, in the refrigerator to dry-brine for up to 24 hours; just be sure to let it sit out at room temperature for at least 1 hour before roasting.
  • While the chicken is coming to room temperature, position a rack on the bottom third of the oven and heat the oven to 425 degrees. On a large sheet pan, add the cabbage, onion, 4 tablespoons olive oil and the remaining 1 teaspoon fennel seeds. Season generously with salt and pepper, and toss until evenly combined. Push the cabbage and onions to the edges of the pan to make room for the chicken, and place the chicken in the center of the pan, breast side up; the chicken should have direct contact with the pan and not be sitting over any of the vegetables. Massage the remaining 1 tablespoon olive oil onto the chicken and give it a final generous sprinkling of salt and pepper (going lighter on the seasoning the longer the chicken has been dry-brined).
  • Roast the chicken, rotating the pan halfway through, until the skin is golden brown and crispy, and the thigh meat reaches 160 degrees on an instant-read thermometer (it will continue to cook as it rests), 40 to 55 minutes or 13 minutes per pound. Do not cut into it to check that the juices run clear. The cabbage and onions should be soft and slightly charred in spots.
  • Let the chicken rest for at least 15 minutes on the pan before transferring to a cutting board and carving into portions. Don't forget to turn the carcass over and eat the two "oysters" on the bottom of the chicken where the back of the thighs meet the spine. It's arguably the best part of the roast chicken experience, and the chef's treat.
  • Add the vinegar to the cabbage and onions, toss until evenly distributed and taste for seasoning, adjusting with salt and pepper. Serve alongside the chicken.

6 ounces slab bacon, diced
3 1/2-pound frying chicken, cut in eight pieces
1 cup chopped onion
2 cloves garlic, crushed
1 tablespoon white wine vinegar
6 cups chopped cabbage
1 cup dry white wine
1/2 teaspoon thyme
Freshly ground black pepper
1 tablespoon soft butter

Steps:

  • Fry bacon until golden in a heavy three-quart casserole. Remove bacon from pan and drain on absorbent paper.
  • Dry chicken pieces and brown them well, a few at a time, in the bacon fat in the pan. Remove chicken and set aside. Pour all but one tablespoon of the bacon fat out of the pan.
  • Saute the onion in the one tablespoon of bacon fat over low heat until soft but not brown. Add the garlic and saute a few minutes longer. Add the vinegar and deglaze the pan, scraping up any browned particles. Add the cabbage to the pan, cover and cook over very low heat until the cabbage is wilted, 10 to 15 minutes.
  • Stir in the wine, thyme, pepper and the bacon. Return the chicken to the pan. Cover and simmer over low heat about 35 minutes, until the chicken is done.
  • Arrange the chicken on a serving platter. Arrange the cabbage mixed with bacon alongside or around the chicken, draining it well to leave as much cooking liquid as possible in the pan. Cover to keep warm.
  • Briefly boil down the cooking liquid to thicken it slightly. Off heat, swirl in the butter bit by bit. Spoon some of the sauce over the chicken and the rest over the cabbage before serving.

14 oz of your choice, preferably Guinness stout beer

Steps:

  • Combine the beer, 2½ cups of broth, garlic, bay leaves, and thyme. Set aside.
  • Place the onions at the bottom of the crockpot.
  • On the bed of onions, layer the chicken pieces on top.
  • Distribute the bacon and mushrooms evenly on top of the chicken.
  • Pour the beer mixture over the chicken. Cover and cook over High for 3 to 4 hours, or on Low for 6 to 7 hours
  • Roughly 2 hours before the stew is ready, add the potatoes and carrots.
  • Add your cabbage roughly 1 hour before the stew is ready. Continue cooking.
  • Roughly 15 minutes before it is ready to be served, dissolve the flour in the remaining broth.
  • Temporary remove chicken from the mix and set aside. Add your slurry into the crockpot while stirring.
  • Once the starch has been combined, return the chicken, season to taste with salt and pepper and allow to finish cooking
  • Serve together with potatoes of your choice, or crusty bread.
