Wrapping the pork in bacon adds a smoky flavor to the pork helps to keep the pork moist while cooking. I am nuts about cinnamon anything and find the flavor goes very well with pork.

2 tablespoons peanut oil
1/2 cup pine nuts
1 tablespoon minced garlic
1/2 onion, diced
2 tablespoons chopped cilantro
2 tablespoons chopped of fresh mint
1 tablespoon sesame oil
2 teaspoons ground cinnamon
3 lbs boneless center cut pork loin, butterflied
salt
white pepper
6 slices uncooked thick slab bacon

Steps:

  • Preheat oven to 350*F Heat the peanut oil in a small skillet over medium heat.
  • When hot, add the pine nuts and garlic and cook, stirring, until lightly browned, 3 to 4 minutes.
  • Transfer to a bowl to cool.
  • Add the onion, cilantro, mint, sesame oil and cinnamon to bowl and stir to blend.
  • Rub this mixture all over the pork loin.
  • Roll the pork loin into a cylinder, tying in places to keep it closed and uniform.
  • Season with salt and white pepper; wrap the bacon slices around the meat.
  • Place the pork on a roasting rack, set in a medium roasting pan and roast for 50 minutes, or until a meat thermometer inserted in the center registers 150*F.
  • Transfer to a warm platter and let rest for 10 minutes.
  • Note that the meat will continue to cook while it rests.
  • Slice the pork into 1/4 inch slices and serve.

1 pork tenderloin, trimmed (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
1/3 cup Dijon mustard
3 tablespoons packed light brown sugar
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
  • Generously sprinkle the tenderloin with salt and black pepper.
  • In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
  • Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.
  • Place the tenderloin on the baking rack and roast until 130 degrees F at the thickest point, about 17 minutes. Let rest 5 minutes, then transfer to a cutting board using a long offset spatula and tongs. Slice into 1-inch-thick rounds and serve.

6 slices OSCAR MAYER Bacon, cut in half
1/2 pineapple, cut lengthwise in half, peeled and cored
1 can (15 oz.) diced tomatoes, drained
1/3 cup KRAFT Original Barbecue Sauce
3 ancho chiles, stemmed, seeded and hydrated
2 guajillo chiles, stemmed, seeded and hydrated
1 apple, peeled, coarsely chopped
1 oz. (1 small cone) piloncillo (Mexican brown loaf sugar), coarsely chopped

Steps:

  • Heat oven to 350ºF.
  • Cook roast in large skillet on medium-high heat 5 min. or until evenly browned on all sides, turning occasionally; transfer to roasting pan sprayed with cooking spray. Top with bacon, overlapping slices as necessary to cover top of roast. Bake 1 hour or until roast is done (145ºF).
  • Meanwhile, cut 1 pineapple wedge into 12 pieces; reserve for later use. Chop remaining pineapple; place in blender. Add remaining ingredients; blend until smooth. Pour into saucepan. Bring to boil, stirring frequently. Simmer on low heat 20 min., stirring occasionally.
  • Place roast on cutting board. Tent with foil; let stand 5 min. Meanwhile, cook pineapple wedges in skillet on medium heat 5 min. or until evenly browned, turning frequently.
  • Slice roast. Serve with the pineapple wedges and mole sauce.

1/4 cup packed light brown sugar
2 tbsp. dry sherry
1 1/2 tsp. dried minced onions
1 tsp. ground cinnamon
2 tbsp. olive oil
1 pinch garlic powder
1 1/2 lbs. boneless pork loin
8 to 10 slices hickory smoked bacon
wooden skewers or toothpicks.

Steps:

  • 1. Mix soy sauce, brown sugar,sherry, dried onions, cinnamon, olive oil and garlic powder in large resealable plastic bag. Seal and mix together. Add pork. seal and marinate in refrigerator for 6 to1 2 hours.
  • 2. Partially cook bacon, rendering some of the fat, and drain. Wrap bacon around pork and pin with water soaked skewers or toothpicks to hold bacon in place. Preheat grill to medium high to high heat.

1 (6 ounce) box Stove Top stuffing mix (prepare according to directions on box)
1/4 cup butter
1 1/2 cups water
5 -8 slices bacon
salt & pepper
1 sprig rosemary
fresh thyme

  • Preheat oven to 325°.
  • Slice pork loin lengthwise, but not all the way through, so you can still open it up.
  • Prepare stuffing and stuff into sliced pork loin.
  • Sprinkle top of pork loin with rosemary, thyme, salt & pepper.
  • Wrap pork loin with uncooked bacon slices.
  • Bake in oven until meat thermometer reaches 155F when inserted to the thickest part of the meat (where it's still attached on the side) approx one and a half hours.

8 slices smoked maple bacon
3 tablespoons apple butter
2 tablespoons honey
⅓ teaspoon ground allspice
¼ teaspoon chili powder
1 (3 pound) pork tenderloin

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray a broiler pan with cooking spray.
  • Place bacon in a large skillet and cook over medium heat, turning occasionally, until bacon begins to brown but is still flexible, about 5 minutes. Mix apple butter, honey, allspice, and chili powder in a small bowl.
  • Wrap tenderloin in 4 slices of partially-cooked bacon and secure with toothpicks. Brush half the apple butter mixture over bacon and wrap the tenderloin with remaining slices of bacon. Brush remaining apple butter mixture over the meat. Place tenderloin on prepared broiling pan.
  • Bake in the preheated oven until apple butter mixture has baked into a glaze and an instant-read meat thermometer inserted into the thickest part of the tenderloin reads at least 145 degrees F (65 degrees C), about 30 minutes.
