1/4 teaspoon salt
1/8 teaspoon white pepper
1/3 cup apricot spreadable fruit
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°. Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, 30 minutes. , In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens. Bake until golden brown and juices run clear, 30-35 minutes, basting several times with remaining apricot mixture. Let stand 5 minutes before serving.

1/2 cup balsamic vinegar
16 bacon slices
4 (1 1/2- to 1 3/4-pound ea) cornish game hens

Steps:

  • Briskly simmer jam and vinegar in a small saucepan, uncovered, stirring occasionally, until glaze is reduced to about 1/2 cup, about 8 minutes. Cool to room temperature (glaze will thicken slightly as it cools). Preheat oven to 450 degrees F. Cook bacon in batches in a large heavy skillet over moderate heat, turning occasionally, until some of fat is rendered but bacon is still translucent and pliable, 5 to 7 minutes. Transfer to paper towels to drain. Cut out and discard backbone from each hen with kitchen shears, then halve each hen lengthwise. Pat hens dry and season with salt and pepper, then arrange, cut sides down, in a large roasting pan. Brush hens liberally with glaze, reserving remainder, and wrap 2 slices of bacon around each half hen, tucking ends under. Roast in middle of oven, brushing with pan juices and reserved glaze twice (every 10 minutes), until juices run clear when a thigh is pierced, 30 to 35 minutes.

1 tablespoon golden brown sugar
3 teaspoons chopped fresh thyme, divided
1 1 1/2- to 1 3/4-pound Cornish game hen, halved, backbone removed, rinsed, patted dry
1/2 tablespoon all purpose flour
3/4 cup low-salt chicken broth
1/2 cup white grape juice
1/3 cup frozen cranberry juice cocktail concentrate, thawed
1/4 cup dried sweetened cranberries

Steps:

  • Preheat oven to 450°F. Blend 2 tablespoons butter, sugar, and 2 teaspoons thyme in small bowl. Sprinkle hen halves with salt and pepper. Spread skin of each with half of butter mixture. Heat large nonstick skillet over medium-high heat. Add hen halves, skin side down. Sear until deep brown, about 4 minutes. Turn, skin side up, and sear 1 minute. Remove from heat. Transfer hen halves, skin side up, to small rimmed baking sheet. Reserve skillet (mixture will be dark). Roast hen halves until cooked through and juices run clear when pierced with fork, about 20 minutes.
  • Meanwhile, blend remaining 1 tablespoon butter and 1/2 tablespoon flour in small bowl. Add broth, grape juice, cranberry concentrate, and remaining 1 teaspoon thyme to reserved skillet. Boil until sauce is reduced to 3/4 cup, whisking often, about 7 minutes. Whisk in flour mixture and cranberries. Simmer until sauce coats spoon, stirring often, about 2 minutes. Season with salt and pepper. Transfer hen halves to plates. Spoon sauce over and serve.

1 tablespoon butter
1/2 teaspoon minced fresh gingerroot
1/2 teaspoon grated orange zest
2 tablespoons apricot preserves
1 tablespoon balsamic vinegar
1 tablespoon reduced-sodium soy sauce
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 to 1-1/2 cups chicken broth, divided

Steps:

  • Preheat oven to 450°. Place hen in a greased shallow roasting pan, skin side up. Combine butter, ginger and orange zest; rub under skin., In a small bowl, whisk preserves, vinegar, soy sauce and mustard. Reserve half of the mixture for basting. Spoon remaining mixture over hen; sprinkle with salt and pepper. Pour 1/2 cup chicken broth into pan., Roast 20-25 minutes or until a thermometer inserted in thigh reads 180°, adding broth to pan as necessary and basting with remaining glaze halfway through cooking. Also the side dishes i choose was Loaded mashed potatoes, peas and carrots for color and crescent rolls.

4 tablespoons butter (Blue Bonnet)
3 1/2 tablespoons honey
4 teaspoons chili powder
3 teaspoons seasoning salt
1 tablespoon orange juice (Simply Orange Pulp Free)
1 -2 Cornish hen
4 slices bacon (Turkey or Pork)

Steps:

  • 1 Preheat oven to 350°F.
  • 2 Melt butter and stir in honey and chili powder; mixing well in a small pot .
  • 3 Stir in orange juice, (salt and pepper optional) and put heat on low.
  • 4 Cut each hen into two halves.
  • 5 Rinse well and pat dry with paper towels.
  • 6 Place hens in in round baking dish, skin side down, and place in oven for 10 minutes.
  • 7 Turn hens over and baste generously with all of the mixture.
  • 8 Bake for approximately 45 minutes or until well browned, periodically pouring the glaze from the pan onto the hens throughout the cooking process.

2 Cornish Hens (add 10 to 15 minutes cooking time if using regular chicken depending on size).
Sea Salt
Pepper flakes or Mediterranean seasoning for spice
2 red and/or yellow peppers, chopped
1 onion sliced
2 fresh sprigs rosemary (or thyme, sage sprigs)
1 lb Brussels Sprouts (washed, dried, and halved)
1 lb small potatoes
3 tbsp olive oil
1/4 cup balsamic vinegar
3 tablespoons honey
2 tablespoons soy sauce
2 garlic cloves, minced)

Steps:

  • Preheat oven to 375 F.
  • Stuff Cornish Hens with rosemary sprigs, sliced onion and sliced pepper. Season with sea salt.
  • Bake the Cornish Hens a total for 1 hr 10 min.
  • After 35 min, add the small potatoes.
  • Shake the Brussels sprouts in olive oil, sea salt and cajun or red pepper seasoning. Place them into the oven after 45 minutes (can be added on a separate sheet). They'll need to be turned halfway through.
  • For the Glaze combine the balsamic vinegar, honey, soy sauce and garlic.
  • Brush the Balsamic sauce on top the Cornish Hens 10 minutes before the 1 hr 10 min minutes is reached.
  • Internal temperature should be at least 160 F or 71 C
