1/4 cup vegetable oil
6 garlic cloves, minced
3 tablespoons soy sauce
1/4 teaspoon dry mustard
3 tablespoons fresh lemon juice
1/2 teaspoon fresh ground pepper
2 lbs tuna steaks
1 lemon, cut in wedges

Steps:

  • In medium bowl, combine oil, garlic, soy sauce, mustard, lemon juice and pepper.
  • Rinse fish under cold water and pat dry.
  • Place fish in a shallow bowl and cover with marinade; refrigerate for 1 hour.
  • Place tuna on non-stick grilling rack and grill 5-7 minutes on each side or until opaque; apply marinade while cooking to keep moist.
  • Serve with lemon wedges.

4 (1-inch) tuna steaks, 6 to 8 ounces each

6 plum tomatoes, chopped
1 small red onion, chopped
A handful parsley leaves, chopped
1/2 cup torn or chopped fresh basil leaves, about 10

Steps:

  • Heat a grill pan or indoor/outdoor grill to high. Drizzle extra-virgin olive oil over the tuna steaks spread it around then season with salt and pepper.
  • Combine tomatoes, onions, parsley and basil in a bowl. Dress with extra-virgin olive oil, enough to coat the tomatoes evenly, 2 to 3 tablespoons. Season the tomatoes with salt and pepper, to taste. Let the sauce marinate at least 10 minutes.
  • When you are ready to eat, grill steaks 2 minutes on each side for rare, 3 minutes for medium and 4 for opaque, well done. Stir sauce up then serve liberal amounts of it on top of the steaks.

1 1/4 lbs tuna steaks (2 steaks)
1/4 teaspoon salt
1/4 teaspoon coriander seed, crushed
1/4 teaspoon chili powder (I used Chili Powder That's Smoky and Spicy!)
1 lime. juice
1/3 cup finely diced onion
1 -2 tablespoon olive oil
2 garlic cloves, minced
1/4 cup golden rum
tequila
1 teaspoon brown sugar

Steps:

  • Mix all marinade ingredients together.
  • Coat the steaks with marinade and cover. Let marinade 1 hour.
  • remove the tuna scraping the marinade off. Reserve marinade.
  • In a very hot lightly oiled pan sear the tuna steaks 3 minutes each side for a rare center. Do cook longer a well done center.
  • Remove, cover set aside.
  • Meanwhile in same pan lower heat and stir fry the marinade ingredients for 2 minute, add rum and brown sugar and then simmer for 5 minutes or till completely reduced.
  • Slice and serve topped with simmered marinade and guacamole.

3 cloves garlic, minced
1 red bell pepper, cut into thin strips
¾ cube fish bouillon, crushed
½ lemon, juiced

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in 1 1/2 teaspoons of whole fennel seeds, and cook until they bubble and begin to pop, about 30 seconds. Stir in the garlic and red bell pepper; cook and stir for 2 minutes. Stir in the fish bouillon until dissolved, then add the lemon juice, white wine, and bok choy. Cook and stir until the bok choy is tender, about 5 minutes.

2 steaks (8 ounces) high quality ahi tuna (sashimi grade recommended; wild caught if possible*)
1/2 tablespoon neutral oil
3/4 teaspoon kosher salt
Fresh ground black pepper
For serving: Garlic Herb Sauce (optional)

Steps:

  • Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes.
  • Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating (about 3/4 teaspoon kosher salt for 8 ounces).
  • Heat the oil in a medium skillet over medium high heat.
  • Add the tuna steak and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare on the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
  • Cool for 2 minutes. Then slice the tuna against the grain into ½-inch slices and serve immediately, with the sauce if desired.

The baba ghanoush also goes well with other robus-flavored fish such as swordfish or red mullet. The recipe is for 6, but it can easily be adapted for 2 or 4. Serve with buttered spinach and/or potatoes. (This recipe is labelled as Middle East in the Zaar World Tour because of the Baba Ghanoush).

  • Preheat the grill to high. Grill the eggplants whole, turning them now and then, for 20-25 minutes until blackened. When cool, trim off the stalks, cut the eggplants in half and scoop the flesh into a food processor. Add the garlic, tahini, lemon juice, cumin and coriander. Season and process until smooth.
  • Tuna:.
  • Mix the oil, lemon zest and coriander. Lightly brush some of the mixture over the tuna and season. Heat 1 tablespoon of the oil in a large frying pan and fry the tuna in batches for 1 minute (or less) on each side (just long enough to sear the outsides and keep the fish juicy and tender). Remove from the pan and keep warm. Add the rest of the flavored oil to the pan, then fry the tomatoes for 1 minute.

  • Divide the baba ghanoush between 6 plates. Arrange a tuna steak and the tomatoes on top. Drizzle over any pan juices and serve with buttered spinach and/or potatoes.
