CAJUN DRY RUB CHICKEN WINGS

- Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil and baking rack over top.
- In a small bowl, combine the dried seasoning; stir.
- Rinse and pat chicken pieces dry. Place the wings in a large bowl and drizzle with oil, tossing each piece so that they all get coated.
- Sprinkle rub over chicken and rub the seasoning into each piece. Arrange wings on the prepared baking sheet. Bake wings for 30 minutes, turn and bake an additional 10-15 minutes.

- Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius). Line a baking sheet with aluminum foil and place an oven-safe wire rack on top. Coat the rack with cooking spray or brush it lightly with a bit of oil.
- Cajun dry rub: Mix black pepper, white pepper, cayenne pepper, cumin, onion and garlic powder, sweet and smoked paprika, dried oregano and thyme, nutmeg, and salt in a small bowl.
- Cut wings at the joint into wingettes and drumettes if they are not already split at the joint.
- Dry them well with kitchen towels.
- Rub: Place wings in a large bowl. Pour the oil on top and coat the meat pieces with it. Sprinkle with the Cajun seasoning and rub well to coat evenly.
- Bake: Arrange the chicken wings on the wire rack and bake for 20 minutes.
- Flip with tongs and bake for another 20 minutes or until the required internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) is achieved and the wings are crispy.

- Preheat oven to 400 degrees F and grease a large baking tray with olive oil. Set aside.
- In a small bowl, combine all the spices and stir to combine.
- Pat the wings dry and place them in a large bowl. Pour over the dry spice rub and stir, or use your hands, to completely coat the wings.
- Place the wings on the greased baking tray. Don't overlap the wings to ensure even baking.
- Place in your preheated oven and bake for 40 - 45 minutes until cooked through and golden in colour. Flip the wings over at the half way baking mark, around 20 minutes.
- Remove from oven and serve with your favourite dipping sauces

- Mix and store in airtight container.
- To use: put desired meat into a freezer bag. Add generous amount (like 1-2 tablespoons per chicken breast). Rub into meat well. You can then freeze and take out when desired.
AWESOME CAJUN CHICKEN WINGS
If you like spicy wings, you HAVE to give these a try. My husband and I have been making these for years and never has there been any left. We like to grill them and serve w/ celery and blue cheese. My kids even gobble these down!

Steps:
- Rinse chicken and pat dry.
- (if wings are whole, cut off and discard pointed tip and halve wings at the main joint.) In food processor or blender, combine all remaining ingredients, EXCEPT oil.
- Process until well blended.
- With machine on, slowly pour in oil and process until a thick paste forms.
- In a large bowl, combine wings and paste.
- Toss until wings are well coated.
- Cover and refrigerate over night.
- Broil or grill wings until nicely browned outside and cooked through.
- Serve warm or at room temperature.
