- Lay piece of fish on aluminum foil square Sprinkle fish heavily with paprika (Cover one side) Sprinkle almost as heavy with pepper Sprinkle lightly with salt Lay sliced lemons in a row across each piece of fish (about 1 lemon per 2 pieces of fish) Spoon one dollop of margarine on each side of fish Wrap tightly in aluminum foil Bake at 375 degrees for 30 minutes (OPTIONAL: Place on grill)
CATFISH BAKED LEMON DILL CATFISH
I have this a few times a year, you can do it on the grill,skillet or in the oven.The lemon and dill add a wonderful taste to the farm raised catfish.

- 1.Stir together mayonnaise, buttermilk, lemon rind, lemon juice, dill, and garlic in a small bowl.
- 2.Place half of mayonnaise mixture in another small bowl to serve with fish; cover and chill until ready to serve.
- 3.Rinse fillets, and pat dry with paper towels. Brush the catfish fillets evenly with remaining half of mayonnaise mixture; sprinkle evenly with salt and pepper.
- 4.Dredge fillets in breadcrumbs. Arrange fillets on a lightly greased rack in an aluminum foil-lined broiler pan.
- 5.Bake at 425°F (220°C) or until fish flakes with a fork and is opaque throughout,about 15 minutes to 20 minutes,no longer.
- 6.Serve the baked catfish fillets immediately with chilled mayonnaise mixture.

BAKED CATFISH FILLETS
These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

- Preheat oven to 425 degrees.
- Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
- Spray a glass baking dish with Pam or olive oil.
- Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
- Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
- Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
- Bake at 425 for 10 to 12 minutes per side.
- Serve with lemon wedges for garnish.

OVEN-BAKED LEMON CATFISH
You can use about 1 tablespoon fresh dill in place of the dried if desired. I add in about 3 tablespoons grated Parmesan cheese to the breadcrumb mixture but that is optional. This is also good with other meaty fish fillets too! Double the recipe for more than 4 fillets.

- Set oven to 425 degrees.
- Line a baking sheet with foil then spray foil with nonstick cooking spray.
- In a bowl mix the fine dry breadcrumbs with seasoned salt black pepper and cayenne.
- In a bowl combine the mayo, buttermilk, lemon rind, lemon juice, dill and garlic until well combined.
- Brush the fillets on both sides with the mayo mixture.
- Coat evenly with the breadcrumb mixture.
- Place the fillets into prepared baking sheet.
- Sprinkle with more seasoned salt and black pepper if desired.
- Bake for about 20-22 minutes or until the fish flakes with a fork.

SPICY OVEN-BAKED CATFISH
The egg whites keep the moisture in the fish, I strongly suggest to serve this with creamy lemon sauce (recipe below) it is what makes this extra special and the sauce takes only minutes to make, it can be made up to 1 day ahead if desired, using low-fat sour cream for the sauce will reduce the some of the fat content, using fat-free sour cream it will make it almost totally fat-free, although I have never used fat-free sour cream I cannot say it will be okay, you can of coarse use full-fat sour cream if you wish! Adjust the cayenne pepper to taste.

- For the fish; wash the fish fillets under cold water, then pat dry with paper towels.
- In a shallow bowl mix together the dry breadcrumbs with seasoned salt, black pepper, garlic powder and cayenne pepper.
- In a bowl whisk or beat egg whites until foamy.
- Dip the fillets into egg whites, then dredge in the breadcrumb mixture.
- Place the fillets in one layer onto a well-greased wire rack that is set on a large baking sheet.
- Bake at 400 degrees for 20 minutes or until fish is golden brown (do not overbake).
- LEMON CREAM SAUCE; in a bowl mix together one 8-ounce container of sour cream (low-fat is okay) 1-2 tablespoons fresh chopped parsley, 1/2 teaspoon grated lemon rind, 2-3 tablespoons lemon juice and salt and pepper to taste.
- Cover and chill until ready to serve.

- Place the fish fillets in a large bowl and drizzle olive oil over them, let stand for 30 minutes.
- Combine spices in a 9-inch pie plate.
- Heat a cast iron skillet upside down over high heat for 5 to 10 minutes or until very hot.
- Turn on vent fan during cooking to eliminate smoke.
- Using a hot pad, turn pan right side up.
- Remove fish fillets from oil and drain.
- Dip each fillet into seasonings and coat each side evenly.
- Put fillets in hot skillet and cook 2 to 3 minutes per side, turning only once.

- Put the catfish on the prepared rack. Lightly spray the fish with nonstick spray and sprinkle with 1/4 teaspoon black pepper. - In a large resealable plastic bag, combine the lemon juice, butter and Worcestershire sauce. Add the fish; seal bag and turn to coat.
