BACON-WRAPPED CREAM CHEESE CHICKEN BREAST
This is not at all difficult to make --- although you can use uncooked bacon strips I prefer to semi-cook the bacon in the oven first just to release some fat but do not cook until crisp or wrapping it around the chicken will be impossible --- the chicken may be prepared up to one day in advance, which makes this great dinner party food, just cover refrigerate and mix up the sauce when ready to bake :)

Steps:
- Set oven to 325 degrees F.
- Butter a large baking dish.
- Pound the chicken breast until flat (pound just enough to roll up easily).
- Place 1 slice cream cheese in the middle of each breast.
- Roll up the chicken breast (it does not matter if a little of the cream cheese comes out of the sides).
- Wrap 2 slices of bacon around each breast, secure with a toothpick then place into prepared baking dish.
- In a bowl mix undiluted soup with Parmesan cheese, sour cream, mayonnaise, milk, onion, salt and black pepper; mix until well combined then pour over chicken.
- Bake for about 45 minutes or until the chicken is fully cooked.
- Remove from oven and sprinkle with cheddar cheese (if using) then return to oven for a few minutes to melt cheese.
- Delicious!

- Preheat oven to 400 degrees F (200 degrees C).
- Mix cream cheese and green onions in a bowl; season with salt and black pepper. Spread about 1/4 cup of cream cheese mixture over each chicken breast. Starting at the narrow end, roll chicken breasts over filling. Wrap each chicken breast in 4 slices of bacon. Set wrapped chicken on a rack set in a baking dish.
- Bake in the preheated oven until bacon is browned and an instant-read meat thermometer inserted into the thickest part of a breast reads 160 degrees F (70 degrees C), about 1 hour.

I got this from a friend, who won a contest with it on the site I moderate. I've adapted it slightly to match our tastes, but the basic recipe is still hers. Not something you can eat all the time or your cholesterol will go through the roof, but they're really, really tasty.

Steps:
- Preheat oven to 375 (F).
- Pound chicken to 1/2-inch thickness between two pieces of plastic wrap or wax paper
- Spread cream cheese on chicken.
- Sprinkle chives over cream cheese.
- Roll up to enclose filling.
- Sprinkle with pepper.
- Wrap with bacon (two slices on each roll).
- Place rolls seam side down in a baking dish, and bake for 35 minutes.
- Mix melted butter and breadcrumbs in a bowl.
- Preheat broiler.
- Broil rolls for 3 minutes on each side to crisp bacon.
- Sprinkle crumb mixture over rolls.
- Top with paprika (or spice of your choice).

- Preheat oven to 350°. In a large skillet, cook bacon over medium heat until cooked but not crisp. Remove to paper towels to drain., Meanwhile, flatten chicken to 1/8-in. thickness. Spread cream cheese down the center of each chicken breast; top with onion. Roll up from a long side; tuck ends in. Sprinkle with salt and pepper. - Preheat oven to 350 degrees F (175 degrees C).
- Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.

- Pound out Chicken breast so it is about 1/4" thick.
- Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.
- Roll Chicken breast up to conceal cream cheese.
- Wrap partially cooked bacon around chicken breast and secure with toothpick.
- Place on baking sheet and back for about 30 minutes at 375.
- Broil for about 5 minute to crisp bacon.
