Steps:
- Heat oil in a sauce pan over a medium heat.
- Add the garlic and allow to sizzle but be careful not to burn.
- Reduce heat to low, add the smoked paprika and stir.
- Add the passata, puree and stock and then simmer for around 20 mins (until the sharp taste of tomato has gone and the sauce has thickened.)
- Add the beans and simmer for a further 10 mins.
- Season to taste (SEE NOTES)

- Sort beans and rinse in cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour., Drain and rinse beans, discarding liquid. Return beans to Dutch oven; add onion and enough water to cover by 2 in. Bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until beans are tender., Drain beans and place in an ungreased 2-qt. baking dish. Stir in the salsa, brown sugar and seasonings. Cover and bake at 350° for 25 minutes or until heated through.

- In a medium saute pan, heat oil, add garlic and onion and cook until softened. Place all ingredients into crock pot.
- Stir to combine.
- In crock pot, cook on high 4-5 hours until beans are soft or low 8-10 hours.
- Oven directions:
- After softening onion in saute pan, place all ingredients in an 8 by 8 baking dish.
- Stir to combine.
- Bake at 400 degrees for 1 hour until bubbling.

- Preheat the oven to 300*F. Oil a 2-1/2 or 3-quart baking dish.
- Warm the oil in a large skillet of 3-quart saucepan over medium heat. Add the onions or leeks, celery, peppers, and garlic and cook for 7 minutes, or until soft. Stir in the tomato paste; water, stock, or broth; agave nectar or sorghum; vinegar; salt; mustard; and pepper sauce or ground red pepper if using. Cover and cook for 10 to 20 minutes. Stir in the beans and bring to a boil.
- Pour into the prepared dish. Bake, uncovered, for 2-1/2 hours. After one hour, check every 30 minutes for moisture and stir in 1/2 cup water as needed.

- Press the SAUTE setting on your Instant Pot and add 1/4 cup water. When hot, add onion and saute for 4 minutes. Add the smoked paprika and garlic powder, cook for 1 minute, or until fragrant, stirring frequently.
- Next add the beans, broth, tomato paste, maple syrup, apple cider vinegar, mustard, bay leaves, ground pepper and salt, gently stir until the tomato paste is dissolved completely and everything is well combined.
- Attach the lid, and make sure the vent is in the SEALED position. Push the PRESSURE COOKER button, and manually set at HIGH for 75 minutes. When done, let the steam vent for 20 minutes. Move the vent to open, careful not to burn yourself as there may still be a little steam left. Remove lid and let cool a bit, add salt to taste. Remove bay leaves and taste for seasoning. Transfer beans to a serving dish.
- Beans will thicken once cooled. If too thick, add 2 tablespoons of water at a time, mix well, and repeat until desired consistency.
- In bottom of slow cooker, add the onion, beans, maple syrup, vinegar, 4 cups water/broth, tomato paste, smoked paprika, garlic powder, mustard, pepper, and bay leaves. Gently stir, until the tomato paste has broken up and dissolved.
- Cook on HIGH for 8 - 10 hours. Check periodically, adding up to 1/2 cup more water as needed (I've used up to 1 + 1/2 cups for 8 hours). You will also want to check for doneness towards the end so the beans don't overcook. Add salt to taste.

- 1. Saute bacon and onion in a skillet with a little olive oil until onion is tender.
- 2. Drain the liquid from one can of beans, but use the liquid in the other can. In a large bowl, mix all ingredients together including bacon and onion.
- 3. Place in square casserole dish and bake at 350 degrees or until hot and bubbly.
- 4. NOTE: Before putting in casserole dish, taste to see if any of the ingredients need to be adjusted. If you like it sweeter add more honey or sugar. If you like it spicier, add a little cayenne pepper or hot sauce. I know that bacon is not considered "clean", but it does not create inflammation & pain in my body like HFCS does.
