BAKED APPLES WITH RICOTTA CHEESE

Baked Apples with Ricotta Cheese image

These Baked Apples with Ricotta Cheese are very easy to make, healthy and unbelievably delicious.

Provided by Maria Ushakova

Categories     Recipes

Time 1h

Number Of Ingredients 9

4 medium organic apples (I used Golden Delicious)
¼ cup + 1 Tbsp honey
juice of ½ lemon
¼ cup water
1 anise star
4 whole cloves
2 cinnamon sticks
1 cup ricotta cheese
allspice for decorating

Steps:

  • Preheat the oven to 400F.
  • Carefully, cut off the top of each apple. With a small knife or a potato peeler, cut out the core scooping out all the seeds. If needed, cut small pieces from the bottom of the apples to level them out. Pierce the apples with a fork in a few places to prevent them from bursting during baking.
  • In a mixing bowl, add ¼ cup of honey, lemon juice, and water. Mix to combine.
  • Place the apples in a square baking dish. Pour the honey mixture over the apples. Place the apple tops on the apples. Place the anise star, whole cloves and cinnamon sticks on the bottom of the dish.
  • Bake the apples until a paring knife easily slips into the centers for about 40 to 45 minutes. Baking time will depend on the apple variety so check the apples every once in a while to make sure they don't over-bake.
  • In the meantime, place the ricotta cheese and 1 tablespoon of honey into a small bowl and mix.
  • Once the apples are done, remove them from the oven and let them cool for a few minutes. When cool enough to handle, transfer the apples onto plates. Open the lids and fill the center of each apple with ricotta cheese, about ¼ cup of ricotta cheese per apple. Sprinkle the apples with allspice and drizzle with pan juices, about 1 tablespoon per apple.
  • Place the apple tops back on the apples and serve.

Baked Apples with Spiced Ricotta and Maple Syrup image

These baked apples are tender and sweet, especially on a cold night.

Provided by Martha Stewart

Categories     Dessert & Treats Recipes

Number Of Ingredients 9

4 medium Rome apples, (8 ounces each), cored to within 1/2 inch of base
3 tablespoons unsalted butter
6 tablespoons pure maple syrup
1 teaspoon freshly grated ginger
4 three-inch-long cinnamon sticks
3/4 cup ricotta cheese
2 tablespoons plus 1 teaspoon confectioners' sugar
1/8 teaspoon ground cinnamon
3 tablespoons heavy cream

Steps:

  • Heat oven to 450 degrees. Peel about 1 inch of skin from tops of apples; cut a sliver off the bottom so apples will stand. Place them in a 9-inch glass pie plate. Cut 1 tablespoon of butter into 4 pieces; fill each apple core with a piece of butter, 1 tablespoon maple syrup, 1/8 teaspoon ginger, and 1 cinnamon stick. Place remaining 2 tablespoons butter and 2 tablespoons syrup in bottom of pie plate.
  • Bake apples, basting several times with pan juices, until they are golden and tender, about 35 minutes (the skin may split). Transfer apples to a serving dish; let baking juices stand to thicken, about 15 minutes.
  • Puree ricotta, confectioners' sugar, remaining 1/2 teaspoon ginger, cinnamon, and cream in a food processor. Serve 2 heaping tablespoons of ricotta cream with each apple, and drizzle with the warm syrup.

BAKED PORK CHOPS WITH APPLES & SPICED MAPLE SAUCE

Baked Pork Chops With Apples & Spiced Maple Sauce image

When I saw the ingredients I knew right away I had to try an apple and pork combination. So I tested out my recipe and got the approval of my family and so I decided to enter. This is a very simple recipe that cooks quickly. It is great with stuffing and a green veggie of your choice.

Categories     Pork

Time 50m

Yield 4 serving(s)

Number Of Ingredients 16

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 teaspoon paprika
4 boneless pork loin chops (1-inch thick)
5 cups apples (cored and sliced, peel on if preferred)
1 cup red onion (sliced)
1/2 cup chicken broth
1/2 cup maple syrup
2 tablespoons lemon juice (fresh squeezed)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/8 teaspoon clove
1 tablespoon brown sugar

Steps:

  • Mix all ingredients in spice rub together and sprinkle over chops top and bottom.
  • Preheat oven to 350 degrees Fahrenheit.
  • Spray an oven proof, non-stick skillet with lid with cooking spray.
  • Brown chops 3 minutes per side on medium high heat, uncovered. Remove from skillet and set aside.
  • Add apples and onions to skillet and cook for 2 to 3 minutes or until they start to brown.
  • Place chops over apple/onion mixture.
  • Pour in chicken broth, cover and cook about 20 minutes. The pork chops should reach 150 degrees Fahrenheit.
  • Take the chops out of the oven and let stand for 10 minutes to completely cook the chops and not dry them out.
  • After taking chops out of oven combine spiced maple sauce ingredients in a small sauce pan.
  • Bring to a boil, stirring constantly, until mixture reduces to desired consistency. We like ours thin, so we only cooked about two minutes.
  • Pour sauce over chops and apples. Enjoy.

SPICED BAKED APPLES WITH MAPLE CARAMEL SAUCE

Spiced Baked Apples With Maple Caramel Sauce image

Provided by Melissa Clark

Categories     dessert

Time 1h10m

Yield 4 servings

Number Of Ingredients 11

4 teaspoons unsalted butter, more for pan
4 tart baking apples, like Winesap or Empire
1/3 cup plus 4 teaspoons maple syrup
4 teaspoons brown sugar
4 teaspoons chopped pecans
4 teaspoons chopped golden raisins
1/4 cup dry white wine or water
3 cardamom pods
2 whole cloves
1 1/4-inch-thick slice fresh ginger root
1 2-inch piece cinnamon stick

Steps:

  • Heat oven to 375 degrees. Butter a small cake or baking pan. Use a vegetable peeler to peel a strip of skin from around stem of each apple. Use a melon baller or grapefruit spoon to scoop out core of each apple, leaving at least 1/4 inch at base. Stand apples in pan and use a paring knife to make 6 vertical cuts surrounding cavity, being sure not to pierce through bottom of apple.
  • Place 1 teaspoon butter and 1 teaspoon maple syrup into cavity of each apple. Mix together brown sugar, pecans and raisins, and stuff 1/4 of this mixture into each apple. Pour remaining maple syrup and the wine into bottom of pan, and add cardamom, cloves, ginger and cinnamon.
  • Bake apples, basting with liquid in pan every 5 to 7 minutes, until tender yet not collapsed, 45 minutes to an hour. Serve warm or at room temperature, with custard if desired.
