- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper and lightly coat with cooking spray or lightly grease an unlined baking sheet. Place the shredded zucchini in a clean kitchen towel and wring out all the excess water over the sink until the zucchini is really dry. Place the zucchini and remaining ingredients in a medium bowl and mix until combined. Drop the mixture by tablespoonfuls on the prepared baking sheet and lightly press the mounds with your hands to flatten slightly. Bake for 16-20 minutes until the edges are golden.
ZUCCHINI BITES
This recipe was sent to me by my mum,who thought that her beloved grandchildren might enjoy them! The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

Steps:
- Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
- Transfer mixture to a bowl to cool.
- Beat the eggs, cream and cheese together; season to taste.
- Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.
- Grease and flour little muffin/bun tins. Spoon mixture into the holes.
- Bake at 180°C/350°F/Gas 4 for 15-20 minutes.

CHEESY ZUCCHINI
My daughter despises zucchini, but my husband and I love it, so this is an easy way for us to get our "fix" and it's the perfect amount for the two of us. If I'm baking something else in the oven, I'll just put this in till the meat or whatever is done, then crank up the broiler and top it off in there. And of course, you can use more cheese or anything else you desire.

- In a large saucepan, bring water, boullion and salt to a boil.
- Add zucchini.
- Cover and boil for 3 to 5 minutes until just tender-crisp; drain well.
- Arrange half of zucchini in the bottom of a 9-inch pie plate; sprinkle with half the cheddar cheese and half the parmesan.
- Layer the remaining zucchini and cheeses.
- Broil for 1 or 2 minutes until cheese melts and bubbles.

I don't remember where this recipe came from, but we've enjoyed it for years. I like to let the cheese get golden brown on top. Can be used as a side dish or appetizer. (cooking time may vary).

- Spread each with a little soft margarine.
- Sprinkle with garlic powder, to taste.

Steps:
- Cut zucchini into 3/4 inches slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact.
- Place zucchini on an ungreased baking sheet; spoon 1/2 teaspoon of crumbled blue cheese into each (I don't like blue cheese so I used Queso Fresco which is Mexican cheese yummy!).
- Combine the Parmesan cheese, basil and pepper; sprinkle half over the blue cheese. Top each with a tomato slice (I cut them in half and put on top).
- Sprinkle with remaining Parmesan mixture. Bake at 400 for 5-7 minutes or until cheese is melted. Serve warm.
