BAJA GRILLED CHICKEN TACOS
I modified this taco recipe for a party of 40, and it was a huge hit. Thighs are a good substitute for chicken breasts, especially with marinating and grilling. They do not dry out as quickly and are very forgiving. Fill warm tortillas with sauteed chicken and serve with your choice of garnishes and black bean and corn salad.

Steps:
- Combine cumin, oregano, sazon, garlic powder, salt, and cayenne pepper in a large bowl. Add lime juice and olive oil and stir to make the marinade. Add chicken and refrigerate for 30 minutes to 12 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Grill marinated chicken until no longer pink at the bone and juices run clear, about 8 minutes per side. Transfer to a bowl and shred chicken with forks.
- Spray canola oil onto the tortillas and heat on the grill approximately 45 seconds per side. Transfer to a plate and cover with a paper towel to keep warm. Serve with shredded chicken.

BAJA STYLE FISH TACOS

- For the Beer Batter:
- Mix the flour, salt and pepper in a medium bowl. Gradually add in the beer while whisking. Set aside and let the batter rest for 15 minutes before using.
- For Cream Sauce:
- Add the mayonnaise and crema to a medium bowl. Whisk in the lemon zest, lemon juice and water. Season, to taste, with salt and pepper (can be made 3 days ahead, covered and refrigerated).
- For the Fish:
- In a large skillet, over medium heat, add enough oil to reach a depth of 1-inch. Heat the oil until a deep-fry thermometer registers 350 degrees F or when the end of a wooden spoon sizzles when inserted into the oil.
- On a large plate, combine the flour and salt. Season the fish pieces all over with salt and pepper and coat with the flour. Working in batches, dip the fillets in the beer batter and coat on both sides. Fry in the hot oil until golden brown and cooked through, about 5 minutes. Transfer to paper towels to drain.
- Make tacos with the tortillas and fish and top each with cream, shredded cabbage, tomatillo salsa and pickled jalapenos, if desired.
- *Cook's Note: Crack open a cold Mexican cerveza like a Negra Modelo or a 2 Equis (XX) Amber to make this tasty beer batter, which will change the way you think about fried fish! You can use it for vegetables, too.
- **Cook's Note: Mexican Crema is Mexico's version of creme fraiche and is found at many supermarkets and can easily be substituted with sour cream.

- Place chicken cubes into a bowl and squeeze the juice of 1 lime over all.
- Drizzle 1 tablespoon of oil over the chicken and mix through.
- Sprinkle chicken with taco seasoning; mix to make sure all the chicken is well coated.
- Let sit for about 30 minutes.
- If you want to marinate longer, leave in the refriderator.
- Heat the remaining tablespoon of oil in a skillet and saute the chicken for about 5 minutes or until the chicken is cooked through.
- Lightly salt & pepper chicken as it cooks.
- Lay lettuce and tomatoes on a flour tortilla. Lay cooked chicken pieces on top of the lettuce. Sprinkle with a little cheese and spoon on some tasty lime sauce.

BAJA FISH TACOS

- Heat about 3 inches vegetable oil in a medium pot over medium-low heat until a deep-fry thermometer registers 375 degrees F. Meanwhile, toss the cabbage, cilantro, lime juice, honey and mayonnaise in a bowl. Season the slaw with salt.
- Warm the tortillas in a skillet over medium-low heat or wrap in a damp cloth and microwave 25 seconds. Wrap in a towel to keep warm.
- Mix the flour, chili powder, and salt and pepper to taste in a shallow bowl. Dredge the fish in the flour mixture, then fry in batches until golden and just cooked through, 2 to 3 minutes. Transfer with a slotted spoon to a paper-towel-lined plate to drain. Season with salt.
- Halve, pit and slice the avocado. Fill the tortillas with the fish, avocado, slaw and salsa. Serve with lime wedges.

- In a blender or food processor, combine the salad dressing, salsa, lime juice and cilantro. Cover and process on high for 1-2 minutes or until smooth; set aside. - Place fish in a large baking dish or resealable plastic bag, pour 3/4 cup Lawry's Baja (r) Chipotle Marinade with Lime Juice over the fish.
- Marinate in refrigerator about 30 minutes in covered dish or sealed plastic bag.
- Remove fish from dish or bag and discard marinade.
- Grill or broil fish and baste with 1/4 cup Baja Chipotle Marinade. Turn fish once and cook until fish flakes easily with a fork.

- Combine orange juice, 2 tablespoons cilantro, lime juice, garlic, salt, pepper, cumin, and cayenne in a large freezer bag. Submerge skirt steaks in the marinade. Seal the bag, squeezing out as much air as possible. Refrigerate, 1 to 8 hours.

- In a medium bowl, combine the taco seasoning mix, light brown sugar, 1/2 cup olive oil, and cider vinegar; blend well.
- Place chicken pieces in a medium, shallow bowl.
- Pour 1/2 cup of the seasoning mixture over the chicken.
- Reserve remaining mixture for the dressing.
- In a medium skillet, heat 1 to 2 tablespoons of olive oil over medium-high heat until hot.
- With a slotted spoon, remove chicken from seasoning mixture and discard remainder of mixture.
- Add chicken to the skillet, cooking and stirring for 5-7 minutes or until no longer pink in the center.

- The chicken cooks quickly. Prepare the sauce and sides first. Add the corn to the grill first; it takes the longest, about 10 to 12 minutes. After it’s on the grill for about 4 minutes, add the chicken. In the meantime, as the corn and chicken cooks, prepare the tortillas by adding them to the grill where space is available. Heat until soft and lightly charred in areas and then remove them to a clean towel folded in multiple layers (to retain the heat and keep them soft.) As the chicken rests, cut the corn off the cob.
- If using thighs, trim. For breasts, cut in half horizontally. For both, if needed, lightly pound to an even thickness. Place in a Ziploc bag. In a small bowl, mix together the oil, vinegar, lime juice and zest, the achiote paste (or substitute) the garlic, cumin, salt, pepper, and cloves. Pour over chicken and marinate, the longer the better. A minimum of 1 hour is recommended, overnight is better and two days is optimum.
- Prepare and remove husks and silk. Brush with oil. Add to grill, and turn often, until warmed through, slightly softened and colored in areas. Remove and sprinkle with salt and pepper. If desired, sprinkle with a little cayenne.
- Add to the grill and grill, turning once, until softened and slightly charred in spots. Remove to clean towel. Depending on the size of grill, you may need to grill one or two at a time.
