This combines Recipe #187790 and Recipe #29709, with tweaks (like doubling the bacon). Made for July 4th party. It tastes so good, with a big wallop of flavor, I don't feel guilty about starting with Bush's Homestyle Baked Beans.

1 lb applewood-smoked bacon
2 (28 ounce) cans brown sugar baked beans (Bush's Homestyle)
1/3 cup ketchup
1/8-1/4 teaspoon garlic powder
1 small onions or 1 medium onion, chopped

Steps:

  • BAKED BACON:.
  • Preheat oven to 375°F.
  • Line a half sheet with aluminum foil and put a cooling rack on top. Arrange slices in rows, with fat edges slightly overlapping lean edges.
  • Bake 375 degrees without turning 20-25 minutes (depending on thickness) but remove from oven before it begins to crisp. If needed, cook more, 2 minutes at a time.
  • Remove bacon to double layer of paper towel and blot excess grease.
  • Lay bacon on cutting board and cut into bite-size pieces before completely cool. (I cut across the entire pile of bacon with one slice.).
  • BAKED BEANS:.
  • Set oven to 350°F.
  • Mix the Baked Beans ingredients in a 3-quart casserole dish or half buffet tray. Add the cut-up cooked bacon and mix a little.
  • Bake uncovered for 1 hour.
  • Allow to cool 1 hour before serving.

6 slices bacon
2 (16 ounce) cans baked beans
1 onion, diced
¼ cup yellow mustard
¾ cup ketchup
1 cup packed brown sugar
1 Granny Smith apple - peeled, cored and diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bacon in a large skillet or in the microwave until much of the grease has been released, but the bacon is still flexible. Drain on paper towels and set aside.
  • In a 9 inch square baking dish, stir together the baked beans, onion, mustard, ketchup, brown sugar and apple. Top with slices of bacon.
  • Bake uncovered for 45 minutes in the preheated oven, until the bacon is crisp and beans are bubbling hot.

Since you are cooking the beans in the oven for about 4 hours, I strongly suggest to use only dried beans for this, as the canned with get way too soft. The beans have to soak overnight in water so plan a day ahead. This can also be make successfully in a crockpot for a longer cooking time. The ingredients really do not have to be exactly measured for this. This is well worth the time to make, this bean bake is very good!

1 lb dried pinto bean (2-1/2 cups)
7 -9 cups water (or enough water to cover beans by 3-inches)
12 -14 slices bacon, cut into about 1/2-inch pieces
2 onions, chopped
1 1/4 cups ketchup
1/3 cup maple syrup
1/4 cup apple cider vinegar
1/4 cup plain prepared mustard (use only plain mustard for this not Dijon)
3 tablespoons light molasses
1 large bay leaf
2 tablespoons chopped fresh garlic
1 -2 teaspoon salt (can use seasoned salt)
black pepper (lots of black pepper!)

Steps:

  • Do this a day before: place the beans in a large bowl.
  • Add enough cold water to cover the beans by 3 inches.
  • Let stand at room temperature overnight.
  • The next day drain the beans very well in a colander; set aside.
  • Set oven to 350 degrees.
  • In a large oven-proof Dutch oven cook the bacon pieces until crisp (about 7-8 minutes).
  • Add in well-drained beans and all the remaining ingredients; mix well to combine and bring to a boil on top of the stove.
  • Transfer the pot to the oven.
  • Bake uncovered until beans are tender and the liquid thickens, stirring occasionally (about 3-1/2 - 4 hours).
  • *NOTE* this can be made a day ahead (even better as the flavors blend!) cover and refrigerate, just bring the beans to a simmer before serving.

3 ounces pancetta, diced
5 slices thick-cut bacon, diced
1 small onion, finely chopped
1 tablespoon minced peeled ginger
2 cloves garlic, minced
2 1/2 teaspoons chili powder
1 15-ounce can whole tomatoes, crushed by hand
3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon mustard powder
Kosher salt and freshly ground pepper
2 15-ounce cans pinto beans, drained and rinsed
1 15-ounce can navy beans, undrained
2 hamburger buns or 3 slices white sandwich bread, torn into pieces

Steps:

  • Preheat the oven to 375 degrees F. Cook the pancetta and about two-thirds of the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer the bacon and pancetta to a bowl using a slotted spoon. Reserve the drippings in the skillet.
  • Add the onion to the skillet and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ginger, garlic and chili powder and cook, stirring, 1 minute. Add the tomatoes and their juice, the molasses, Worcestershire sauce, vinegar, mustard powder, 1/2 teaspoon salt, and pepper to taste. Increase the heat to medium high, bring to a simmer and cook until slightly thickened, about 5 minutes. Add the pinto beans, then add the navy beans and their liquid and return to a simmer. Stir in the pancetta-bacon mixture. Transfer to a 2-quart baking dish.
  • Pulse the buns with the remaining uncooked bacon in a food processor until finely ground. Sprinkle the crumbs evenly over the bean mixture. Cover and bake 45 minutes, then uncover and bake until the crumbs are golden brown, about 20 more minutes.

1 pound bacon, diced
½ cup (1 stick) Unsalted Challenge Butter
1 ½ cups diced shallots, separated (a sweet onion can be substituted)
1 cup light brown sugar, divided
4 teaspoons smoked paprika, divided
½ cup diced green bell pepper
1 (8 ounce) can tomato sauce
1 cup ketchup
⅓ cup molasses
⅓ cup yellow prepared mustard
2 teaspoons garlic powder
2 tablespoons Worchester sauce
4 (15 ounce) cans navy beans, drained

Steps:

  • Preheat oven to 350 degrees.
  • In a large pan, add diced bacon. Cook over medium-high heat until fat renders, and bacon begins to crisp. Once cooked, remove bacon and place into a small bowl. Discard bacon drippings, leaving 2 tablespoons in the pan.
  • Add butter to the pan with bacon drippings, cooking until melted over the heat. Add 1 cup of the shallots and cook until browned, about 3-4 minutes. Remove shallots, leaving the butter mixture in the pan. Place cooked shallots in the bowl with bacon. Stir in ¼ cup of brown sugar, and 1 teaspoon of smoked paprika to create topping.
  • Add the remaining ½ cup of shallots and green pepper to the pan. Cook until vegetables have softened, about 3-4 minutes.
  • Stir in tomato sauce, ketchup, molasses, mustard, the remaining 3/4 cup of the brown sugar, garlic powder, Worchester sauce and 3 teaspoons of smoked paprika to create a sauce.
  • Stir in the beans, and then pour bean mixture into a deep sided 9 x12 baking dish.
  • Cover dish with foil, and bake in the oven for 30 minutes.
  • Remove pan from oven and raise oven temperature to 400 degrees. Remove foil, and place back into the oven, about 20-25 minutes or until sauce is thick and bubbly.
  • Sprinkle on bacon topping, continuing to cook for 10 additional minutes or until bacon is browned and caramelized.
  • Remove from oven, and let rest for about 10 minutes before serving.

4 slices thick-sliced bacon, diced
1 cup minced onion
2 (15 ounce) cans pinto beans, rinsed and drained
1 (15 ounce) can crushed tomatoes
1/2 cup ketchup
1/2 cup brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons prepared yellow mustard
2 -3 slices rye bread, buttered, pulsed in food processor

Steps:

  • Preheat oven to 400 degrees.
  • Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
  • Drain bacon on a plate covered with paper towel.
  • Pour off bacon drippings from skillet reserving 1 tablespoon.
  • Sweat onion in the tablespoon of drippings until soft.
  • Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
  • Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
  • You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.
