Here's what you need: yukon gold potatoes, olive oil, garlic powder, dried thyme, dried rosemary, black pepper, salt, center cut bacon, fresh thyme, grated parmesan cheese

4 yukon gold potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon black pepper
1 teaspoon salt
12 strips center cut bacon
fresh thyme, to serve
grated parmesan cheese, to serve

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Using a mandolin and a hand guard, thinly slice the potatoes into a large mixing bowl.
  • Add olive oil, garlic powder, thyme, rosemary, pepper, and salt to the sliced potatoes and toss with tongs until evenly coated.
  • On a cutting board, lay out two pieces of bacon overlapping each other vertically.
  • Line the bacon with the sliced potatoes, making sure each potato is overlapping.
  • Starting at one end, gently roll up the bacon, creating a potato rose.
  • Place the rolled potato roses in a greased muffin tin. Repeat with the remaining bacon strips and potatoes.
  • Bake for 20 minutes. Cover the roses with tin foil, and bake for an additional 30 minutes.
  • Top the roses with thyme and Parmesan. Bake for an addition 5-10 minutes uncovered.
  • Enjoy!

1 ½ pounds sweet potatoes, peeled and cut in 1/2-inch cubes
1 tablespoon olive oil
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 pinch black pepper
1 pinch Sea salt to taste
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
  • Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.
  • Combine the olive oil, melted butter, cinnamon and pepper, stirring until well mixed. Drizzle the mixture over the sweet potato bites. Sprinkle with sea salt. Loosely tent the toothpicks with damp paper towels and wrap the baking sheet with Reynolds Wrap® Aluminum Foil, being careful not to pierce the foil. Bake until the potatoes are just tender, about 20 minutes.
  • Remove the foil and paper towels and return to the oven; bake until the bacon is crispy and the fat starts to render, 15-20 more minutes. Blot the excess fat with the paper towels, then serve.

12 slices Indiana Kitchen bacon
4 yukon gold potatoes (halved)
2 tbs olive oil
1 tsp garlic powder
1 tsp dried thyme
1 tsp dried rosemary
1 tsp coarse kosher salt
1/2 tsp black pepper
fresh thyme (for garnish)
grated parmesan (for garnish)

Steps:

  • Preheat oven to 400 degrees F.
  • With knife or mandolin slicer, thinly slice the potatoes (1/8"-1/4") and add to a large mixing bowl.
  • Add olive oil and all spices/seasoning to the sliced potatoes and toss until evenly coated.
  • On a cutting board, lay out two slices of bacon that overlap vertically about 2/3rds of their length. On top of the bacon slices, add a layer of potato slices, each overlapping slightly with the last. Make sure the potato slices and bacon slices are flush on one side and hanging off on another. (Those will be the protruding "pedals.")
  • Gently roll the bacon/potato up, creating a potato rose held together by the bacon at the bottom and place in a greased muffin tin. Repeat step 4 to create the 5 remaining roses.
  • Bake for 20 minutes. Then cover the roses with tin foil and bake for another 30 minutes.
  • Sprinkle fresh thyme and grated parmesan cheese on potato roses and bake for an additional 5-10 minutes.

Steps:

  • Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
  • Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
  • Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.
  • Add the bacon wrapped potatoes back in the oven for 30 minutes. Turn them over after the first 15 minutes.
  • Mean while, in a small serving dish spoon in the sour cream, hot sauce and minced parsley. Remove the bacon wrapped potato bites and serve.
