1 tablespoon maple syrup
1/4 cup fresh cranberries, sliced in half
2 teaspoons fresh thyme leaves
1/2 teaspoon orange zest

Steps:

  • Preheat oven to 400 degrees
  • Place brie round on a baking sheet lined with parchment paper.
  • Pour the maple syrup over the top of the cheese.
  • Arrange cranberries on top and sprinkle with thyme and orange zest.
  • Place in oven, and bake 15-20 minutes, or until brie is soft and melted when cut.
  • Remove from oven, and carefully transfer to a serving plate.
  • Serve immediately with torn pieces of crusty bread, slices of toasted baguette and/or crackers.

Baked Stuffed Brie with Cranberries & Walnuts image

One of the most common mistakes people make when serving cheese is not letting it come to room temperature first, so that all the flavors can be fully realized. This beautiful baked stuffed brie takes that principle to the next level.

1 small wheel of brie (about 6 to 8 inches), chilled
¼ cup dried cranberries
¼ cup chopped walnuts
1 sheet frozen puff pastry, thawed, plus extra for (optional) design
1 egg, beaten with
1 teaspoon water

Steps:

  • Score the side of a wheel of brie all the way around with a sharp paring knife. Cut directly on the "equator" through the rind. Using a long piece of string or dental floss, wrap the string around the brie on the newly made cut. Loop one end of the string over the other (a half knot). Then pulling the ends of the string in opposite directions, cut the brie in half.
  • Press the dried cranberries on one cut side of the brie, and the walnuts on the other. Quickly put the 2 sides back together with the cranberries on top of the walnuts. Press together and stuff back in any cranberries or walnuts that fell out.
  • Roll out a thawed sheet of puff pastry on a floured surface to about 1/8-inch thickness. Place brie in center of pastry. Gently pull up edges to ensure you have enough dough to entirely wrap the brie. You can trim off the corners if there is too much dough. Brush the dough with the egg wash. Fold one edge of the dough over the brie and then the opposite side. Fold over the remaining edges and complexly encase the brie. You can trim off excess pieces of dough, if necessary. Flip the brie over so the seam is at the bottom; gently press in the sides to snug the dough against the brie. Brush the top and sides of the wrapped brie with egg wash.
  • If you choose to decorate the brie with cut-out shapes of additional puff pastry, use very cold (almost still frozen) dough to ensure sharp lines. Lightly brush the decorative pieces with egg wash. Place the brie in the freezer for one hour (this is a crucial step; see note below).
  • Preheat oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.
  • Place the brie on the prepared baking sheet. Bake on the center rack in preheated oven until it is browned and leaking cheese, about 20 minutes. (Only rarely does the brie not leak through, but 20 to 25 minutes is about how long it takes to melt the cheese and brown the pastry.)

1 medium Brie cheese round (5 to 6 inches)
1/2 cup cranberry juice
1 tablespoon brown sugar
1/2 cup whole dried cranberries
1/2 cup toasted pecans, chopped
2 tablespoons honey
1/4 teaspoon ground cinnamon
One 17-ounce box frozen puff pastry (2 sheets), thawed
1 large egg, lightly beaten
Crackers, for serving

Steps:

  • Put the cheese in the freezer for 10 to 15 minutes to chill.
  • Bring the cranberry juice and brown sugar to a boil in a small saucepan and add the cranberries. Turn off the heat and let the cranberries plump for about 10 minutes. Transfer them with a slotted spoon to a bowl, add the pecans, honey and cinnamon and mix together.
  • Preheat the oven to 350 degrees F.
  • Roll one of the sheets of puff pastry thinner with a rolling pin. Place the cheese on the center of the pastry. Top the cheese with the cranberry-nut mixture. Bring the edges of the pastry to the center and press together; brush the edges with the egg wash so they adhere.
  • Cut three 1-inch-thick strips from the remaining puff pastry sheet. Cross the first 2 strips on top on the cheese so they intersect in the center like a ribbon wrapping a present. Seal the edges with egg wash. Bring the ends of the third strip of puff pastry up and over to create a bow shape, with the ends hanging down. Place in the center of the cheese and secure with egg wash. Brush the remaining pastry with egg wash.
  • Bake until the pastry is light golden brown, tenting it if it begins to brown too much, about 40 minutes. Let rest briefly. Serve with crackers.

