BRANDY BAKED APPLES
This is a slight adaptation of a wonderful recipe from the chef Simon Rimmer. Baked apples are a lovely desert in the chilly weather, but the addition of exotic fruit and brandy lends them a bit of summer! Quantities are for 2 and prep time does not include soaking the fruit.

Steps:
- Soak the dried fruit in the brandy (or rum if you're using that) overnight.
- Preheat oven to 300°F and core the cooking apples, leaving them whole and unpeeled.
- Mix the sugar, butter and allspice in to the fruit and brandy mixture then stuff the cavity of the apples with it.
- Put the apples in a dish, cover with foil and bake for 40 minutes, then remove the foil and bake for a further 10 minutes or until apples are soft.
- Serve with heavy cream or ice cream.

BUTTER-RUM BAKED APPLES

Steps:
- Preheat oven to 450°F.
- Cut off top third of each apple and reserve. Scoop out seeds and some of flesh from apples using a melon-ball cutter or round teaspoon measure to form a cavity (do not puncture bottoms). Stand apples in a buttered baking dish just large enough to hold them.
- Heat remaining ingredients in a small saucepan over moderate heat, stirring, until sugar is dissolved. Pour some of syrup into cavity of each apple and remainder into baking dish. Return apple tops to apples and cover dish loosely with foil.
- Bake in middle of oven until apples are tender, 25 to 30 minutes.

- 1. Preheat the oven to 400 degrees F
- 2. Place apples in a shallow baking dish. Mix together all spices & brown sugar. Pack the mixture into the cores of the apples, piling left over mixture on top of apples. Place 1 Tbl. of butter on top of each apple. Pour the brandy into the dish, drizzling a little over the tops of the apples. Cover the dish with aluminum foil.
- 3. Bake for 1 hour or until apples can be sliced with a spoon. Serve in a bowl with ice cream and some of the sauce spooned over it.

Steps:
- Heat juice concentrate, wine and apples to boiling in 4-quart Dutch oven; reduce heat to low.
- Simmer uncovered about 1 hour, stirring occasionally, until apples are very soft.
- Mash with potato masher if necessary, to remove all lumps.
- Stir in remaining ingredients.
- Heat to boiling; reduce heat to low.
- Simmer uncovered about 2 hours, stirring occasionally, until no liquid separates from pulp.
- Immediately pour into hot, sterilized jars, leaving 1/4-inch headspace.
- Wipe rims of jars; seal.
- Cool on wire rack 1 hour.
- Store in refrigerator up to 2 months.

- Preheat oven to 375 degrees. In a medium bowl, toss bread with butter until coated. In a large bowl, toss together apples, brown sugar, maple syrup, nutmeg, prunes, brandy, juice, and half the bread until combined. Transfer mixture to an 8-inch square baking dish and top with remaining bread.

- Core six apples and place in oven proof glass container. Try to find one that is slightly bigger than the apples. Mix together remaining stuff then spoon it down each apple hole. Cover with foil .Put in a pre-heated 350 degree oven and bake for 45 minutes to an hour , Make sure they are done .Put in a serving dish and if there are any juices pour over the apples that have been cut open and enjoy. - Preheat oven to 330 degrees F.
- In a bowl, combine walnuts, raisins, ¼ cup melted butter and 4 tblsps sugar.
- Peel and core the apples, leaving them whole.
- Arrange them in a pie plate just large enough to hold them in one layer, and fill the cavity of each apple with ¼ of the walnut-raisin mixture.
- Sprinkle the zest over the apples with 1 tblsp melted butter and 2 tblsps of the sugar.
- Pour brandy around apples.
- Bake, basting occasionally, for 1 hour to 1 ½ hours, or until apples are tender.
- Keep warm, covered loosely.
- For sauce: In a saucepan, combine butter, sugars, salt and cream and cook over low heat, stirring, until sugar is dissolved.
- Increase heat to high, boil sauce for 2 minutes, and let cool to room temperature.
- Divide sauce among 4 dessert plates and put apple in center.
- Top with whipped cream.
