2 split chicken breasts (bone-in, skin on chicken breast)
1 ½ tablespoons extra virgin olive oil
1 tablespoon minced garlic
½ teaspoon dried oregano
½ teaspoon dried rosemary
1 medium lemon (divided*)
3/4 teaspoon kosher salt (plus additional for serving)
½ teaspoon ground black pepper
Chopped fresh herbs (such as parsley or thyme, optional for serving)

Steps:

  • Preheat the oven to 350 degrees F. For easy clean up, line a 9x13-inch baking dish with parchment paper.
  • Arrange the chicken in the dish, skin-side up, making sure the pieces do not touch. With paper towels, pat dry.
  • To a small bowl, add the oil, garlic, oregano, and rosemary. Zest the lemon directly into the bowl. Stir to combine.
  • Brush the mixture liberally over the chicken, using it all.
  • Cut the lemon in half. Squeeze half of the lemon over the top of the chicken. Cut the remaining half into 6 wedges, then tuck the wedges around and slightly under the chicken breasts.

Chicken is cooked through when it reaches 165 degrees F when an instant read thermometer inserted into the thickest part of the breast meat (be sure it isn't touching the bone; I typically remove mine around the 155 degrees F mark, then cover it to let the carryover cooking finish the job).
  • If you'd like the chicken more brown, place it under the broiler for 2 minutes to allow it to crisp. Watch carefully to ensure the chicken does not overcook or burn.
  • Remove the chicken to a plate or cutting board and cover with foil. Let rest 5 to 10 minutes. Sprinkle with a bit of additional salt and/or herbs to taste. Enjoy warm.

1 chicken breast half (bone-in, skin-on)
1/2 teaspoon garlic salt
1/2 teaspoon pepper

  • Preheat your oven to 450 degrees (F).
  • Heat a dry pan on the stove. (NO OIL!).
  • Loosen the skin from the meat to create a small pocket.
  • Slip the butter under the skin.
  • Rub the chicken with olive oil, then season with salt, pepper, and thyme.
  • When the pan is hot, place the breast skin side down. Do not touch or move the breast for about three minutes, or until the skin has a nice golden brown crust.
  • Place the breast on a baking sheet and put it into the oven for 15 minutes.
  • After 15 minutes, check with a meat thermometer (160F), poke it with a fork to see if juices run clear, or leave your fork in for 30 seconds and test it on your hand to see if it's hot. If it fulfills any of the 3 above, take it out, let it sit for 5-10 minutes so the juices won't run out when you cut it.
  • optional--use wine to deglaze the pan you used on the stove to make sauce! just pour in wine till the bottom is covered, cook on medium until you can drag a spoon through it and see the bottom for a couple seconds. add salt and pepper to taste.

4 boneless chicken breasts, skin on (6 to 8 ounces each)

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Easy Oven Baked Split Chicken Breasts are a healthy choice for any dinner! These flavorful bone-in baked chicken breasts turn out beautifully with a crispy seasoned skin while retaining their juices for perfect, tender, moist chicken meat!

2.5-3 lbs bone-in skin on split chicken breasts ((brands will vary, but this will typically be 2-4 chicken breasts))
1 Tbsp olive oil ((extra virgin))
1/2 tsp salt
1/4 tsp ground pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika

Steps:

  • Preheat your oven to 400 degrees F (205 degrees C) and line a rimmed baking sheet with parchment paper or aluminum foil (or coat a baking dish with olive oil or non-stick cooking spray).
  • Rinse and pat dry your split chicken breasts. Coat with olive oil, rubbing the olive oil into the skin and breast surface side that will be facing upward during cooking.
  • Place the chicken breasts, skin side up, on your prepared baking sheet. Season each piece of chicken, sprinkling with combined spices: salt, pepper, onion powder, garlic powder, and paprika.
  • *For extra crispy chicken skin, heat a skillet or frying pan to medium high heat. No need to add oil (it's already on your split chicken breasts), place the seasoned chicken breasts skin side down and sear for 3-4 minutes or until nicely golden brown. Then place onto your baking sheet and continue with steps 5 & 6.
  • Bake for 40-45 minutes, or until the internal temperature reaches a minimum of 165 degrees F (74 degrees C) when checked with a meat thermometer. *Check next to the bone at the deepest (thickest) point in the breast meat.
  • Remove the baked chicken from the oven and allow it to sit for 3-5 minutes before being served.

3 -4 bone-in chicken breasts
2 tablespoons light olive oil
4 garlic cloves, sliced thin
1 pinch red pepper flakes
4 tablespoons brown sugar
1 teaspoon sage
1 teaspoon rosemary
1 teaspoon thyme
2 tablespoons flour
1 teaspoon sea salt (or Kosher salt)
3/4 cup Southern Comfort

Steps:

  • Preheat oven to 350 degrees F.
  • In deep, nonstick pan, heat olive oil over medium-high.
  • Brown chicken pieces ( both sides )in hot oil.
  • Place chicken breasts in 9 x 9 inch glass baking dish.
  • Saute garlic in pan until slighly browned.
  • Add pepper, brown sugar, sage, rosemary, thyme and flour to pan and mix/cook for 1 minute over medium.
  • Add Southern Comfort and mix well.
  • Cook over medium heat for 4-5 minutes.
  • Rub salt onto chicken breasts.
  • Pour sauce over chicken.
  • Cover dish tightly with aluminum foil.
  • Bake in oven for 1 hour.
  • Remove from oven and let dish sit ( keep covered) for 10 minutes minimum.
  • Remove cover and slice chicken off bone onto serving deep dish.
  • Spoon sauce over chicken and serve over rice.

3/4 cup honey
1/4 cup soy sauce
1/4 cup olive oil
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • In a small bowl, mix together honey, soy sauce, olive oil, garlic powder and pepper. Stir. Refrigerate for one hour or the day before for easy preparation for busy parents!
  • Preheat oven to 375 degrees F. Lightly grease a 9 x 13-inch pan with non-stick cooking spray or cover with foil.
  • Rinse chicken, pat dry and place in prepared pan.
  • Pour marinade over chicken.

1 tbsp olive oil (, just enough to coat chicken)
1 teaspoon crushed dried rosemary
1 teaspoon Dried Parsley
1/2 teaspoon salt (, more or less to taste)
1/4 teaspoon ground black pepper (, more or less to taste)
1/2 teaspoon Paprika (regular, hot, or smoked all work well)

Steps:

  • Preheat the Oven. Heat oven to 425 degrees F. Line a baking pan with parchment paper or aluminum foil and set aside.
  • Prepare the Chicken. Rub chicken with a small amount of olive oil and then lightly season with herbs and spices. Place chicken breast on the pan skin-side up.
  • Bake the Chicken. Place pan in the oven and roast 40-50 minutes or until the juices run clear and the internal temperature is 165 degrees F.