One 10- to 12-ounce round Brie
1/2 cup Cranberry Chutney, recipe follows, cooled to room temperature
1 sheet puff pastry (from a 17.3-ounce package), thawed if frozen
All-purpose flour, for dusting
1 large egg, beaten
Serving suggestions: additional Cranberry Chutney, nuts, dried fruit, crackers
One 12-ounce bag fresh or frozen cranberries
1 Granny Smith apple, grated
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch ground cloves
Zest and juice of 1 orange
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Cut the round of Brie in half horizontally, as if splitting a hamburger bun. Lift the top off the Brie and spread the Cranberry Chutney over the bottom half. Replace the top.
  • Lay the sheet of puff pastry on a lightly floured work surface. Roll slightly with a rolling pin until the puff pastry is 3 to 4 inches wider in all directions than the round of Brie. Place the filled Brie in the center of the puff pastry.
  • Trim 1 inch from each corner of the puff pastry and reserve for another use or to decorate the top of the Brie. Fold in the 4 corners of the puff pastry so they meet in the center of the Brie. Lightly brush the dough where the pieces meet with the egg. Fold the remaining edges into the center so that the Brie is tightly wrapped.
  • Flip the Brie onto the prepared baking sheet seam-side down. Decorate the top of the round with the remaining puff pastry, if desired. Refrigerate 1 hour. (The filled, wrapped Brie can be prepared up to 1 day in advance.)
  • Bake until golden brown, about 35 minutes. Cool on the pan at least 10 minutes, then use a large spatula to transfer to a serving platter. Serve with the remaining Cranberry Chutney, nuts, dried fruit and crackers.
  • Combine the cranberries, apple, sugar, cinnamon, ginger, cloves, orange zest and juice and 1/4 cup water in a saucepan and bring to a boil. I found this on a website called kitchn.com, tried it, and it is very good. It makes a great 2nd use of a little of your cranberry sauce. I'm guessing that almost everyone has had baked brie, but this is by far a great way to do it. Guests will enjoy this at any time of day. I love cranberries, and I don't think that they should be bound to just one appearance on the Thanksgiving table. This appetizer highlights the cranberries (and it uses up leftover cranberry sauce, too). It's a great reason to just make a little extra cranberry sauce for Thanksgiving dinner. Enjoy!

1 (8 ounce) can crescent roll dough (or 8 oz. can dough sheet)
1 (8 ounce) round brie cheese
1/4 cup whole berry cranberry sauce
1 egg, beaten
fresh berries (to garnish) (optional)

Steps:

  • Unroll crescent-roll dough onto a clean work surface. Separate dough into 4 rectangles. Press 2 rectangles together to make a square; repeat so you end up with 2 squares.
  • Cut corners from both squares to make rounds, reserving the extra dough. Place 1 dough round on a greased cookie sheet.
  • Slice cheese horizontally into 2 layers. Place bottom half on dough on cookie sheet. Spread with cranberry sauce. Place other half on top. Top with second dough round, pressing and pinching to seal.

