Our daughter Kaitlin created this moist bread. She loves to fix it for our family along with hot dogs and a salad. It's quick, simple, delicious and kid-friendly.

Number Of Ingredients 4

2 packages (8-1/2 ounces each) cornbread/muffin mix
2/3 cup milk
2 large eggs, lightly beaten
1 can (10 ounces) baked beans

Steps:

  • In a large bowl, combine the cornbread mixes, milk and eggs. Pour 1-1/2 cups batter into a greased 9-in. pie plate. Spread with baked beans. Spread with remaining batter. , Bake, uncovered, at 400° for 25-30 minutes or until a toothpick inserted into the cornbread comes out clean. Serve warm.

2 tablespoons margarine
1/2 lb smoked sausage (I use a whole lb.)
3/4 cup diced onion
3/4 cup diced green pepper
3 (16 ounce) cans baked beans
1 cup catsup
1/2 cup honey
1 tablespoon Worcestershire sauce
1 (8 1/2 ounce) box corn muffin mix
1/3 cup milk
1 tablespoon margarine, melted
1 egg
1 teaspoon chopped fresh parsley (optional)

Steps:

  • Preheat over to 400.
  • In lg. skillet over medium heat, melt 2 TB marg.
  • Brown sausage lightly and place in bottom of casserole.
  • To drippings in skillet, saute onions& peppers three minute.
  • Add beans, catsup, honey and worcest. sauce, stirring to combine.
  • Bake 10 minutes.
  • Cornbread topping: Combine ingred. and stir til moistened.
  • Spoon over casserole; return to oven and bake 20-25 minutes or until golden brown.

1 pound ground beef
1/2 medium onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and chopped
1 can pinto beans, drained and rinsed
2 cups tomato sauce, homemade or store-bought
1 medium tomato, chopped
1 cup grated Cheddar cheese
1 cup self-rising cornmeal mix
1/2 cup self-rising flour
1 large egg
1 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet or Dutch oven set over medium heat, cook the ground beef, breaking up the meat with a wooden spoon, until browned through, 3 to 5 minutes. Drain the fat from the meat. Add the onion, garlic, jalapeno, pinto beans, tomato sauce, and tomato and remove the pan from the heat. Top with the cheese.
  • In a medium bowl, combine the cornmeal, flour, egg, and buttermilk. Pour the mixture on top of the meat mixture.
  • Bake until the cornbread topping is lightly browned, 15 to 20 minutes. Serve hot.

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add the beans, ketchup, brown sugar and pepper; mix well. 4 (28 ounce) cans bushes baked beans (any flavor)
20 -25 hot dogs
2 (8 1/2 ounce) boxes Jiffy cornbread mix
3 cups shredded sharp cheddar cheese
2/3 cup milk (for cornbread mix)
2 eggs (for cornbread mix)
2 cups creamed corn (1 regular size can)

Steps:

  • Preheat oven to 350°F.
  • Put beans into large baking pan.
  • Slice hot dogs into 1/2 inch slices and add to beans.
  • Bake for 15-20 minutes.
  • While bean and hot dog mixture is in the oven,Mix cornbread mix, milk, eggs, creamed corn, and cheese in a large bowl.
  • Once bean and hot dog mixture has baked for 15-20 minutes, spread cornbread mixture gently on top to cover.
