This is a fabulous buttercream icing with Bailey's in it, passed on to me by one of my best friends in Texas, who got the recipe from her aunt (and kicked it up a notch with some Bailey's!!). Beware: this ain't your mama's frosting! This definetly isn't the frosting you buy at the store either! This recipe makes enough thick, yummy buttercream frosting for one cake. 1 cup real butter
3 cups powdered sugar
2 teaspoons real vanilla extract
4 tablespoons Baileys Irish Cream
milk, if needed for desirable consistency

Steps:

  • Cream together butter, powdered sugar, vanilla and Bailey's. Add milk if it is too thick.
  • Slather on a very cool cake.
  • Kick back with a little slice of heaven.

3 large eggs
4 large egg yolks
1/2 cup water
2 cups sugar
3 cups butter, at room temperature
1/2 teaspoon salt
4 tablespoons Baileys caramel irish cream

Steps:

  • Using a mixer fitted with a whisk attachment, whip the eggs and yolks in a large bowl on high speed for about 5 minutes.
  • In a medium saucepan, combine the water and sugar; simmer until it reaches the soft ball stage, registering between 234 and 240F on a candy thermometer.
  • Immediately transfer the syrup to a large heatproof liquid measuring cup. In a slow, thin stream, add the sugar mixture to the egg mixture., mixing on low speed the entire time.
  • Increase the speed to medium and beat about 7 minutes, until the syrup has cooled. Add the butter, half a stick at a time, beating on medium after each addition.
  • Once all of the butter has been added, beat on medium speed until the frosting thickens slightly, about 3 minutes. Stir in the salt and Irish Cream.

  • Create a Bain Marie (a small pot with a little water over low heat place a larger heatproof bowl on top making sure the bowl does not touch the water- the steam from the water will cook the mixture) Add the sugar and egg whites to the bowl and whisk until the mixture reaches about 150F/65C or the sugar has dissolved and the texture has slightly thickened and its foamy.   • Next, add the butter chunks one at a time, the mixture may look curdled and you’ll think you’ve ruined it, keep mixing and it will become a lush smooth texture. If the butter looks like is separating and looks greasy- it could be because its too warm so place the bowl in the fridge for 10-15 minutes then start mixing again.