1 (about 4 1/2 oz) Granny Smith apple (grated)
1/3 cup packed light or dark brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of ground cloves
Grated zest and juice of 1 orange (preferably organic (about 1 tablespoon zest and 1/4 cup juice))
1/4 cup water
Kosher salt
Freshly ground black pepper
1 whole (8 to 13 oz) round Brie
1/2 cup cranberry chutney
1 sheet puff pastry (half of a 17.3-ounce [490-g] package) (thawed if frozen)
1 1/2 teaspoons Dijon mustard
All-purpose flour (for dusting)
1 large egg (beaten)

Steps:

  • In a medium saucepan over medium-high heat, combine the cranberries, apple, brown sugar, cinnamon, ginger, cloves, orange zest and juice, and water, and bring to a boil.
  • Reduce the heat and simmer until thickened, about 20 minutes. Season to taste with salt and pepper. Let cool completely before using. Extra chutney can be stored in an airtight container in the refrigerator for up to 2 weeks.
  • Cut the round of Brie in half horizontally, as if you were splitting a burger bun. Lift the top off the Brie and spread the cranberry chutney over the bottom half. Replace the top.
  • Place the sheet of puff pastry on a lightly floured work surface. Gently roll the pastry with a rolling pin so the dough becomes a square about 12 inches (30 cm) on each side.
  • Spoon the mustard on the center of the pastry. Using a pastry brush or the back of a spoon, spread it into a thin, even layer slightly larger than the Brie.
  • Place the filled Brie in the center of the puff pastry. Cut a piece about 1-inch (25 mm) from the corners of the pastry so the shape resembles a stop sign.
  • Fold in the four corners of the puff pastry so they meet in the center of the Brie. Lightly brush the dough with a little of the beaten egg where the pieces meet. Reserve the remaining egg. Fold the remaining edges into the center so that the Brie is tightly wrapped and the edges of the pastry are sealed to each other.
  • Loosely wrap the Brie in plastic wrap and refrigerate for at least 1 hour and up to 1 day. Cover and refrigerate the remaining beaten egg as well.
  • Preheat the oven to 400°F (204°C). Line a rimmed baking sheet with parchment paper.
  • When ready to bake the Brie, place it seam side down on the prepared baking sheet. Brush the top and sides of the pastry with some of the remaining beaten egg.
  • Bake until the pastry is golden brown and the cheese is soft, 28 to 35 minutes, depending on the size of your Brie wheel.
  • Let the Brie cool on the pan for at least 10 minutes and then use a large spatula to delicately place it on a platter. Serve immediately, cutting it into wedges.

This is ideal for parties etc and is fairly simple to make. It can be prepared in advance and then baked when needed. I use the cranberry orange sauce from Recipe #274069 which is very easy or you can buy it ready made. For the pastry i use all shortening since it gives a more flaky pastry, if you like a more flavorful pastry you can use half butter.

1 -2 tablespoon cranberry sauce
1 1/2 ounces walnuts
7 2/3 ounces brie round
4 ounces all-purpose flour
4 ounces shortening
1/4 teaspoon salt

Steps:

  • Pastry: Try to keep all ingredients as cold as possible, rub the fats into the flour and salt. until you get a bread crumb consistency.
  • Add just enough iced water to make a dough that comes clean away from the bowl.
  • Roll out on a floured surface to a narrow strip.
  • Fold in three, give a quarter turn so one of the open ends is towards you and roll out again. Repeat three times.
  • Cover pastry and leave to rest in fridge 20-30 minutes. Take care to roll away from you and do not break the air bubbles that will rise.

  • Bring the edges of the pastry together at the top of the brie in the center and pinch together.

Steps:

  • Preheat oven to 400F. Line a quarter sheet baking pan with parchment paper.
  • Place brie on top of the baking sheet and bake for 10 minutes. Remove from oven and let it sit for about 5 minutes before transferring (for easier transfer).
  • Carefully transfer the brie to a serving dish (or transfer it with the parchment paper), and evenly top with cranberry sauce, leaving a 1/2-inch margin around the edges.
  • Alternatively, you can add the cranberry sauce halfway through baking and place the brie back in the oven (for a messier look with the cranberry sauce dripping down the sides).
  • Sprinkle walnuts on top (optional), and serve with crackers, pita bread, breadsticks, and/or fruit.
