BAKED BRIE WITH BROWN SUGAR
UPDATE: After the first review I edited the recipe using less butter. I am one of those cooks who never measures things, so I estimated, and obviously, it was too much butter. The idea is just to brush softened butter over the surface of the brie. I hope this is better! Thanks! This is great party food. A friend gave me this recipe after we all fell in love with it at her party. Enjoy!

BAKED SAVORY BRIE
A wheel of brie, baked in a puff pastry with honey mustard and brown sugar. Decadent. Got it from a friend who created it after having something similar in a restaurant.

Steps:
- Preheat oven to 375.
- Unroll cresent rolls, and split into two sheets of four. Press seams together so that you don't have holes.
- Spread 2 Tbsp of honey mustard on one side of rolls, and sprinkle with 2 tbsp of brown sugar.
- Place Brie, with rind on, in the middle of the rolls with the mixture on the bottom.
- Spread remaining mustard on top and sides of brie, and sprinkle remaining sugar on top.
- Take the other sheet of rolls, and place on top of brie. Press the sides together so that the brie is completely encased.
- Bake for 15-20 minutes, or until the rolls are a nice brown color.
- Serve with crackers, chips, or bread. We prefer triscuit crackers.

BAKED BRIE
Steps:
- Preheat the oven to 400 degrees F.
- Using a warmed sharp knife, or unflavored dental floss (See Cook's Note 1) cut the wheel of brie in half horizontally and separate the top half of the wheel from the bottom half. Sprinkle the bottom half of the brie with the dried cherries, toasted almonds, and brown sugar. Replace the top half of the brie and apply pressure to secure the stuffing. Working on a well-floured surface, roll out the puff pastry so that it will fully cover the brie. Place the brie in the middle of the puff pastry and fold the excess pastry around the wheel. Put the wheel aside. Roll out another piece of puff pastry and cut out a circle the same circumference as the top of the brie. Save the trimmings for decorations. Using a pastry brush, brush the egg on top of the brie in the puff pastry and place the circle on top. Brush the top of the circle with egg. Cut out decorations using cookie cutters or a small knife on top of the brie. Brush the entire top side of the brie with the egg and place the brie on a sheet pan lined with parchment paper. Bake for 20 to 30 minutes or until the pastry begins to turn golden brown, then turn the temperature down to 325 degrees F and bake for another 20 minutes. Serve on a pretty platter. See Cook's Note 2.
- Cook's Note 1: Instead of using a knife to cut the brie, use a piece of unflavored dental floss. Make an initial cut half way down, along the outer side of the brie with a pairing knife. Then, take a long piece of dental floss and wrap it around both hands. Starting at the front of the wheel at the initial cut, work through the wheel with the floss, separating the top half of the wheel from the bottom.
- Cook's Note 2: The brie can be made, wrapped securely and stored in the freezer up to a month ahead of time.
BAKED BRIE WITH PEAR TOPPING
This is a different twist on the standard baked brie. This is still easy and impressive and is ready in 15 minutes.

BRIE WITH BROWN SUGAR AND ALMONDS
This is my signature dish. I adapted if from another recipe. To ensure the rind of the cheese doesn't burst, don't preheat the oven. Put the cheese in a cold oven then set the temperature so that it heats up slowly. When I am carmelizing the topping, I leave the door of my oven slightly open and I don't answer the phone. My favorite way to serve this is with french bread but water wafer crackers are a good choice too. I use a fresh strawberry on top for a garnish.

BAKED BRIE WITH PECANS
Toasted pecans and maple syrup complement the creamy Brie in this hors d'oeuvre. For the best texture, let the cheese cool before topping it with the syrup mixture. This recipe is by Everyday Food reader Kathy Quinn of Montclair, New Jersey.
