Soon after I made these fritters for the first time, my husband began requesting them on a regular basis. I also like to serve them to overnight guests as a sweet breakfast treat.

2 eggs
1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.

It's a popular Malaysian snack that's traditionally deep-fried, but here I am pan-frying it in a smidgen of butter or cooking oil. That works too and it's way healthier. ^_^ Children love it, too, as it's mildly sweet. Great as an afternoon snack with a mug of coffee or tea.

2 big ripe bananas, mashed (about 180g)
3 -4 tablespoons flour
1 tablespoon rice flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt

1 1/2 tablespoons oil (for frying) or 1 1/2 tablespoons butter (for frying)

Steps:

  • Mix the flours, baking powder, soda, salt and sugar in a bowl.
  • Stir it into the mashed banana with a fork. (Add the fourth tbs of flour if mixture is too soft.).
  • Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried but I find it not all that necessary.).
  • Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot (a soft sizzling sound when the batter touches it). Flatten the batter slightly.
  • Fry one side till medium brown and flip over to fry the other side.
  • Place cooked fritters on a few layers of kitchen paper. Best served warm but cooled is good, too. :).

  • In a mixing bowl, mash the bananas with the sugar, salt (if using), flour and coconut cream into a sticky, slighty moist batter.
  • Heat the oil in a wok or large saucepan until very hot (365 degrees).

1 litre (4 cups) vegetable oil, for deep-frying
375g (2½ cups) self-raising flour
1/2 tsp bicarbonate of soda (baking soda)
4 firm but ripe bananas
5 scoops of vanilla ice-cream
warmed maple or golden syrup, to serve
2 tablespoons toasted pecans, roughly chopped (optional)

Steps:

  • 1. Pour the oil into a saucepan and place over medium heat. Heat the oil to 180°C, or until a cube of bread dropped into the oil turns golden in 15 seconds. 2. Set aside 75g (½ cup) of the flour in a bowl. Sift the remaining flour and the bicarbonate of soda into a large bowl, then add 435ml (1¾ cups) water and whisk to a smooth batter. 3. Peel the bananas and cut them in half widthways, then cut each piece in half lengthways. Working in batches, dust each banana piece in the flour, shaking off the excess, then dip them into the batter, draining off the excess. 4. Deep-fry the fritters in batches for 5-6 minutes each time, or until the batter is golden and crisp. 1 tablespoon grated orange rind
3 bananas
2 tablespoons dark rum

Vegetable shortening for deep frying

1 cup flat beer

2 medium egg whites, beaten until they hold stiff peaks

Steps:

  • Have fritter batter, combined with orange rind ready. Cut the bananas into 1-inch pieces. In a bowl combine rum and sugar, stir in bananas, and let macerate for 30 minutes. In the deep fryer heat enough shortening to measure 3 inches deep, at 375 degrees. In a bowl dredge the banana pieces in flour, shaking off the excess. Working in batches, dip the bananas in the batter, let the excess drip off, and fry them in the shortening, turning them, for 1 to 2 minutes or until golden. Remove fritters with a slotted spoon and drain on paper towels. Drizzle with glaze if desired.;
  • Into a bowl sift together flour and salt. Make a well in the center, pour in the beer and add the oil in a stream, stirring constantly until smooth. Strain the batter into another bowl and let it stand, covered with plastic for 3 hours or refrigerate overnight. Just before using, stir the batter and fold in the egg whites. Yield: 2 1/2 cups;
  • Combine sugar and water in a saucepan and stir over medium heat until the sugar dissolves.

4 overripe bananas
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup milk
2 eggs

  • Peel the bananas and place in a large bowl. Mash with a wooden spoon or potato masher to form a paste (it will have lumps in it and that's okay).
  • Add the rest of the ingredients into the bowl except the oil for frying. Mix until just combine to form a batter. The batter will be light and drippy.

  • Reduce the heat to medium (this is important because very hot oil will result in the fritters burning on the outside without cooking through.

Flip to the other side and let them cook until golden too. Remove and place on paper towel to absorb excess oil. Repeat process with the rest of the batter.

3/4 Cup plus 2 Tablespoons or 100g All Purpose Flour
2 teaspoons baking powder
pinch of salt
1/4 Pint or 150 ml water
1 Tablespoon vegetable oil
1 Banana
Sugar and or shredded coconut for coating

Steps:

  • In a bowl, add the flour, baking powder and salt.
  • Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
  • Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
  • Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
  • Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
  • Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

3 bananas
1 ½ cup all-purpose flour
3 ½ teaspoon baking powder

Steps:

  • Heat canola oil in a sauce pan to 375ºF. Adjust the amount of canola oil based on the size of the saucepan. You will want at least 3 inches of oil.
  • Meanwhile, peel and cut bananas. Cut each banana into 3 sections
  • In a medium bowl, add flour, baking powder, salt, and sugar and mix to combine.
  • Next, add the milk, egg, vanilla, and butter. Whisk until the batter is smooth. Pour batter into a mason jar (or tall glass).

6 saba or plantain, ripe, mashed bananas
1 cup all-purpose flour
1½ tsp vanilla extract
1 beaten egg
1 tsp baking powder
¾ cup granulated white sugar
1 cup fresh milk
¾ cup cooking oil
½ tsp salt

Steps:

  • In a large bowl, combine flour, baking powder, salt, and ½ cup of sugar. Mix well.
  • Gradually add the mashed bananas while mixing. Add the egg, vanilla extract, and milk. Mix to incorporate all the ingredients.
  • Heat ½ of the oil in a pan. When the oil becomes hot, scoop about ½ cup of the mixture and then pour into the pan. Add the remaining oil in the next batches.
  • Fry both sides until the color turns golden brown.
  • Sprinkle the remaining sugar on both sides.

100g self-raising flour
1tsp bicarbonate of soda
1/4tsp ground cinnamon
1 egg
150ml milk
Vegetable oil for frying
3 bananas
Clear honey to serve

Steps:

  • Put the flour, bicarbonate of soda, and cinnamon into a bowl. Make a well in the center and add the egg and half the milk and mix well to a smooth batter. Gradually beat in the remaining milk.
  • Heat some vegetable oil in a deep saucepan or wok.
  • Peel the bananas and cut in half lengthwise and then cut each piece into three horizontally.
  • Dip the banana pieces in the batter and then gently lower into the hot oil and fry until golden brown. Cook a few pieces at a time then remove and drain on kitchen paper. Serve with honey for dipping. Please note nutritional info is based on the use of 100ml of vegetable oil for cooking.
