Easy Crock Pot Baked Beans With Bacon & Brown Sugar image

Provided by Tara Kuczykowski

Categories     Side Dishes

Time 4h10m

Number Of Ingredients 6

4 (16.5-oz.) cans pork and beans, liquid drained off top
6 slices bacon, chopped
3/4 cup dark brown sugar
1/4 cup ketchup
2 teaspoons mustard
1 large onion, roughly chopped

Steps:

  • Open the cans of pork and beans and drain the excess liquid off the top. Pour the remaining contents into your slow cooker insert.
  • Chop the bacon slices and place them on a microwave safe paper towel-lined plate. Lay another piece of paper towel on top and microwave for one minute to remove the excess bacon grease.
  • Stir the dark brown sugar, ketchup, mustard, chopped onion, and partially cooked bacon into the pork and beans.
  • Slow cooker instructions: Place the lid on the slow cooker, and cook on high for about four hours, stirring occasionally. With about 30 minutes left to cook, set the lid on slightly askew to allow some of the excess liquid to cook off. Remove the lid and allow the baked beans to cool slightly to thicken up before serving.
  • Oven baked instructions: Pour the baked beans mixture into a 2-quart casserole dish. Baked at 375 degrees, uncovered, for one hour. Allow to cool slightly before serving to thicken up.

OLD FASHIONED BAKED BEANS

Old Fashioned Baked Beans image

Deliciously thick, sweet, smoky and savory, these from-scratch Old Fashioned Baked Beans are sure to be a hit at your next BBQ, picnic, potluck or family dinner!

Provided by Kimberly Killebrew

Categories     Side Dish

Time 12h15m

Number Of Ingredients 14

1 pound dried navy beans
8 ounces thick cut bacon (, diced)
1 medium yellow onion (, finely chopped)
2 cloves garlic (, minced)
1/2 cup plain tomato sauce or ketchup
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon prepared yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
  • Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
  • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce

Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

PAN-BAKED BEANS FOR A CROWD

Pan-Baked Beans for a Crowd image

Great beans for a crowd--from scratch! (This recipe makes 12 servings. See notes to serve 25 or 50.) From Better Homes & Gardens.

Provided by BecR2400

Categories     Beans

Time 3h15m

Yield 12 serving(s)

Number Of Ingredients 9

1 lb dried navy beans
1 lb sliced bacon, cut up
2 large onions, chopped (2 cups)
1 cup catsup
1 cup molasses
3 tablespoons prepared yellow mustard
2 teaspoons dried oregano, crushed (optional)
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Rinse and drain the beans. In a 4-to-6-quart Dutch oven combine beans and 8 cups water. Bring to boiling; reduce heat. Simmer fro 2 minutes. Remove from heat. Cover and let stand for 1 hour. (Or place beans and water in Dutch oven. Cover and let soak in a cool place for 6 to 8 hours or overnight.) Drain and rinse beans.
  • In the Dutch oven cook bacon and onions until bacon is crisp. Drain off fat. Add the beans and 6 cups fresh water to Dutch oven. Bring to boiling; reduce heat. Simmer, covered for 1 1/4 to 1 1/2 hours or until beans are tender, stirring occasionally.
  • Stir in the catsup, molasses, mustard, oregano, salt, and pepper. Bring to boiling; reduce heat. Simmer, uncovered for 30 to 45 minutes more or until desired consistency, stirring occasionally. Makes 10 (2/3 cup) to 12 servings.
  • NOTE: 25 servings: Prepare as above, doubling amounts of all ingredients. Soak beans in 12 cups water in an 8-to-10-quart pot. Cook half the onions and bacon at a time. Cook the beans as above, except stir in 10 cups of water in Step 2. Cook, uncovered, in Step 3 for 1 to 1 1/4 hours, stirring frequently.
  • NOTE: 50 servings: Prepare the 25-serving recipe twice (do not double the recipe). Prepare two smaller batches, as there's less danger of burning beans at the bottom of the pot.
  • Tip: To reheat, cook over medium low heat, stirring occasionally, until bubbling, about 30 minutes.
