3/4 cup brown sugar
1/3 cup shortening (or coconut oil)
1/3 cup butter
2 cups flour
1 pinch salt
2 1/4 cups grated coconut
1/4 cup raisins, chopped
1/4 cup dried cherries, chopped
1 tablespoon grated nutmeg
1 tablespoon almond extract
1 1/3 cups evaporated milk
3 tablespoons water
1 tablespoon butter (for pan)
2 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 350*F and lightly grease a bread pan. The original recipe calls for 2 bread pans, but the bread doesn't rise at all so it bakes nicely in one pan.
  • In a mixer cream together the brown sugar, shortening and butter.
  • Add flour, salt, grated coconut, raisins, cherries, nutmeg and mix well.
  • Stir in almond extract, evaporated milk, and water, until a firm dough is formed. (You may need to add additional water.).
  • Split the dough evenly between the two pans, and use a knife to cut a diagonal criss-cross pattern on the top of each loaf. Sprinkle 1 tbsp turbinado sugar over the top of each loaf.
  • Bake for about 1 hour, until a skewer inserted into the center of the loaves comes out clean (Or a digital thermometer reads 190*F.) Cool completely in the pans before removing.

4 cups flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup sugar
1 cup raisins
1 egg
1 1/4 cups evaporated milk
1 teaspoon almond essence
1 tablespoon shortening

Steps:

  • Preheat oven to 350°F.
  • Grease loaf pans with shortening, shred coconut, beat egg and melt butter.
  • Mix flour, baking powder, salt, coconut, sugar and the raisins together in a bowl.
  • Add egg, evaporated milk, margarine and almond essence and mix together well until you have a firm dough.
  • Divide dough in half and fill loaf pans.
  • Mix 2 tbsp of sugar and 1 tbsp of hot water and brush mixture over the loaves.
  • Bake in center rake for about 1 hour or until skewer inserted into center comes out clean (you can use a knife or a fork if you have no skewer).
  • Let cool in the pans before removing and serving.

1 tablespoon shortening
1 tablespoon baking powder
1 teaspoon salt

Steps:

  • Grease loaf pans with shortening and pre-heat oven to 350 degrees F.
  • Mix flour, baking powder,salt, coconut, sugar and the raisins together in a bowl.
  • Add egg, evaporated milk, margarine and almond essence and mix together well until you have a firm dough.
  • Divide dough in half and fill loaf pans.
  • Mix 2 tablespoons of sugar and 1 tablespoon of hot water and brush mixture over the loaves.
  • Bake in center of oven for about 1 hour or until skewer inserted into center comes out clean.
  • Let cool in the pans.

This recipe is from week 23 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Barbados is my 23rd stop. I served this as a dessert, but Bajans usually have it as a snack with a cup of hot tea.

1 tablespoon shortening
2 1/2 cups coconut
4 cups flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup sugar
1 cup raisins
1 egg, beaten
1 1/4 cups evaporated milk
1/2 cup melted butter
1 teaspoon almond essence
2 tablespoons sugar
1 tablespoon hot water

Steps:

  • Grease two loaf pans with shortening and set your oven to 350 degrees.
  • Mix the dry ingredients with the raisins in a large bowl.
  • Add the egg, milk, butter and almond essence. Mix until you have a firm dough.
  • Divide the dough in half and press down into the loaf pans.
  • Mix the sugar and hot water and, using a pastry brush, brush the tops of each loaf.
  • Bake for one hour, or until a toothpick comes out clean. Let cool, then remove from pans.
